Lunch today snuck up on me!
Before I knew it, my stomach was grumbling and I needed food!
Fact: This meal looks horrendous.
But lots of shredded cheese has a way of making me overlook an unattractive dish!
I began by sautéing a chopped chicken sausage in a skillet while I steamed some cauliflower in the microwave. I then added leftover roasted Brussels sprouts to the skillet, followed by the mashed steamed cauliflower and a boatload of shredded cheese.
Easy, satisfying, ugly and delicious!

More St. Patrick’s Day gear that caught my eye…
I saw a bunch of women wearing fun sparkly skirts over their leggings or compression shorts at the Women’s Half Marathon a few years ago and thought they looked awesome! (Bachelor fans, I think we know Tierra would be all about this one. Sparkle.)

I’m not Irish but my husband is, so every year for St. Patrick’s day I make Corned Beef and Cabbage. I think turning the leftovers into Corned Beef hash is the best part 🙂

One of my favorite St.Patrick’s Day memories was spending one of my college spring breaks in New Orleans. After being there I can’t imagine Mardi Gras…It was a great time!!
This year I will be celebrating my little brother’s 21st the night before so Sunday may be a slow day for me. I usually celebrate St. Patty’s by drinking green beer with friends and family. I’m not a huge beer lover but there’s something about green beer that I crave on that day!
Just eating everything green! Makes me feel like a rabbit 🙂

I am so excited that St Patrick’s Day is on a Sunday this year! A bunch of friends and I are going out the night before and then on Sunday to breakfast at one of the local bars…they also have live Irish music!

As a first grade teacher, we build trap to catch leprechauns. Then, I use a stamp to put green “footprints” all over our room! The kids love it!

I’m not Irish, but I look like I am (pale skin, freckles, reddish hair), so I always embrace my German heritage and drink German beer 😉
My favorite St. Patrick’s Day memory was from about 3 years ago when I loved in a small beach town. My co-workers and I got to ride on a firetruck down the main street that runs parallel to the ocean and then hopped around to different resaturants to celebrate the day.

I will be running my second half marathon on St. Patricks day!
Last year one of my best friends invited me over for a St. Patrick’s day dinner. I had corned beef and cabbage for the first time and fell in love! We even had homemade mint green ice cream popsicles for dessert. Even though it’s pretty stereotypical, this meal is definitely becoming a tradition!
Favorite St. Patrick’s Day tradition is making sure all of my meals have green in them that day!
My favorite thing about St. Patrick’s Day has been a tradition we’ve had just the past few years. A sneaky Leprechaun comes to visit our house and do mischievous things! My son LOVES it and has been putting his shoe out for the past month waiting for the day!!

Every year, since I was very young, my family has always had corned beef and cabbage. I’ve always loved it! And now that I’m an adult…I also add the green beer as my beverage of choice. 😉

My boyfriend and I are VERY Irish, and last year we made a TON of Irish Soda bread! We used an old recipe that’s been in his family for years. I can’t wait to do that again this year!
When I was a girl, my dad would take me out of school for day and we’d head downtown Indianapolis to watch the St. Patrick’s Day parade. One of the local grocery stores would give out green bagels….. I treasured those bagels!!!! Such good memories of being with my dad!
One memory that sticks out to me is when I was in 5th grade and I hgreen green but my friend pinched me really hard anyway that I wanted to cry. It was horrible. But kind of funny.
