Engagement Brownies

This morning was filled with chocolate!

I woke up around 6:30 a.m. (What is wrong with me???) because my mind wouldn’t stop racing. I was actually craving a run and since Sadie seemed more than game to join me, the two of us hit the pavement and covered five miles together. Normally I take a rest day on Sundays, but my legs were itching to run and since I know I’ll probably be taking a good three days off from the gym this week anyway due to my friend Leah’s wedding festivities, I gave in.

We arrived home to Ryan sitting on the couch with a big ol’ grin on his face because he found a gorgeous house for rent on hotpads.com that seems to fit all of our requirements. We’re hoping to inquire about it today!

I then headed into the kitchen to get started on breakfast… and brownies!

My newly engaged friend Laurel is stopping by this morning before she leaves for Jacksonville, so I wanted to have something to give her! Since she just got engaged last night, I didn’t have a chance to run out and get her a little gift, so I figured congratulatory brownies would be a nice treat.

Halfway through making the brownies, I realized we were all out of eggs, so I used the flax egg substitute method (1 tbsp. ground flax + 1/4 cup water) in place of the eggs. Unfortunately the flax eggs made the brownie batter quite runny, so I hope they taste okay!

At  least the batter was delicious! After I poured the batter into the pan and then licked the batter bowl clean, I wanted more chocolate, so I blended up a chocolaty smoothie to enjoy for breakfast.

No, it wasn’t as good as the brownie batter, but it was 100 percent delicious in its own right.

Hoping to have a productive day! I can’t wait to see Laurel!

    Happy engagements to Laurel! Looks like you’ll be attending another wedding soon 🙂

    I love brownie batter! Especially if there’s no worry or raw eggs (not that that’s such a huge concern). I’d want batter as a gift over the real brownies!

      yes! i also use casein protein powder which makes them a bit thicker as well.

    We’re looking for a reasonably priced 2 bedroom via phone and email at this point in our new city and are finding it difficult so far. I have faith the right one out there 🙂

    So Paula and I went on a run in your neck of the woods today and totally joked that it would be funny if we ran into you. Of course, you were probably still asleep (our group met at 4:50). We did get to see the baby ducks/swans though. OMG so adorable.

    Very cute! I made brownies last night. and even though I bought eggs specifically for this purpose, I forgot to put them in. Baking FAIL.

    The batter was still tasty, so at least I had a spoon and bowl to lick!

    Also, I’m sort of a new reader, so I wanted to say how awesome it is that you have a dog who will run with you! I’m just getting into running and wish I could get my shep/husky mix to love it as much as I do, but I love her anyways 😛 Your post about running with dogs was a great read!

    The icing ring is so cute…I totally knew what it was. You’re such a thoughtful friend!!!! I totally think runny brownie or overcooked brownie…you can’t go wrong!

    I hope the apartment works out because my hubby and I just found a place that is pretty ideal for us and it’s pretty exciting when you find a match!!
