Lunch today snuck up on me!
Before I knew it, my stomach was grumbling and I needed food!
Fact: This meal looks horrendous.
But lots of shredded cheese has a way of making me overlook an unattractive dish!
I began by sautéing a chopped chicken sausage in a skillet while I steamed some cauliflower in the microwave. I then added leftover roasted Brussels sprouts to the skillet, followed by the mashed steamed cauliflower and a boatload of shredded cheese.
Easy, satisfying, ugly and delicious!

More St. Patrick’s Day gear that caught my eye…
I saw a bunch of women wearing fun sparkly skirts over their leggings or compression shorts at the Women’s Half Marathon a few years ago and thought they looked awesome! (Bachelor fans, I think we know Tierra would be all about this one. Sparkle.)

My favorite memory is celebrating St. Patrick’s day two years in a row in Columbia, SC. All of the fountains turn green & my friends and I ran the morning 5k, which made it seem okay to have a green beer to celebrate!
strange as it is, my favourite st. patrick’s day memory was when i worked at a bar in a hotel! it was my sophomore year in college and the night just went so WELL. no bar fights, no creepy guys, no nightmare tables. just people drinking green beer and having a good time. i had a ton of fun with the guests. not sure why that year sticks out, but it does.
Even though I’m not Irish, my family loves corned beef and cabbage dinners. Every year my grandmother makes this for dinner om st pattys day and the whole non Irish family gets together and eats this delicious meal!
I ran my first half marathon on St. Patrick’s Day last year!
We always go to the St. Patty’s day parade in our hometown…. and my favorite food (IDK if this really counts haha) is green beer. It’s a big tradition in our town to go to one of the irish bars when they get the green beer delivery.
Last year I ran a St. Patty’s day race with a “Will run for beer” green shirt, which I ordered from Anne’s blog… http://www.fannetasticfood.com. I found your blog shortly thereafter! Anyway, I’m thinking about starting a new tradition this year and will make the kids/hubby green pancakes for breakfast. I made them pink ones for Valentine’s day and they loved it!
My favorite food is definitely corned beef!! My mom makes the best. And no race from me this year, but last year I did the Shamrock 8k!
I rode on a float one year in a big St. Paddy’s parade. That was a lot of fun & a completely different experience!

My friend’s birthday is on St. Pat’s day so I guess our tradition is to go out – but it’s for her birthday and not the holiday.
Last year I ran a St Pattys day 5 Miler and it was the first time i ever ran 5 miles in under an hour. Which was a big accomplishment for me! I cant wait to run it again this year and beat my time!
Every year on St. Patrick’s Day, I make corned beef, cabbage, and potatoes and a green cake with green icing. My kids love the cake and tell me that it brings them good luck. Not so sure that’s true but it is delicious!!! Awesome giveaway! I will be working both of our city’s St. Patrick’s Day Parades this year! Can’t wait!
Being Jewish, I’ve never celebrated St. Patrick’s Day before, but I am a fan of corned beef and cabbage! Never had them together, but I’m still a fan!

My favorite St. Patty’s memory is definitely last year! I spent the weekend in Ireland while I was studying abroad! I have never seen so many drunk people in my life 🙂 It was a great time!
Hands down Guiness cake and beer are my favorite things to have of St. Paddys day. that and Dubliner cheese with soda bread. I cannot get enough of that stuff 🙂
Favorite memory: At my friends house day after her party, her Irish parents (straight from Ireland) come over and she fills a pint of Guinness from a keg for her mom. Her mom takes one look at it and pours it down the drain saying “rubbish!”. At my husbands horrified look (beer!!) she explains that Aisling didn’t pour it correctly and there wasn’t the right amount of head to it. LOL.

When I was younger my dad would sneak out of the house before I woke up to buy green bagels from the bakery up the street. Then he would leave them in the kitchen and tell me that the leprechauns had left them there! He would also turn our milk green 🙂 It was a fun tradition!
Not doing a race this St. Patrick’s Day but I am running 15 miles that weekend with my marathon training group! (Then heading to the parade after!) 🙂
Hey Julie! For the past few years I’ve joined my boyfriend’s family on St. Patrick’s Day for of course, corned beef & cabbage! I never thought I liked it, especially the cabbage part, but the way they cook it is just so tasty. I now look forward to it every year!

Favorite memory is when my whole family would load up into the van and make the 40 min drive up north to go to the Annual St. Patty’s Day parade. Sadly, we do not do this anymore and I dont know why!!

Omg I love Bic Bands! I just had 3 delivered earlier this week. Last year was a memorable St. Patrick’s Day for me. I ran my first race by myself (usually my fiance or a friend runs with me) and it was the RnR DC half marathon. My fiance, my family, and his family were there to support me and it was a great experience! I wore a green top, green Bic Band, and green compression socks. And then afterwards, my fiance and I went out for some St. Patrick’s Day beers. It was a fun day!
My favorite St Patty’s memory is going to the big Dallas St Patty’s day party sporting a shamrock sticker on my cheek and gettig a massive sunburn AROUND the sticker…needless to say I was sporting my Irish pride (and I am not even Irish!) the rest of the month of March!

I LOVE St. Patrick’s Day! Every year I just chill with my friends, some corned beef and cabbage, and of course green beer.
I was looking for a run to do St. Patty’s Day weekend and there was literally nothing good around me. You’d think LA would be on the ball but sometimes I have a really hard time finding good races (that aren’t like $60 because that’s crazy).
Favorite food has got to be Irish Soda Bread…So Freaking Good!

I love BicBands!!! My favorite thing to eat on St Patty’s Day is green beer! (well drink I guess). Other than that I plan on making some kind of green treat this year – cupcakes, mint brownies, cookies… fun stuff 🙂

Growing up my sister and I used to Irish dance. Around Saint Patrick’s Day, we would be participants in the many fesitvals and parades in our area.
I celebrate St. Patrick’s Day with a girl’s trip to Chicago every year. They dye the river green and people celebrate all day long! It’s a ton of fun.
My favorite St. Patricks day memory was spending it on spring break in the Dominican Republic my senior year of college and seeing all the hotel workers dress up as lepruchans!! I also love corned beef and cabbage every year 🙂
I never had really celebrated Saint Patrick’s Day, but my husband is half Irish, so last year we went out with his brothers to a street party in downtown Orlando. We drank lots of Guinness and had a blast…although my beer munchies got the best of me and I ended up eating Mexican food!
I love going to the St. Patty’s day parade every year… the timing always seems to workout where it’s a perfect Spring day (making it even more special after a long winter)!
When I was little I was all about the green bagels our local bagel shop would serve close to St. Patrick’s Day. But now, as bad as it is, I look forward to McDonald’s Shamrock shake! It’s literally the only time I go to McDonald’s all year!!
My favorite St. Paddy’s memory is spending the day with my dad and going to Downtown Chicago to see the parade and river dyed green. We would all (including my dad) dress up in ridiclious outfits! Afterwards we would head over to my grandparents house and pass out in corn beef comas! Best Day Ever! Someday I hope to keep this tradition going with my kids.
This year I will be running in the Chicago 8K Shamrock Shuffle! I’m so excitited this will be the longest race I have attempted (I’m a novice runner) and I can’t wait to gear up for the big day.

I like to make my own healthier lighter version of the McDonald’s Shamrock smoothie….but with greek yogurt, avocado, mint flavor, spinach and protein powder. And then at some point later in the day I’ll squeeze in some real mint chocolate chip ice cream. No need to health-ify that.
I am Irish, but the only tradition in my family growing up was to have corned beef and cabbage for dinner (which I don’t care for). This year I am running a 5k with a couple of friends, so it should be fun! I still have to decide on some fun things to add some holiday cheer to my outfit though, so this post was very helpful!

My absolute favorite thing to eat on St. Patrick’s day is corned beef and stewed cabbage. Sounds disgusting, right? But it is SO good. My dad makes it every year for our St. Patty’s day dinner. It’s a tradition that I’ve loved every year. 🙂
Corned beef over a sweet potato hash cannot be beat. We generally wake up early, eat corned beef hash with an Irish coffee, then off to the parade. I love St. Patrick’s Day!
