St. Patrick’s Day Running Gear

March 7, 2013 by Julie 1,283 Comments

Lunch today snuck up on me!

Before I knew it, my stomach was grumbling and I needed food!

Fact: This meal looks horrendous.

cauliflower sausage scramble

But lots of shredded cheese has a way of making me overlook an unattractive dish!

I began by sautéing a chopped chicken sausage in a skillet while I steamed some cauliflower in the microwave. I then added leftover roasted Brussels sprouts to the skillet, followed by the mashed steamed cauliflower and a boatload of shredded cheese.

Easy, satisfying, ugly and delicious!

March Book Club

With the majority of the votes, the winning book for the PBF March Book Club  is…

the fault in our stars john green

The Fault In Our Stars by John Green. We’ll be discussing this book on the blog on Friday, April 5. I can’t wait to start reading!

Now let’s talk about St. Patrick’s Day running gear…

St. Patrick’s Day Running Gear

Are any of you out there planning to run in a St. Patrick’s Day race?

Ryan, my sister, my sister’s boyfriend and I will be running in a 10K on St. Patrick’s Day and ever since we signed up to participate, we’ve been sending each other costume ideas. You know we like to dress up for races together!

Here are some winners:

  • Target $1 Bin Finds

St. Patrick's Day Costume

Surely I’m not the only one out there who gets suckered into the Target $1 bins? I found a bunch of goodies in the $1 bins last weekend that I picked up for our upcoming race, including blinking bracelets, wigs, light-up rings and more. I was especially pumped about the neck ties!

  • Shamrock Suspenders

My favorite St. Patrick’s Day memory is definitely the holiday in 2010, when I was studying abroad in New Zealand! My friend Erika and I really wanted to go experience the celebrations in the city (Christchurch is a very English/Irish city in NZ) but it was freezing out and the rest of our friends bailed. The two of us dressed up in all our green, went on our own, and had the most amazing Kiwi St. Patty’s Day ever! 🙂

I come from a huge Irish family. My grandma and grandpa had seven sons, one of which is my dad. Our family always gets together and celebrates our heritage with my grandma’s corn beef and cabbage. It is not quite the same since my grandpa passed away, but it is always a great time when my loud, crazy, Irish family gets together 🙂

My favorite St. Patrick’s Day memories are all the years spent celebrating on the streets of Ann Arbor during my time at school. Happy (and unusually beautiful weather) days spent celebrating and drinking outside with friends. That even includes the one year I broke my foot – nothing was bringing me down!

And the only race I’m planning on for SPD this year is between me and my family to get to all the potatoes and carrots before everyone else… (I don’t eat corned beef for ethical reasons)

My favorite saint patrick’s day memory is definitely waking up every morning and having a chocolate “gold coin” trail leading to another little present. My brother and I would also find that the “leprechaun” messed with all our household furniture! My favorite year was when my parents rolled a bunch of toilet paper (clean) around our house and down the stairs. I’m going to miss that this year as I’m in my first year of college!
