Healthy BBQ Chicken Pizza

Hold on to your hats my friends, because tonight’s dinner was fantastic!

Not only was it easy, but it required minimal ingredients and came together in less than 15 minutes!

Well, a little preparation was necessary since I placed two chicken breasts in the crock pot, covered them in one can of reduced-sodium chicken broth and let them cook on low all day (about 8 hours). But, if you’re short on time, you could easily substitute rotisserie chicken meat in place of the slow-cooked variety.

Once I pulled the chicken breasts apart using two forks, I poured enough Bone Suckin’ BBQ sauce on top of the meat to make it extra moist and flavorful. This step could easily be done ahead of time and would also make great use out of leftover chicken!

Once the meat was ready, I sprayed two cookie sheets with cooking spray and topped two Joseph’s Lavash breads (one for Ryan, one for me) with a layer of BBQ sauce, sautéed onions, fresh spinach, the pulled BBQ chicken and shredded Mexican blend cheese to make BBQ chicken pizzas!

I then put the pizzas in a 350-degree oven until the cheese melted (about 5 minutes – watch closely so the Lavash doesn’t burn!).

The pizzas were BIG and once Ryan and I saw the ooey gooey cheese, we couldn’t wait to dig in!

Yes, that’s one pizza, and we both practically licked our plates clean.

Such a good dinner!

    In fact I have a hard time going back to marinara because the sweet smokiness of BBQ sauce is just soo good! 🙂

      I was going nuts without it, too — and then I remembered a pizza my uncle came home with on Good Friday last year: Barbecue Baked Bean. It sounds so weird, but it was A-MAZ-ING. It had bbq sauce as the base, with a layer of Boston baked beans (without salt pork, aka vegetarian, or there are a million crockpot recipes for them!), thinly sliced red onion and a layer of Mexican cheese. I made it last time I was craving bbq pizza and it was FANTASTIC!

    This comment is really for the previous post about the Kitty Chow. I would love to see how you slice your nectarines. The one’s you were having on your bagelwiches were perfectly sliced. Mine always end up half mashed with juice everywhere. Please help!!!!

    Did you tried shreded chicken? It’s similar to your recipe and quite tasty.

    My mom used to make us little pizzas on slices of bread. I can wait to try it with whole wheat bread.

    RECIPE:

    You just soak gently the bread in milk, put it on a backing sheet and then put your fav veggies and cheese.

    Let it sitt in the hot oven for 10 min then add a beaten egg over the pizzas. Another 5 min in the over and you get to eat a delicious savory meal.

    Looks wonderful and I love easy!!!! So you got me hooked on overnight oats! I made my best batch this a.m.—nothing fancy basic recipe except for I used coconut milk!!!–low fat—the oats tasted like a big oatmeal cookie! You must try! Hugs and I love your blog!! We have very opposite lives-with a few exceptions!:)

    I’ve become OBSESSED with pizza in the past few years (no, seriously, I’m like a Ninja Turtle. Dibs on Donatello.), and I honestly think BBQ chicken pizza will be the FIRST thing I eat on Easter after the Lenten vegetarian pledge ends.

    I’ve made pizza on FlatOuts and pitas before, but have never tried it on lavash! Did you find it to be limp at all? I have that problem with FlatOuts and have taken to pre-baking them for 5 minutes in a high-heat oven before topping them and then baking at 350 like you did. It ends up making the crust crispier and less likely to have all my toppings slide off.. but I’d love to be able to skip a step!
