Reheat and Eat

It seems like this summer has been unusually wet and rainy but the rain usually holds off until the mid-afternoon. That was not the case today and the thunderstorms rolled in at 8 a.m., completely scrapping our running club meeting this morning. I was a little bummed that our first run was canceled, but hopefully we’ll have better luck next week.

I spent the rest of my work day personal training and conducting fitness assessments. I also taught a water fitness class and inhaled lunch in the break room in between appointments. It was a busy day!

Lunch

Lunch today was simply reheated leftovers from last night’s dinner.

I prepared a big batch of brown rice and tossed it with sautéed onion, spinach and pork before adding a few splashes of soy sauce for a little salty flavor.

Just reheat and eat! Luckily the leftovers tasted just as good as last night’s dinner.

Now I’m off to type up some emails to follow up with the fitness assessments I conducted today. I am hoping to crawl into bed early tonight and have more time to chat with you guys tomorrow!

    I’m a huge fan of leftovers. Most every meal I made has at least one leftover serving. I’m lazy like that. ha

    I love to reheat things! I always make more than i need just so I have an easy go-to meal for later on in the week when I am bored and don’t want to cook haha

    I used to make rice bowls like that all of the time but somehow forgot about them! I like to add in a scoop of hummus for a little bit of creaminess. Mmm

    Was looking forward to hearing how the running club went! Fingers crossed for next week! I’m a big cold leftovers for lunch and even dinner fan…especially when it’s so warm out!

    My lunch at work every day almost always consists of leftovers. They are the best! It is a good thing that I do not get bored with my food choices too easily.

    Most of my Lunches tend to be meals for the previous day. It just makes things much more simpler, and easy for prepping for those busy days.
    Sometimes, it’s nice to just make small Dinner meals, but usually I end up making big batches to just freeze in a pinch.

    I am the queen of leftovers. People at my work tease me about it, but I’d hate to spend extra time putting together a lunch for the day and I am too cheap to eat out more than once a month!

    I’m a huge fan of running clubs! I just starting going to one a few weeks ago and have already learned so much from the other runners. One runner told me he uses a trigger word to remember to relax his hands and shoulders. My new trigger word is silk. Works every time!

    I am a HUGE LEFTOVERS person, I always take last nights dinner and throw it over a bed of leaves at lunch the next day, easy and tasty 🙂 Thanks for sharing LOVE + S H I N E CourtStar

    I eat leftovers for lunch almost every work day. I made a restaurant order of eggplant parmesan last 3 meals!

    I went to school in Florida before moving to Chicago, so much sympathy with the rain ruining a run. Sometimes I feel like I could tell the time by Florida storms.. they came like clockwork!

    I love simple and easy to make meals that incorporate brown rice. I usually make a batch of brown rice and then use it in various meals, sweet OR savory. Sometimes for breakfast I’ll warm up in a small pot 1/2C brown rice with a drizzle of maple syrup, splash of almond milk, splash of vanilla extract and add in blueberries&slivered almonds–it’s SO good!

    My day yesterday was nuts too! I started at 6:45AM and didn’t hang the towel until 4:45PM. TOOOOO long!!

    You seem to do what they always say/do in magazine meal-plan sections (save leftovers for next day lunch). It’s a good idea I guess!
    I really long for pork, lamb, beef, bacon but not able to get hormone-free stuff. This is such a bother to me because I really prefer to have chicken only a couple of times per week, and otherwise I’m eating fish every day (not sure if I want to eat it everyday, let alone twice a day). so I never know what to eat in one other meal for the protein source (since I’m attempting dairy and egg free and not a fan of beans). I already use some protein powders at breakfast, so…ugh…food is too complicated for me 🙂

    On that note, how do you re-heat? I never know how to safely (length of time, covered, plastic or glass dish, etc) is safe in microwave.

    I LOVE mixing protein and rice. That looks so good! I know what you mean about the rain, it’s been ridiculous this year! I guess we won’t hear any talks of ruined crops due to drought conditions. 🙂
