In the midst of my sugar binge yesterday, I had the forethought to bake a spaghetti squash for use in my lunch today. Healthy planning while eating unhealthily… gotta love it! 🙂

I usually prepare my spaghetti squash with marinara sauce… as a pasta substitute or pizza (I’ll do this soon on the blog… it’s delish!). I love spaghetti squash with marinara sauce, but I’ve never tried it any other way. Any recommendations?

Spaghetti Squash Bowl

I topped the squash with marinara sauce and a blend of three cheeses: Parmesan, Asiago and Romano.YUM.

Stirred Squash

For a little added sweetness and protein, I enjoyed a cup of Greek yogurt with Kay’s Naturals gluten free apple cinnamon cereal on the side.

I think this was a little more nutritious than yesterday’s five minute chocolate mug cake lunch, huh?

    I’ve tried the dark chocolate coconut bar and it is AMAZE. It’s tiny, but dense. A great little snack….especially to be grumbled into yogurt 😉

    I love spaghetti squash with 2 laughing cow cheeses melted and mixed in. Kind of like mac & cheese… kinda 😉

    I went with the berry cereal! Im just not a fan of coconut! I agree with homecookedem…I bet laughing cow is GREAT in sq~

    I’ve been lurking in a blog for just a couple weeks now…I can totally relate to the second sentence–healthy planning while eating unhealthily: my bf and I would eat ice cream while watching The Biggest Loser a couple seasons ago! OMG, horrible, right!

    Anyway–this blog is great, love it 😀

    Thanks for the info on the free sample. I love Kashi products and their granola bars are the best. In fact, I had a Pumpkin Pie one this morning. I think I’m going to sample the Honey Almond Flax!

    I am so picking the chocolate coconut one! And I always have spaghetti squash with marinara too. I haven’t thought about having it another way.

    Hey, love your blog. Congrats on your engagement. I too LOVE, LOVE spaghetti squah, so much so that we grew some of our own last summer. We still have quite a few to eat. Here’s a recipe my family & I love.

    Spaghetti Squash Cakes

    2 egg whites
    1/4 c whole wheat flour
    3 cloves garlic
    1.5 c cooked spaghetti squash
    1/4 c each finely diced red pepper, green pepper and onion
    Salt & Pepper

    Mix everything well. Drop by handfulls into skillet greased with cooking pray,flatten into “pancake shape”. cook on med heat till veggies are soft.

    remove onto plate (you’ll have to do it in batches). Once all are cooked, turn up heat, grease pan with Extra virgin olive oil (EVOO). and fry on high heat to crisp up outside.

    You can serve plain, (how I like them) or with sour cream (hubs like them) or with salsa.

    I like spaghetti squash topped with 1/2 cup of cottage cheese and a 3 oz salmon packet YUM!!!!

    try to sautee the spaghetti squash with fresh garlic and onions. The garlicky taste with the caramelized onions is so good.

    I’m looking for different ways to use spaghetti squash too. Ironically, I’ve never tried it with pasta sauce…no sauce left 🙁

    you have such a cute blog!! actually stumbled upon it from the o2 site..anyhoo— i like “green” spag squash….i just put in some basil pesto and whatever else, sometimes artichokes, mushrooms, ground turkey/chicken… anyway, you get the idea… green, instead of red…. ta-da… 🙂
