Lunch today snuck up on me!
Before I knew it, my stomach was grumbling and I needed food!
Fact: This meal looks horrendous.
But lots of shredded cheese has a way of making me overlook an unattractive dish!
I began by sautéing a chopped chicken sausage in a skillet while I steamed some cauliflower in the microwave. I then added leftover roasted Brussels sprouts to the skillet, followed by the mashed steamed cauliflower and a boatload of shredded cheese.
Easy, satisfying, ugly and delicious!

Ryan, my sister, my sister’s boyfriend and I will be running in a 10K on St. Patrick’s Day and ever since we signed up to participate, we’ve been sending each other costume ideas. You know we like to dress up for races together!

More St. Patrick’s Day gear that caught my eye…
I saw a bunch of women wearing fun sparkly skirts over their leggings or compression shorts at the Women’s Half Marathon a few years ago and thought they looked awesome! (Bachelor fans, I think we know Tierra would be all about this one. Sparkle.)

I am a redheaded Irish girl and love to have corned beed and cabbage for St. Paddy’s day dinner after a long day of drinking…..after I complete my daily run of course! 🙂
Every year I run the St. Patty’s Day 8K in Washington DC, followed by brunch. And every year I buy a new pair of St. Patrick’s Day knee socks from Target to wear to the race. 🙂
My favorite St. Pat’s food are green bagels. The bagels here are so good and it’s a fun twist when they dye them green for the day!
I plan on running in the Chicago Shamrock Shuffle on April 7th. My friend and I are going to get all decked out so these green headbands would be a perfect addition!
My favorite St. Patricks Day was when I was in NYC visiting my sister in law – they have such a great parade and SO many Irish bars to celebrate at and bar hop 🙂
i’ve been spending the past few st patty’s days with the irish bf’s family, they go all out with the decorations and food! so much fun!
I love eating anything green on St. Patrick’s day. The dining hall at my school made green sushi last year! It was kinda odd but still good!

I live in Columbia, SC and there is an annual St. Pattys Day festival in our main downtown area where are the college bars are. It’s a blast. They have a 5 and 10K race to kick each festival off too. A festive green Bic Band is a must for both events!
I can’t say I have any traditions for St Patty’s day because the next day is my bday. This year I’m going to be 30..yikes!
I have an odd love for irish soda bread…and cabbage. I could eat a whole head of cabbage, but then no one would want to sit next to me.

That 4 leaf clover running tutu…. shut up, so precious! I live in a college town. There’s a strip of bars across from campus that are open all day on St. Patty’s. I was never one, but there would always be kids who would show up drunk to class lol. Such crazyness!
My birthday is the day before St. Patrick’s day, so one of my favorite memories is the 22nd birthday/St. Patrick’s party that some college friends put together for me. We all wore green and features green food and drink – everyone had such a great time!

My favorite St. Patty’s Day memory is spending the whole day hanging out, playing games, drinking, and eating great food with my friends during my junior year of college. It was as GREAT time! 🙂
This year on St. Patty’s Day I’ll be in New York and I plan on going to their St. Patty’s Day parade which is supposed to be the largest parade for this holiday. Wearing a shamrock BIC band at the parade would be so cute and festive!

I visited Ireland this past summer and fell in love with some deeelicious Irish Soda Bread. I would love to recreate it this year. It’s perfect warm with a big spread of fresh butter. MMMM.

I have so many good memories and traditions of bar crawls with friends from college that we try and do for St. Pattys Day to keep in touch….
But growing up, my mom ALWAYS made corned beef and cabbage and potatoes for dinner on St Patricks Day… along with green milk of course. I looked forward to it every year!
I also am running the Rock and Roll USA half in DC on the 16th! Yay for green running gear!
Every year I send my cousin some baked goods for he’s birthday. He was born on St. Patricks day so I make them festive for him.

In college after “Kegs and Eggs” festivities (I finally went my last year to say I did it), I walked back to campus with a mutual friend of my roomate’s boyfriend, and we talked for four hours, and soon after started dating. In the midst of all the crazy college antics I was able to connect with someone, so I guess it was some St. Patty’s Day luck. Of course, I’m with a different guy now, who is absolutely amazing, but he was a good guy. Probably my only story worthy St. Patty’s event.
My favorite memory thing to eat/drink on St. Pats day would have to be beer! 🙂

We ran in the St Patty’s day dash in Seattle one year with friends. It was so cool to see everyone dressed up and in the spirit. Too bad it was cold and RAINY! What did we expect in Seattle?
My favorite St. Patrick’s Day memory is from back in college when I was studying abroad in London. A bunch of my classmates and I flew to Dublin after class on St. Patrick’s Day and partied all night (literally) with the Irish! We drank, met random Irish people, and had a BLAST! Even though we were dead tired the next day during classes, it was totally worth experiencing the holiday in Ireland!
St. Patty’s Day seems to always fall on spring break so my best memory is probably hanging out at the beach!
My fav St Patty’s Day memory is being in New Orleans for an Alternative Spring Break trip. We actually went to the quarter and watched the St Patty’s Day parade… crazy but so much fun!

My favorite St Patrick’s Day was last year when my fellow bridesmaids and I hosted a bridal shower for my dearest friend. Seeing her giant smile when she walked in the room filled with loved ones was such a joyful moment. Her mom made a veil out of a shamrock headband it was adorable 🙂
I’m running the Yeungling Shamrock Marathon in Virginia Beach on March 17th! I’ve participated in this race for the past 3 years and it is definitely a favorite. Plenty of cold beer and irish stew on the beach at the finish!
My St. Paddys Day Tradition is to make Corned Beef and Cabbage and a new Irish or Irish inspired dish. I make a big Irish feast for my friends and one year I made “car bomb cupcakes” and last year I made “Paleo Irish Soda Bread” This year I plan on making Colcannon- Which is mashed potatoes and cabbage and kale mixed in… It sounds super yummy!

My favorite St. Patty’s day was back in 2008. It was freezing cold in Upper Michigan, the snow up to our elbows – I swear! After a bite to eat, I went out with a couple friends and this guy I really, really, really liked. They introduced me to green beer. Green beer, that is crazy! The next day that guy and I started dating and now, I am married to him. It was a great date and I walked away with the man of my dreams. Well done St. Patty, well done.
Every year, we go to my moms for dinner and eat corn beef and cabbage. After that we play a game that involves a pot of fake gold! Winner gets a prize. Fun times!

I was planning on running in the Four Courts 4-miler here in Arlington. It’s hosted by an Irish bar…. But with my current race schedule for April–I really wanted to focus on staying uninjured–so I decided to pass on the race. It would have been a blast. Instead I may just indulge in some green beer after my long run that day 🙂
My favorite St. Patty’s day food is a cream cheese frosted, dark chocolate, brownie from Great Harvest. The cheese frosting is dyed green and it is to die for. They only come out a few days before St. Patty’s Day every year. My friend and I stalk Great Harvest every day in March until they arrive. Yummy!

I’m participating in the 2013 Chicago Shamrock Shuffle! I run this every year and the weather is always crazy (That’s Chicago for you)! Afterwards, we Irish Bar hop in our race gear 🙂
I’m an Irish dancer, so all of my memories revolve around dancing in the pubs, dancing in the parade and dancing, pretty much anywhere. So fun!!
