Lunch today snuck up on me!
Before I knew it, my stomach was grumbling and I needed food!
Fact: This meal looks horrendous.
But lots of shredded cheese has a way of making me overlook an unattractive dish!
I began by sautéing a chopped chicken sausage in a skillet while I steamed some cauliflower in the microwave. I then added leftover roasted Brussels sprouts to the skillet, followed by the mashed steamed cauliflower and a boatload of shredded cheese.
Easy, satisfying, ugly and delicious!

The Fault In Our Stars by John Green. We’ll be discussing this book on the blog on Friday, April 5. I can’t wait to start reading!
Now let’s talk about St. Patrick’s Day running gear…
St. Patrick’s Day Running Gear
Are any of you out there planning to run in a St. Patrick’s Day race?
Ryan, my sister, my sister’s boyfriend and I will be running in a 10K on St. Patrick’s Day and ever since we signed up to participate, we’ve been sending each other costume ideas. You know we like to dress up for races together!
Here are some winners:

These girls look so cute in their green tutus!
More St. Patrick’s Day gear that caught my eye…
I saw a bunch of women wearing fun sparkly skirts over their leggings or compression shorts at the Women’s Half Marathon a few years ago and thought they looked awesome! (Bachelor fans, I think we know Tierra would be all about this one. Sparkle.)
You guys know how obsessed I am with these headbands by now. When I saw the shamrock headband on their website, I just had to have it. A headband that doesn’t slip that’s also peppered with lots of little shamrocks!? Oh yes! (Get psyched because YOU have a chance to win a $40 BICBands gift card that you can use toward one at the end of this post!)
- Target $1 Bin Finds
Surely I’m not the only one out there who gets suckered into the Target $1 bins? I found a bunch of goodies in the $1 bins last weekend that I picked up for our upcoming race, including blinking bracelets, wigs, light-up rings and more. I was especially pumped about the neck ties!
Just in case your running shorts are a little too big.
I’m not gonna lie, these PRO Compression shamrock socks shamROCK my socks off. (Sorry, I just can’t help myself.) I saw Monica and SkinnyRunner blog about them last week and was so excited when they sent me a pair to try! (You can use the promo code MARCH for 40% off any of their marathon socks or calf sleeves right now!) I can’t wait to wear them during next Sunday’s 10K!
- More Fun Knee-High St. Patrick’s Day Socks
Target comes through in the clutch again with a bunch of knee-high St. Patrick’s Day socks for only $5!
I found this little gem in the Race Junkie’s Etsy shop and thought it was adorable!

Every year when I was a kid, my mom would give us a whole St Patrick’s Day box – green clothes, nail polish, earrings, socks, candy, etc. She continued sending me them when I was in college and still sends me a box every year!
I’ll be running in the Heart Mini which will be on St. Pattys Day. I’ve been wanting to try BIC bands for so long!
Shamrock Run 15k in Portland. The 5k was my first race ever three years ago.
I am running the Shamrock n Rock 10K on ST Patrick’s Day
I ran my first ever 5k at a St. Patty’s day race in Columbia, SC. I was a newbie runner and it was tough for me but I had plenty of green beer afterward to help me refuel 🙂
My favorite part of St. Patrick’s day is my mom’s Irish Soda Bread! YUM!
I grew up in an Irish/Italian household. Every St. Pat’s we’d have the traditional Irish-American meal of corned beef and cabbage and of course irish soda bread and italian St Joseph’s pastries for dessert since his feast day is 2 days after. The soda bread is what I look forward to the most! My family recipe is so good I can’t have it anywhere else. Sláinte!
My fave memory is from New Orleans – the St. Patrick’s Day parades they have there are amazing!
My favourite St. Patrick’s food is green beer! Wait, beer isn’t a food?
St. Patty’s Day is my brother, my grandfather and my great aunt’s birthday (and we’re not Irish, I swear!), so growing up I didn’t understand that it was a holiday, and just thought they just all really like shamrocks, leprechauns and green things — and just knew it meant I got to eat lots of cake!
A fond memory I have was from the 1st grade (my favorite teacher ever) we made leprechaun traps the day before St. Patricks day and the next day there was little gold glitter foot prints and gold chocolate coins in some of the traps that the leprechaun had gotten out of, its always fun to think of the silly things we believed actually happened!
I am doing the Shamrock 5k Beer Run where you drink a beer after every kilometer. I am not expecting a graceful finish 😉
Last year I woke up super early and made a HUGE feast for all my friends. I made green eggs, green pancakes, sausage, and added green food coloring into every one’s beer. It was so fun!
Every St. Patrick’s Day weekend my family runs the Running of the Green in Denver and it’s always nice to relax with some green beer after!
My favorite St Patricks Day memory is Hoboken St Patty’s Day parade in 2005. So much fun with my husband and our friends!
My family and I always eat green food!
Every St. Patrick’s Day my whole family gets together and goes to our favorite Irish pub in the city. It’s one of my favorite days of the year.
Green Beer! I’m not a beer type of girl but if I’m out on St. Patty’s Day I have to have some festive green beer.
St. Patrick’s Day is my birthday (yay!), so I’ve got lots of great memories, but perhaps the best was last year: My family was visiting me and I had a big party with them and all my friends after rocking out my Master’s comprehensive exam
I’ve been dying to try Bic bands! My favorite St. Patrick’s day food is Irish soda bread. I think I might have to make some this weekend.
I am participating in McGuire’s St. Patrick’s 5k this Saturday with a team and am super excited!
My favorite St. Patrick’s Day memory is celebrating in Ireland when I studied abroad there during college. Going to be hard to beat that one! 🙂
My best St. Patrick’s Day memory is in pre-K the “leprechauns” destroyed out classroom and threw gold coins everywhere… and we had to clean it up and count eh gold coins we found. After we had green milkshakes – mint chocolate chip! It was my first time trying that flavor and it’s been a favorite ever since 🙂
I LOVE corned beef and cabbage in the crockpot. It’s one of my favorite foods for St. Patrick’s Day. I won’t be running a race this year. My first half is the 24th!
Those headbands are so cute…you can never have too many! Green Beer is a must on St. Patty’s Day!
My nieces and i ( we r all around the same age) get dressed up and go to the city’s pub crawl. Not a healthy thing to do but it is lots of fun!!!
My favorite St Patricks Day meal is the classic corned beef with potatoes, cabbage and carrots! So good!
Last year was my first time trying corned beef…I’m excited to say it will be appearing again! ..this time we’re going to add the cabbage! Wish us luck 🙂
Half my family is Irish so St Pat’s is a BIG deal for us.. typically we get up early, get all dressed in green and head downtown to grab a green beer and a place to watch the Cleveland St. Patrick’s Day parade. Lots of my family march and my Dad is one of the grand marshalls. And there is always a cornbeef dinner afterwards! Some year, I will run the Corktown 5K in Michigan with my SIL though- any race that rewards you with a beer at the finish line has to be fun, right?
i’ll be doing the DC Half marathon the day before st. patty’s so no st. patty’s day run for me!

It’s always my Mom’s birthday, so we always get to celebrate her! Last year, we cooked a completely green meal. My dad was really proud of finding McDonald’s shamrock milkshakes to snag for dessert.
I love corned beef and cabbage and I always request my Momma to fix it!
I LOVE St. Patrick’s Day! it’s one of my favorite holidays and my best memories are going to Grandma’s (who was born in Ireland 🙂 ) and eating her potato soup and corned beef – so delish! We also go as a family every year to watch the parade in NYC – I may be stocking up on some of those amazing tutus or socks you shared for this year!
I went for a run on St. Patrick’s Day in college one time wearing a “Kiss Me I’m A Runner” shirt and so many drunk guys (….and girls) were yelling at me to kiss them. Pretty hilarious 🙂 Great givewaway too!!!
Shamrock Shakes from McDonalds are the best on St. Patty’s Day! 🙂 Love love love them. It’s a good thing they don’t have them all year round or this girl would be in BIG trouble.
In Dallas there is a St. Patty’s 5k that kicks off the parade and craziness that follows…it was the first (and only) race i have ever been able to convince my husband to run with me! And he did so while wearing a giant beer mug hat.
My favorite that I’ve seen was green man (from It’s Always Sunny in Philadelphia.) Hilarious!
I used to live in Chicago and worked downtown. Loved seeing the river dyed green.
I love all your gear, Julie! Also, I too am a fan of ugly, cheesy lunches 😉
I would LOVE to win the Bic Band giveway.
A St. Patrick’s Day tradition you have with your friends or family:
St. Patrick’s Day is a really big deal in my family. We’re all about celebrating our heritage. We actually all march in the NYC parade on 5th avenue as a family. I’ve marched every year since I was born (ok, so the first few years,I was carried) and it is my most treasured St. Patrick’s Day memory. The combination of family and celebrating together is so important! Also, listening to my cousins play the bagpipes while I sing irish songs in the pubs afterwards is also a highlight 😉
Hi Julie! My favorite St. Patty’s day memory is seeing the Dying of the River Green in San Antonio with my family a couple of years ago! People got all dressed up and floated down the river on a barge playing bagpipes and dying the river green with environmentally friendly dye. It was so much fun to watch from the riverwalk and see all the awesome costumes people were wearing all day.
When my mom was pregnant with me my due date was March 17…I was not born until April 4…now that I have had kids I feel for my mother!!
My favorite food is green eggs every morning for St. Patrick’s
My favorite memory was Irish Dancing in the St. Patricks Day Parade in Jr high.!
I love pistachio cake for St. Pattys day. I cannot get head bands to stay on my head (I think I have a funny shaped head) and really want to see if BIC bands live up to their claim!
it’s silly but I always remember my Dad telling us he had on green umderwear so we couldn’t pinch him. Still makes me giggle.
In college the bars would open up at 6am it was a tradition for the whole town to get up early, dress up, and hit the mimosas at 6 am. There would be lines down the street to get in. Most places had live music and fun green drinks and green beer.
Mmmm, I love to have some corned beef and cabbage!!
I love my grandmother’s delicious corned beef & cabbage! And of course fresh soda bread from my favorite Irish bakery 🙂
When I was little, my mom and I would always paint our nails green if we didn’t have any green! It was so fun picking them out with her!
St Partricks Day is HUGE in my family! Even bigger than Thanksgiving! I love catching people not wearing green and lecturing them on the importance of it!
