Lunch today snuck up on me!
Before I knew it, my stomach was grumbling and I needed food!
Fact: This meal looks horrendous.
But lots of shredded cheese has a way of making me overlook an unattractive dish!
I began by sautéing a chopped chicken sausage in a skillet while I steamed some cauliflower in the microwave. I then added leftover roasted Brussels sprouts to the skillet, followed by the mashed steamed cauliflower and a boatload of shredded cheese.
Easy, satisfying, ugly and delicious!

More St. Patrick’s Day gear that caught my eye…
I saw a bunch of women wearing fun sparkly skirts over their leggings or compression shorts at the Women’s Half Marathon a few years ago and thought they looked awesome! (Bachelor fans, I think we know Tierra would be all about this one. Sparkle.)

My family’s not Irish, but we always buy Irish Soda Bread when St.Patrick’s Day Rolls around. It’s so good, and unique (to me), and a nice once a year treat! I always look forward to St. Patrick’s Day simply for the soda bread, seeing as I don’t drink!
I love irish soda bread too! I wish I could buy it all year-round, but only see it during this brief period of time – like you said.
My family always has corned beef, cabbage, carrots and potatoes. Delish!
I live in Boston and will be attending the south Boston parade on St Patricks day. There is also a 5k in the morning before the parade and that has become my yearly tradition!
Green drinks are the best!
I ran my first full marathon last November and could’ve really used one of these! Even though I swore I would never run one again when I finished, I somehow have signed up for next year’s training team. Hmmm 😉
I have a thing for the shamrock shakes @ McDonalds…can’t get enough! yummy 🙂 I guess I should be running a 5k after a few shakes!

Last year a friend and I ran the Get Lucky Half Marathon in Minneapolis. Pre-race we were super excited about dressing up in green and seeing all the costumes while we ran- by the end of the 13.1 miles I was definitely ready for a green-break! I’ve never seen so much green in one place in my life, ha! It was pretty neat to see the creative costumes that some runners came up with though!
Going out for a drink with all my college roommates last yr – we hadn’t seen eachother in a long time!
Sauerkraut and corned beef! I’ll probably make (ok, probably eat, not make) corned beef hash for breakfast with eggs. Yum 🙂
Being in Phoenix last year for baseball spring training St. Patrick’s Day weekend with my dad and brother was amazing. We get all our “irishness” from our dad so it was fun celebrating with him. Of course late morning began at a Tilted Kilt pub then ended with a Flogging Molly concert! Irish day all around:)
Definitely must eat an Irish dinner, complete with boiled cabbage, corned beef, potatoes and carrots 🙂

When I was in elementary school, my class was on the news on St. Patrick’s Day holding up shamrocks that spelled out Happy St. Patrick’s Day. I thought it was the coolest thing in the world to see myself on tv!
There is a little city my dad grew up in that is full of our relatives that are Irish. My grandma grew up there and her parents came from Ireland. All of my dad’s side and their friends have a HUGE St. Patrick weekend get together. It’s always so much fun with potato bobbing, an Irish jig contest, a parade and lots more. Moving to Chicago this will be my second year not being able to travel back for the festivities. So this year my fiance and I have decided to run in a race. The Lucky Run. One of the fun St. Patrick’s BICbands would be perfect to add to my wonderful accessories!

I have two favorite St. Patrick’s Day memories… the first is my kindergartners using their adorable “Leprechaun Finders” to search for leprechauns outside and around our school. It is so precious to watch! My other favorite memory is last year when I got certified as a yoga instructor on St. Patty’s Day… for my final assessment, I had to teach my first class that was open to the public and I also had a bunch of family and friends there. It was such a blast and felt like such an accomplishment! Love that it happened on St. Patrick’s Day.

When I was a kid the “leprechauns” would sneak into our house and dye the milk green for our morning cereal. My brothers and I thought this was awesome!
Hands down corned beef and cabbage
I am running a 10k Shamrock and Roll sponsored by the Junior League of Atlanta. The best part about this race is dogs are welcome to run also so my dog, Bailey (a Weimaraner) is running it with me. She already has a shamrock collar and I am making a green tutu to wear and wrapping our leash in green tulle also. Sooo fun!

My favorite memory is looking for four leaf clovers when I was little and one year, I actually found one! It may be silly but I remember feeling so special 🙂
When each child in my family is born, we get a leprechaun! If you keep a shoe under your bed with 17 pennies in it, the leprechaun may visit you on St. Patricks Day with fun treats, as well as turning your milk green.

Usually St. Patrick’s day is an overlooked holiday because my university plans spring break over it so students celebrate an “unofficial” day earlier in March. But this year I’m looking forward to St. Patrick’s day because I’ll be visiting my boyfriend in Austin, Texas during my spring break and celebrating with him!! This is such a coincidence giveaway because I’d been looking into the bic bands and noticed that they are sold at a store in Austin so I was planning to snag one while I was there!
I think my favorite memory would be any St. Patty’s Day in college that I spent with my sorority sisters, dressing up in horrendous green outfits, drinking WAY too much green beer, and dancing away to Irish songs we didn’t know the lyrics to at a fraternity party. Oh how I miss those days!

My favorite St. Patricks day memory is decorating the classroom for my first graders. I zig zagged green yarn all through the room so it was almost impossible for any sole to get it. I also left small little rollos (since they are wrapped in gold foil) on their desks. They loved that the leprechan had come to visit their classroom over night!

My sister and I ran a shamrock shuffle 10k one year with shamrock bobble headbands, green shirts and shorts. We also sported green tights with shamrock socks. It rained the entire race and was SO much fun. Running with my sister is always the greatest time!

Favorite memory was watching my older daughter teach her younger sister how to hunt for leprechauns in the backyard using a tea towl after her kindergarten teacher taught her how to do it. She was sooo serious and they both really believed 🙂
