Healthy Broccoli Cheese Soup

Time to bust out your soup pots! I’ve got an amazing recipe to share with you guys today.

One of my favorite go-to recipe sites is my friend Gina’s blog. I had the pleasure of meeting Gina in California during a visit to the POM orchards in 2010 and frequently check her blog whenever I’m looking for a new, delicious recipe.

This afternoon I was craving broccoli cheese soup.

I had a feeling it was a recipe Gina likely tackled at some point since she’s always revamping classic recipes and making them healthier. After finding a recipe for broccoli cheese and potato soup on her blog, I figured I could alter it a bit and come up with a homemade broccoli cheese soup recipe to satisfy my craving.

I’m not lying when I say that this may be one of the best homemade soups I’ve ever made in my life. If you’re a serious cheese lover, you must give this a go!

Healthy Broccoli Cheese Soup

(Adapted from Skinny Taste’s Broccoli Cheese and Potato Soup)

Makes approximately 4 1/2 cups of soup

Ingredients:

  • 1/2 tablespoon olive oil
  • 1 onion, chopped
  • 1 large carrot, chopped
  • 2 celery stalks, chopped
  • 2 tablespoons chopped garlic
  • 2 tablespoons whole wheat flour
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground pepper
  • 2 1/4 cups reduced sodium chicken or vegetable broth
  • 3/4 cup 2 percent milk (skim or whole milk will also work)
  • 2 cups broccoli florets, chopped
  • 2 1/2 tablespoons grated parmesan or Romano cheese
  • 1 1/2 cups reduced fat shredded cheese (I used Mexican blend)

Directions:

  • Heat olive oil in a large pot on medium heat. Add onion, carrot, celery and garlic. Sauté until onion is translucent and slightly soft.
  • Add whole wheat flour to vegetables and stir until vegetables are coated in flour.
  • Add nutmeg, pepper, broth and milk. Stir and bring to a boil. Reduce head and allow soup to simmer for approximately 5 minutes. Add broccoli and allow to simmer for an additional 5 minutes or until broccoli is slightly soft.
  • Stir in parmesan cheese. Stir in shredded cheese. Stir cheeses into soup until melted.
  • Using an immersion blender, blend the soup until vegetables are no longer chunky and soup is smooth.

I’m meeting up with my friend Laurel for dinner tonight and can’t wait to see her. As for the Super Bowl, I’m not gonna lie to you guys. I don’t even kind of care who wins. Which team is the underdog? I’ll probably root for them. If you are really pumped for the big game, I hope your teams pulls off a victory! If not, I hope you attend a party where some quality food awaits.

    Yum! I love broccoli cheese soup, and I really love how this recipe sneaks in a little extra veg! I would say the Giants are the underdog and that’s who I am going for. Not a fan of Tom Brady, let me down with the whole ditching his pregnant girlfriend for a super model! Lol I mean who can compete with Gisele, it’s not fair!

    I’m not really a fan of football in general, but I love the super bowl because of the food and commericals. I’ll be attending a party and chatting/eating all night long with the girls while the guys watch the game. The boyfriend is pulling for the Giants, I hope they win because it’ll make him happy, other than that I don’t really care.

      Also want to add that Dianasaur Dishes posted a recipe round up of healthy super bowl dishes. Since I love to eat I try to limit it to healthy snacks, because I will literally be eating all night long.

    Oh my goodness, my husband and I JUST made broccoli cheese soup using a very similar recipe!

    The only thing I didn’t like about it was the grainy texture. I like Panera’s broccoli cheese soup, which is silky smooth. Has anyone figured how to make it nice and smooth? I wonder if xantham gum would help?

    Go Patriots! I live in a 49er fan dominated household, and everyone (except for me) was really bummed when they didn’t make it to the SuperBowl. We are having a Superbowl party and I am going to BBQ a turkey, like my mom did for Xmas. We will see how it turns out! (And to be honest, I really don’t care either, I’m a baseball fan and am waiting for that to start soon!)

    Oh man, broccoli cheese soup is like my favorite all-time soup but I never order it because I know it’s so unhealthy and full of cream and cheese. This recipe sounds absolutely awesome and totally like something I need to get in the kitchen and make right now!     Well, as for the Super Bowl..it should be the Ravens in there. It was definitely a touch down in the Patriots v. Ravens AFC championship game…left & right foot were down…but ANYWAYS…;) (Can you tell I’m a bit upset about that?! )

    I’ve been reading your blog for a long time, but never had the courage to jump in with a comment, so I am excited to finally jump in and join!

    For those who don’t LOVE the actual football game part of the superbowl, you might enjoy the superbowl party more with a few fun bets among your friends (for quarters, dollars or cocktails). A few betting ideas I heard on the radio: (1) what color gatorade will be dumped on the winning coach’s head? (2) will Madonna wear fishnet stockings for her performance? And, many more! the skies the limit – you could bet on commercials, famous people in the crowd, etc! Cheers to a great weekend! 🙂
