Mac Attack

This afternoon was spent in the kitchen!

I had a great time chopping, tasting and experimenting as I put together a recipe for Wisconsin Cheese Council’s 30 Days 30 Ways blog, which showcases 30 different ways to make macaroni and cheese over the course of 30 days. I’m not sure when exactly my recipe will be up, but I’ll be sure to let you know. mac and cheese 007As I got to work in the kitchen, I made sure to stay true to my blog and kept my recipe healthy and veggie-packed. mac and cheese 005 mac and cheese 017When I started brainstorming ideas for this recipe, I knew I wanted to include veggies and keep it relatively light, but I also wanted to have breadcrumbs on the top, because casserole-style mac and cheese is the ultimate comfort food.

I know many of you share my love for cheese and I have a feeling this will be right up your alley. 😀 The 30 Days 30 Ways blog kicks off on January 20, so hopefully my recipe will be up soon.

    That looks so good! Giada had a recipe similar with spinach, tomatoes and mushrooms baked and topped with breadcrumbs! Delish!

    That’s so cool that your recipe will be included in their round-up. Although I can’t stand gritty mac & cheese. No breadcrumbs for me! Mac & cheese is definitely one of those meals where everyone has their favorite.
