St. Patrick’s Day Running Gear

March 7, 2013 by Julie 1,283 Comments

Lunch today snuck up on me!

Before I knew it, my stomach was grumbling and I needed food!

Fact: This meal looks horrendous.

cauliflower sausage scramble

But lots of shredded cheese has a way of making me overlook an unattractive dish!

I began by sautéing a chopped chicken sausage in a skillet while I steamed some cauliflower in the microwave. I then added leftover roasted Brussels sprouts to the skillet, followed by the mashed steamed cauliflower and a boatload of shredded cheese.

Easy, satisfying, ugly and delicious!

March Book Club

With the majority of the votes, the winning book for the PBF March Book Club  is…

the fault in our stars john green

The Fault In Our Stars by John Green. We’ll be discussing this book on the blog on Friday, April 5. I can’t wait to start reading!

Now let’s talk about St. Patrick’s Day running gear…

St. Patrick’s Day Running Gear

Are any of you out there planning to run in a St. Patrick’s Day race?

Ryan, my sister, my sister’s boyfriend and I will be running in a 10K on St. Patrick’s Day and ever since we signed up to participate, we’ve been sending each other costume ideas. You know we like to dress up for races together!

Here are some winners:

  • Target $1 Bin Finds

St. Patrick's Day Costume

Surely I’m not the only one out there who gets suckered into the Target $1 bins? I found a bunch of goodies in the $1 bins last weekend that I picked up for our upcoming race, including blinking bracelets, wigs, light-up rings and more. I was especially pumped about the neck ties!

  • Shamrock Suspenders

i was an irish dancer growing up and every year the month of march was spent at different parties performing with my dance school. We loved to stay up late and have fun dancing to the great music. The best memory i have was spending a few st patricks days in ireland and dressing up in green like crazy and looking like a crazed tourist because NONE of the locals dressed up in green shamrock gear!!!

My favorite St. Paddy’s Day memory…I had just moved from my beloved east coast to CO to be with my fiancé and CO had the biggest snow storm in years! We were completely snowed under getting more than 3 1/2 feet! It was so fun being snowed in together! We didn’t even own a snow shovel, we had to try and dig out using a garden spade! Fun :):):)

My dad works near St. Patrick’s Cathedral in Manhattan, so every year he’s able to score cathedral seat tickets to the St. Patty’s Day Parade. The years we’ve spent there are some of the best memories I have with my dad! We usually have breakfast somewhere in the city before, and head home after for corn beef, potatoes, cabbage, and SODA BREAD!!

I think I will be working on St. Patrick’s day this year, but usually (even though my family and I are not Irish) we make delicious corned beef and cabbage. So yummy! Those headbands are too cute, I think no-slip is what I need since I always end up having to adjust my headband several times at the gym!

My favorite memory: when I was little, my parents would sprinkle green fairy dust (I still don’t know what it was to this day…) around the house, and make little footprints in it. They’d put some of the toys in our room out of place…. all due to the Leprechaun that visited us during the night, of course!!! Then we’d come downstairs to eat green pancakes with green milk 🙂
