Lunch today snuck up on me!
Before I knew it, my stomach was grumbling and I needed food!
Fact: This meal looks horrendous.
But lots of shredded cheese has a way of making me overlook an unattractive dish!
I began by sautéing a chopped chicken sausage in a skillet while I steamed some cauliflower in the microwave. I then added leftover roasted Brussels sprouts to the skillet, followed by the mashed steamed cauliflower and a boatload of shredded cheese.
Easy, satisfying, ugly and delicious!

More St. Patrick’s Day gear that caught my eye…
I saw a bunch of women wearing fun sparkly skirts over their leggings or compression shorts at the Women’s Half Marathon a few years ago and thought they looked awesome! (Bachelor fans, I think we know Tierra would be all about this one. Sparkle.)

I’m running the Lucky Leprechaun 7k in WI and can’t wait to dress up. I bought my ProCompression Shamrock socks and a Luck Be A Lady performance tee. Then I bought headbands with mini green tophats on them. Can’t wait to have fun at this run!

My uncles are in an Irish Celtic band called New Element and they always perform at local Irish pubs on St. Patrick’s Day so it’s fun to be their “groupie” and enjoy the great music and pretend like I’m a serious Irish step dancer when I really have no clue how to do it 🙂
During St. Patrick’s Day last year, I lived in Savannah, GA, which is essentially “St. Patrick’s Day Central” of the south. There is a massive parade around the squares (little parks), and I was lucky enough to live on one. My best memory of Savannah was waking up to the sound of drums and trumpets, walking outside of my front door across the street to the square, and having mimosas with my friends while watching the parade!
Uhm…well, St Patty’s is only slightly less a holiday than Christmas when your last name is Murphy! Being married to an Irishman with a large family, I learned very quickly what a treasured holiday it is! It’s a little (lot) tamer since our girls entered the pic, but it still usually involves the KC parade, a green beer or two and lots of people watching!
I think one of my favorite things about St. Patrick’s Day is seeing how different people celebrate it!
I’m *hoping* to do a Sharin O The Green 5k, if my work schedule lets me! As a college student in the middle of her last semester (and a potential breakdown lol), it’ll be a fun break!
I have a St Patricks Day race that I’m looking forward too! Except its the week after. I’m hoping to score some items to wear on sale. 🙂

My mom’s birthday is St. Patty’s day! My family always has the most DELICIOUS triple chocolate cake to celebrate the double-holiday! 🙂
My favorite St. Patrick’s Day memory would have to be from three years ago: I was studying abroad in Spain in Spring 2010, so a few of my friends and I decided to hop on over to tourist-filled Dublin, Ireland for St. Patrick’s Day. It was such a fun experience to visit the historical bars on that day–not to mention that they put on quite an impressive parade!

My favorite St. Patty’s Day was in 2011 when my now husband, Adam, asked me to be his wife! He planned everything perfectly, and I was completely surprised. After I said yes, he took me to a surprise party where our families and closest friends were waiting to celebrate with us. I couldn’t ask for a more memorable day. Now we say St. Patrick’s Day is our “engage-iverisery” so it makes the holiday extra special 🙂
St. Patrick’s day was my favorite holiday when I was a very young kid! We would leave pennies out for the leprechauns and when we woke up in the morning, the leprechauns had left a trail of gold chocolate coins. We would follow the trail to figure out how they were getting into the house and to see if they were still there!
I loved when I was a little girl and my mom made green pancakes with green milk! I thought it was the coolest things ever!
Several years ago, while studying abroad in Spain, a group of us travelled to Dublin for St. Patrick’s Day. It was one of my favorite memories from my time abroad!

Dallas has a big St. Patty’s Day run, parade, and block party. Every year we get together with our neighbors and watch all of the people go by. I can’t wait!
One of my favorite St Patrick’s Day memories is from elementary school. We built leprechaun traps and baited them with coins.
I like to make a traditional meal with corned beef and cabbage and potatos. And I will definately be wearing green!

Corned beef in the form of a Rueben!
My very favorite St. Patrick day memory was having my precious Emma Mae in 2006; it was a blizzard in March, my husband’s truck was stuck half wheel down in the mud and my parents came through said blizzard to make sure we were ok. I was in ICU overnight for observation but early (8 weeks) little Emma was doing GREAT at 3 pounds, 12 ounces. Now we celebrate SPD with chocolate pancakes in honor of her birthday for breakfast and corned beef and cabbage, with red potatoes every year in honor of our favorite reason for celebrating!

I LOVE eating the gold chocolate coins on St. Patrick’s Day! It’s also a tradition at my house to always turn the toilet bowl water green with food coloring the morning of the Holiday! 🙂
My Favorite memory has got to be last year when my 4 year old daughter FINALLY fit into the same St. Patricks day shirt I wore as a kid. Its totally 80’s looking which makes it even better! AND she fits into it this year too! WOOHOO!!

My favorite St. Patty’s Day food is Irish Soda Bread. Over the years, I’ve tried my hand at making it a few times, but have never been able to replicate the taste of the delicious bread that my husband and I shared on our first year anniversary trip to Dublin. Perhaps this year will be the year! In the meantime, I’m happy rolling, cutting and baking green shamrock sugar cookies with my two strawberry-blonde daughters. My favorite memory is that my brother and I would try to wake up really early on St. Patricks day. The first one up would always put on something green and run in and start pinching the other. I started sleeping in green though but he still didn’t seem to care. Haha!
My all-time favorite St. Pats was a couple of years ago when I was studying abroad in Spain. Some of my study abroad friends and I flew to Dublin and met up with my friend from high school. We ended up with a huge group of new and old friends and spent the day decked out in cheesy St. Pat’s gear (from the euro store, the european version of a dollar store haha), drinking green beer and just soaking up all of the festivities!

I come from an Irish American family, so we take St. Patricks day pretty seriously. Growing up we always invited friends over for traditional irish food and drinks, and it was always the event of the year. It’s been fun to see how the party has progressed as my sister and I have gotten older.

I’m a teacher for 3 and 4-year olds with disabilities and I LOVE it when the “leprechaun” trashes the classroom. The look on their faces is priceless! 🙂
I come from a very Irish family and my sister and I were a part of an Irish dance troupe in Philadelphia. Every year we would dance our jig through the streets for the annual St. Patrick’s day parade. This year we are swapping out dancing shoes for running shoes and running our first 1/2 together!
I never remember any of my St. Pat’s day memories………..ha!
