Kale and Cajun Sausage Bowl

What an easy dinner!

After Ryan and I took Sadie on a 30-minute walk around our neighborhood, we came home and I got started on dinner while Ryan began to work on our taxes (God bless him).

I tossed half of a pound of kale in one tablespoon of olive oil and seasoned it with garlic salt before placing it in a 375-degree oven for about 15 minutes (flipping it halfway through) to get all nice ‘n’ crispy.

While the kale roasted, I cooked up four Aidells Cajun-Style Andouille chicken sausage links in a skillet and served them on top of the crispy kale.

On the side I enjoyed a sliced apple with peanut butter.

Both Ryan and I gave this dinner two thumbs up! The Cajun sausage was flavorful without being too spicy and the crispiness of the kale added a great texture to the dish.

I’m off to relax. The Bachelor is on tonight! I’m crossing my fingers for Emily… and hoping she doesn’t get picked in the end because Brad is super boring and she’d be an adorable bachelorette!

    I looove roasted kale. It gets a bad rep because it’s so dark and leafy, but I think it’s really delicious!

    Err wait…so does the girl who loses in the Bachelor become the Bachelorette? I’ve never watched the show!

    I’m loving kale right now, this looks like a winner dinner for sure! 🙂
    Love love the bachelor this season.. brad is kindo boring but I think he’s gonna pick Michelle (even though she’s crazy haha) and I think Emily might leave soon cause she can’t get over her drama…

    I’m rooting for Emily too!! She won’t end up with him–I dont think they’re a perfect fit, but I think the show/he will help her on her way to dating and love again!!!

    Sooooo excited for the bachelor!! It’s my head to the gym early so I can put on comfy clothes, pop some popcorn and settle in for the bachelor night. I LOVE Emily!! 😀

    I happened to run by your comment today on Tina’s Weighty Issue post, and really related to you! I’ve gained a wee bit of weight since getting married in March of 2010. And even though it’s no great amount, it still kinda bugs me! Maybe I have standards that are too high for myself, or maybe I just need to kick my butt into gear and shed those few pounds….

    Just thought I’d share that I totally related to what you wrote. Thanks for being so honest! It’s inspiring.

    Kale is one of my new favorites! I had never eaten it until I made kale chips a couple weeks ago.
    I am watching the Bachelor too. Great idea about Emily being the next Bachelorette, that would be awesome. But it would be so heartbreaking to see Brad break her heart. Not that he is da’bomb or anything, but because she seems really fragile and doesn’t need another huge heartache.

    I feel 100% the exact same way about Emily! I just feel like Brad is a little bit…off? He’s just weird. I don’t love him.

    And that dinner looks great & simple. My husband’s name is Cale…and we’ve still yet to try his namesake food! It needs to be done.

    I am watching The Bachelor right now! I am not so sure about Emily’s chances now that she’s a self-admitted relationship saboteur! As long as Michele is sent home, I’ll be content!

    I think chicken sausage is the only thing standing in the way for me to become a vegetarian! I don’t have it often, but when I do – oh, I just love it! I’ll have to try that cajun kind next time.

    I love Emily! I think she’d make a perfect bachelorette too – I was just telling my hubby that last week. It would be best if all the guys going into her season knew her “history” before signing on though. That way she can relax and not have to worry about them being weirded out.
    I live in the suburbs of Seattle and guess who I ran into at the mall the other week? Jason and Molly! Did you watch their season too? My hubby and I were on a date night and we were walking out of Macy’s just as they were walking in. I’ve never ran into anyone famous before and my brain took a good 5 seconds to realize why I recognized these people! Molly was walking while eating some ice cream and I think Jason caught me staring at them. Opps!

    That looks delicious!!! Since I’m only 20 and go home over winter & summer break, my parents do most of the cooking (More than half the time I’m not home but that’s a different story) And my dad will cook up regular pork sauage with kale drenched in oil- this dish looks 100x better to me!!

    I am not gonna lie. I love Emily, but I literally cringe every time Michelle comes on screen. What is her issue?!? I didn’t want last night. I am about to watch it online, but I hope with everything in me that Emily doesn’t get kicked off 🙂

    I completely agree. Emily is too sweet for Brad. I feel like he and the other “meh” girls are great for each other.

    however, I’d rather see Michelle’s zipline cable have a small mishap in the Costa Rican jungle.

    Brad is painfully lame–he even give Jake’s lameness a run for its money! Emily is so adorable and deserves someone so much better!

    Michelle, on the other hand, I think needs to snag Brad’s therapist next time he makes a cameo (which I’m pretty sure he’s due for one any moment now…).
