Salmon Burger Bonanza

My lunch today was quite fishy… Fishy Friday! 😀

I had a SeaPak salmon burger on a whole wheat sandwich thin with dill dijonaise and portobello mushrooms.

Fishy Lunch

I made the dijonaise with light Miracle Whip, dijon mustard and dill. It added a nice touch of creaminess to my  sandwich.

I also enjoyed carrot sticks and pickles on the side.

Because my sweet tooth just wouldn’t be satisfied after a savory lunch, I also packed a cup of Chobani Greek yogurt that I topped with thawed frozen raspberries to have for dessert.

I love the vibrant color the raspberries add to a simple yogurt cup. Tasty, tasty.

Weekend Plans

This weekend is going to be full o’ fun!

Friday:

  • Going to see Valentine’s Day (movie) with girls from work
  • Dinner (pizza!) with Ryan
  • Sort through clothes to give to Goodwill

Saturday:

  • 10k Race
  • Bowl-a-Thon for Junior Achievement with Ryan’s work
  • Date night

Sunday:

  • Church
  • Ryan’s soccer game
  • Mall
  • Drive to Winter Haven to look at scuba gear

Should be a fun and busy weekend!

    Fun and busy weekend. I have no real plan, my bf might be coming to visit on Saturday, but we’ll see. Your chobani looks so yummy.

    V-Day movie is really cute…I also went to it with some girlfriends:)

    We aren’t doing much…my husband said last night, when I get home from work tomorrow why don’t you just get out of the house and take some time for yourself….love it! I’m a stay at home mom, so any chance I can get I’ll take it! I think I’m going to stroll through the mall and swing by the grocery store, then pick up some pizza for dinner.

    That is a busy weekend! And I am so happy to see church on the activity list. Have you guys always gone regularly and I just missed it? Or is this something you have been doing more of? I noticed you went last weekend too. 🙂

    And no big plans this weekend. I really want to go see a movie though. All this rain has me just wanting to read or watch a movie.

    I can’t wait to hear what you think about the movie V-Day I want to see it but I’m scared its not going to be as good as I thought.

    v day is cute! i saw it with a girlfriend and we both thought it was heart warming 🙂 oh and ashton is very easy on the eyes 😉 as well as bradley cooper!!

    have you tried the rasberry chobani?! I havent but it looks great!

    It’s the BIG St. Patty’s day parade on Greenville ave here in the Dallas area. I ran the 5k last year they have before the parade, but not this year, my running days are, well, for a lack of better words, over. lol. Not completely, but almost. Just not for me. I do enjoy the parade and , cough*cough*, St. Patty’s festivities afterwards though. I LOVE salmon burgers! So good! And pickles are a major weakness too!

    That dill sauce/spread looks SO. GOOD. I love dill…especially with salmon (or any fish, for that matter). Yum!

    My plans for the weekend are just laying low at home. I got back from Mexico less than a week ago and I’m leaving for Baltimore (followed by in instant road trip to Florida, ah!) on Friday. So clearly I need a weekend to just veg 🙂
