Pumpkin Oatmeal Muffins

Yesterday, after my mini food tour of Ocala, I must have been inspired by all of the grub because I was hit with the urge to bake.

With fall only 11 days away, I figured I’d get a jumpstart on seasonal baking and turned to pumpkin to make some delicious oatmeal pumpkin muffins.

I used whole wheat flour, oats and pumpkin to increase the nutritional value of the muffins a little bit.

Pumpkin naturally yields super-moist baked goods, and these muffins were no exception. So dense and delicious!

Pumpkin Oatmeal Muffins

Makes 12 muffins

  • Prep time: 15 minutes
  • Bake Time: 18 minutes

Ingredients:

  • 3/4 cup whole wheat flour
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1 cup old fashioned oats
  • 1/3 cup brown sugar
  • 1/2 cup sugar
  • 1 egg
  • 1 cup canned pumpkin
  • 3/4 cup milk
  • 1/3 cup canola oil
  • Optional mix-ins: nuts, chocolate chips, butterscotch chips, raisins

Directions:

  1. Preheat oven to 400 degrees and line muffin tin with muffin cups
  2. Combine whole wheat flour through sugar in a large bowl and mix to evenly distribute ingredients
  3. In a separate bowl, mix egg, pumpkin, milk and canola oil
  4. Pour pumpkin mixture into flour mixture and stir until batter is thick and fully mixed
  5. Fold in optional mix-ins
  6. Pour batter into muffin cups and bake for 18 minutes or until tops of the muffins bounce back when lightly touched
  7. Cool, top with cinnamon or honey butter and enjoy

I bet you can guess what my snack (x2) was this morning. Smile

I should also note that those muffins are fantastic topped with peanut butter. I microwaved one to warm it up for 15 seconds and then spread creamy peanut butter on top late this morning and it was incredible.

Lunch

Lunch today featured some healthy food! I think my body missed food that was naturally colorful this weekend.

I made myself a hummus and Swiss cheese sandwich on a whole wheat hamburger bun, topped with tomato and alfalfa sprouts.

Sprouts are just so fun! I love it when my sandwiches at delis are made with sprouts and finally figured I should just buy them to put on my homemade sandwiches.

I feel like I almost always melt my cheese when I have the chance, but today I wanted cold cheese. I actually enjoyed it quite a bit! Maybe cold cheese will make a comeback on my lunchtime sandwiches? I like it ooey and gooey on my breakfast bagelwiches, but at lunchtime, cold cheese is much more appealing.

    It’s time for me to jump on the pumpkin bandwagon. I was trying to hold out for some cooler weather (because nothings better than a Pumpkin Spiced Latte and a cool fall day 🙂 ) but I’ve seen too many recipes that I’m dying to try! I’m moving to Rhode Island in 6 days for my job (AH!) so I’ll be able to experience some cooler weather up there!!

    I like cold cheese on lunchtime sandwiches too. 🙂 Especially with turkey.

    Can’t wait to try making those muffins. Anything pumpkin makes me happy—I think the rest of the blog world agrees with me, haha!

    I made similar muffins last weekend but added some plain old protein powder and made a last minute change to use all purpose baking mix instead because I ran out of flour 🙁 They are the best post-gym workout snack before I want to eat my full breakfast!

    This recipe couldn’t have come at a better time! We’re leaving for a mini-vacay on Wednesday and I have a bunch of pumpkin to use up. I’m totally making these tonight and plan on mixing up the mix-ins (thinking of a few with white chocolate chips, chocolate chips and plain – for the husband).

        I just made these muffins. The only tweaks I made was adding 2 tsp of vanilla and a dash of kosher salt. OMG, they are soooo good! The batter was crazy yummy too.

        I added white and milk chocolate chips to about 4 of them and will definitely be having them tomorrow.

    I love pumpkin anything! I made a pumpkin loaf last night , but reduced the sugar maybe a tad too much! But I think I will try ti with PB – after all doesn’t it make everything better?!
    Mu husband also made me quinoa pumpkin pancakes this morning for my birthday!

    The muffins look so good Julie! I have also purchased a few cans of pureed pumpkin and have been doing all sorts with them in the kitchen – recipes are coming soon! Also, I’m with you on the craving healthy foods thing. After indulgent days or weekends, my body screams for it!

    Hey Julie!

    I was reading through some of your treadmill interval workouts (in the “Work it out” section) to find some inspiration for my next trip to the gym, and I was just wondering, when you write “pace”, is it then miles per hour or km per hour?

    I’m from Denmark (Europe), so our treadmills all go by km per hour, where I think yours go by mph in the states?

    Btw, I adore your blog, you have the best writing skills that always keep me interested!

    Ooooh, I might have to try these out tonight!! You made me laugh with the sprouts–I love them on sandwiches too, but I’ve never been able to figure out why…..I mean, do they really even have a taste? Maybe an earthy taste? I’m not sure, but I like the crunch 🙂

    And I’m way jealous of your pumpkin muffins..can’t seem to find canned pumpkin anywhere since I moved to England!

      I had that same problem when I was living in London and wanted to make a pumpkin pie for Thanksgiving! After much searching I finally found it at the Whole Foods in Kensington!

    Mmmmm, these look delish! I am trying to resist busting out the pumpkin til it is officially fall though, because I become obsessed for pretty much all of fall+winter. I’m actually surprised I’ve never turned orange, between that and my sweet potato love.
