Lunch today snuck up on me!
Before I knew it, my stomach was grumbling and I needed food!
Fact: This meal looks horrendous.
But lots of shredded cheese has a way of making me overlook an unattractive dish!
I began by sautéing a chopped chicken sausage in a skillet while I steamed some cauliflower in the microwave. I then added leftover roasted Brussels sprouts to the skillet, followed by the mashed steamed cauliflower and a boatload of shredded cheese.
Easy, satisfying, ugly and delicious!

More St. Patrick’s Day gear that caught my eye…
I saw a bunch of women wearing fun sparkly skirts over their leggings or compression shorts at the Women’s Half Marathon a few years ago and thought they looked awesome! (Bachelor fans, I think we know Tierra would be all about this one. Sparkle.)

March 15th is my birthday so my entire family is going to the parade on Friday. Then Saturday is the 5k and bar crawl that night! Excited for a fun 27th birthday celebration!

My favorite St. Patrick’s day food is surprisingly, cabbage! I think cabbage gets a bad rap, but I love it!

It’s the day after we’re celebrating my little sister’s 22nd birthday so I figure like usually I’ll wake up the crew and head down to the HUGE St. Patty’s day parade in Dallas!!! too fun!

Those St Patty’s race outfits are hilarious! This year will be an interesting St Pats for me as it marks exactly one year since I moved from Chicago to Denver to be with my fiancee! We are hoping to run in a 5K together but are waiting to see what his plans are (he might be in San Fransisco). This might be kind of an uneventful St Pats for me, and normally I go all out, so maybe a little green bling in my hair will help perk me up on my morning run 🙂
My older brother (Patrick of course) was born on St. Patrick’s Day, and it’s family tradition for the birthday child to pick what we’re gonna have for dinner. Due to this, we had Taco Bell every St. Patrick’s Day.
My Irish grandparents would be so proud.
This year is the 5th year in a row my friends and I will particpate in the St. Patrick’s Day run in Westport, Missouri. It is a 4-mile run through an awesome (and hilly!) section of town. And the finish line is in front of an Irish Pub, so we always hang out afterwards and check out the cool costumes everyone wore to the race. Easily one of my favorite days of the spring!

Every year we hit up the St. Patrick’s Day parade. It’s my favourite because it’s short, full of candy, and there are drink specials. Plus it starts at noon!
Running the Get Lucky 1/2 marathon in St. Paul – beyond excited! It’s my first half!!
Reuben sandwiches! I know you can order them year-round, but I’ll only eat them in March. So good!

My favorite St. Patty’s day memory was when I was in the second grade and made teacher made it seem like a leprechaun came into our class.

a favorite st. patty’s day memory i have is when i was in 3rd grade, my teacher took a sponge shaped like a little shoe and dipped it in green paint and sponged the top of our desks! it looked like a little leprechaun ran around our classroom! he even left us candy in our desks! (remember the desks with the cubby holes??) 🙂
My favorite St. Pats memory was actually last year! A friend and I ran a R&R Half Marathon in DC. I wore a kilt and a shirt that said “Official Kilt Inspector”. ha ha Around 7 miles in my friend fell and hurt herself but insisted on continuing. I didn’t want her to run alone even though she kept insisting I go on without her.
We knew we weren’t going to PR that day, so we just had fun with it! Around mile 12 we saw a group with solo cups in hand. One guy cheered “Go get’em kilt inspector!” So I asked back “What’s in that cup of yours?!” His answer – “Beer! Ya want some?!” So I thought what the heck. It’s St. Pats day, and we’re not going to PR anyway. I ran over, took a few swigs of Guinness and off we went! 🙂

My favorite St. Patty’s Day memory is of when my now-fiancee and I went into DC a few years ago to drink Guinness, listen to a live Irish band, and enjoy each other’s company.
My favorite st. patty’s day memory is probably my sophomore year of college, it was a beautiful day out and all of my friends and I spent the whole day together celebrating. Not much of a story, but it was my best one so far! It’s also a favorite holiday of mine because green has always been my favorite color! =)
I am a big fan of corned beef. I love making the corned beef soup recipe off skinnytaste.com this time of year.

We are soooo not about celebrating St. Patrick’s Day at my house – we are lame! But one of my favorite St. Patrick’s Day memories involve a boy in my class (in elementary school), pinning a shamrock to his sock, facing his other leg. He got pinched so much that day before he finally showed us that he was indeed wearing green.
My Synchronized Swimming team used to march in the local St. Patrick’s day parade… Because, you know, synchronized swimming is so Irish. 🙂
I had a huge party in college for St. Patty’s Day. Green beer, green jello shots, guacamole, spinach dip. It was AWESOME!
I may not be Irish, but I love me some St. Patty’s Day! Tradition is to Pub Crawl through downtown with friends and family. We also enjoy drinking green beer and listening to the local Irish bands that are playing. And a big bonus is that St. Patty’s Day has a tendency to be WARM in Erie, PA! Usually above 50 degrees which is a nice treat from the 20s-30s in March.

Denver has a HUGE (the second largest in the country) celebration every year! Its the best.
My favorite thing to eat on St Patrick’s day are vanilla cupcakes with green icing and sprinkles! My cousin cooks a traditional Irish dinner and I supply the dessert most years. 🙂
my favorite st patty’s day memory? in high school on the morning of st patty’s day, i came downstairs and my mom had put a bunch of green presents on the table for me. i quickly changed into one of the green abercrombie shirts and wore it to school. when i got to school i explained that it was one of my st patty’s day presents and found out that apparently no one else’s parents buy them gifts on st patty’s day. i was shocked! i’d always gotten green presents lol

Visiting my sister in Ireland as she was studying abroad was an experience unlike any other. No other memory of St. Patrick’s comes close.
Low key has been the name of the game for most St. Patty’s celebrations, but this is the first year I will be 21! Plus, we will be in Florida, so I believe this year will be the start of many traditions! Love the BIC bands so much!

Great St. Paddy’s day running memory: The club I run with has an annual St. Paddy’s Day run…and last year (my first year running with them) it was POURING rain. All of my friends ditched out, so it was just me decked out in green splashing through a 5k with a few hundred strangers. I felt (and looked) like a drowned rat by the end…but it was so fun! And yes, seeing some super creative costumes was a huge bonus! 🙂
Not sure if it counts as a St. Patrick’s Day race, but the NYC Half is March 17th and I will be racing that!
Hahahhaha my best St Patrick’s memory. Freshman year (last year!) of college. My friends and I never go out. I got invited to a party. I forced them to come. I convinced them to wear all (and I mean all, shoes socks, headbands ect.) green because I thought it would be funny. We get to the party and realize we really are just awkward. But we ended up having a really great time after we got over the horror that we were the only ones dressed like fools!
St. Pat’s is my fav holiday! My dad is on the parade committee, so we have a formal dinner the night before, run and parade on Saturday, then all my family friends go to our fav bar for the afternoon!
