Lunch today snuck up on me!
Before I knew it, my stomach was grumbling and I needed food!
Fact: This meal looks horrendous.
But lots of shredded cheese has a way of making me overlook an unattractive dish!
I began by sautéing a chopped chicken sausage in a skillet while I steamed some cauliflower in the microwave. I then added leftover roasted Brussels sprouts to the skillet, followed by the mashed steamed cauliflower and a boatload of shredded cheese.
Easy, satisfying, ugly and delicious!

More St. Patrick’s Day gear that caught my eye…
I saw a bunch of women wearing fun sparkly skirts over their leggings or compression shorts at the Women’s Half Marathon a few years ago and thought they looked awesome! (Bachelor fans, I think we know Tierra would be all about this one. Sparkle.)

Favorite St. Patty’s Day Memory has to be when I was in Dublin! We ran into a few locals who took us to the non-touristy pubs, and in true Irish fashion the night ended in a near-street-brawl. Good times.
Corned beef, cabbage, and Irish soda bread was a tradition in our house. One year my mom mixed up the directions in the recipe for Irish soda bread and added 3 cups of sugar instead of the called-for amount of 3 tablespoons. It came out of the oven a MASSIVE super sweet sugar cookie.
My favorite memory was also a childhood tradition. My mom would help my sister and I set up Leprechaun traps! We would put lincoln logs and kinex together to make little cages and I’d tie floss between my bed and the dresser to “trip” him into the cage (this sounds so ridiculous as I type it.) Then, in the morning, the cage would have been set off but no Leprechaun and in different parts of the house there’d be gold coins and gold chocolate coins that would spell out messages. One year it said, “Ha ha” and I cried I was so mad LOL

I’m planning to run my favorite 5K, the Irish Jig. The course is great and it has a fantastic turnout every year. My shamrock headband is ready to go. 🙂
My favorite memory of St. Patty’s Day is being in the parade that day with my family when I was younger. I would love to give these bands a try – and luckily, green is my favorite color!

My favorite memory was that my grandma would always make us green pasta and green milk at her house. I thought it was suuuuper cool as a little girl 🙂
My favorite St. Patty’s day memory is when my kinder garden teacher got “kidnapped’ by lepeurcans. We came back from an assembly and there was chocolate and sparkles all over the place plus a ransum note saying what to bring to them and how to get her back. It was like a scavenger hunt. It was so fun! 🙂
I used to love running the Shamrock Shuffle 8k in Chicago when I lived there! But I LOVE participating in St. Paddy’s Day mostly because my high school mascot was the Shamrock (‘Rocks for short!) and I still like to rock out some shamrocks once in a while 11 years later 🙂
My favorite St. Patrick’s day memory was ten years ago when I got to spend it in Dublin while studying abroad in Ireland. This year, I’m hosting St. Patrick’s day dinner for my family – it’s my first time making the full corned beef and cabbage meal and I’m so excited to have everyone over to celebrate for my favorite holiday!

Every St. Patrick’s Day I make Irish Car Bomb cupcakes- chocolate Guinness cupcakes with Bailey’s Irish Cream frosting. They are amazing!!!!!
I will also be running a 10k at our local st Patrick’s day parade!
I want these bands! I am running my first half marathon the 16th, so the day before St. Patrick’s Day and they would be perfect for the race!

Since I’m in school I will unfortunately be studying for a bunch of midterms on St. Patty’s Day. 🙁 However here at the University of Illinois we have a tradition called “Unofficial St. Patricks Day” that falls usually the weekend before the actual holiday. It is the most fun day of the year here. It mostly just consists of all day drinking green beer, eating green eggs and ham, and so much fun!
We are running a Lucky Leprechaun 5k this yr as a family! Favorite food is green beer (if that counts). 🙂

My favorite St. Patrick’s Day memory is when I went to visit my friend in Dublin! During college, she was studying abroad at University College Dublin and I visited her over Spring Break, which conveniently coincided with St. Patty’s Day. Lots of fun festivities, including a big parade!

Every year we try to consume some type of green beer. It seems to never end well for us the next morning but something about that green beer just gets you in the spirit.
My favorite food to enjoy on St. Patrick’s Day is Corned Beef and Cabbage. It’s tradition!
I’m running in a 10K St. Patrick’s Day Road Race on the 16th! It’s the second year in a row I’m running and it’s a blast. Tons of people run it and it’s such a festive event!

Last spring break I went to Chicago. They dyed the river green on St. Patty’s Day! So much fun.
A couple of years ago I ran a St. Patty’s 8k here in Raleigh. It is a very popular race and was a lot if fun.
St Patty’s Day is one of my favorites!! There are quite a few Irish bars here in cincy that are so fun. Our anniversary is on the 20th, so my favorite memory is dropping off gift bags at our hotel a few days before our wedding then going out drinking green beer knowing that all wedding planning was done and we could let the celebrating begin 🙂

I can’t wait for corned beef & cabbage! We spent St. Patrick’s day in West Palm Beach last year, it was an absolute blast! I have a picture on my phone with a bag piper at one of the bars we went to… so much fun!
Every year we make corned beef, cabbage, carrots and potatoes in the crock pot and Irish Soda bread to eat with it. Can’t wait for it this year!

My biggest connection to St. Patrick’s day is that regardless of wearing green, you’re NOT supposed to wear red or orange! I don’t remember the exact reason — the message was passed down through my mom from my Great Grandma.

My favorite tradition that my friends and I have is called Fake Pattys Day. It actually takes place the weekend before St. Patricks day in Manhattan Kansas. We all get together and make shirts and eat green eggs and drink green beer, and have a heck on a time in Aggieville America! It’s an awesome time.
My Wedding! Ryan and I got married last year on 3/17/12! While we didn’t serve Green beer at our wedding, I did have a green garter to have a bit of festiveness in my day (and wear my green all day long). One of the fun things after we returned from our honeymoon was seeing pictures from our friends who celebrated after our reception all together for St. Patty’s Day.
My most memorial St. Patties Day was last year when my sister tied the knot! It was a beautiful Irish wedding! My sister wore a beautiful princess gown and she had shamrock stockings underneath. It was perfect and hilarious!
