Lunch today snuck up on me!
Before I knew it, my stomach was grumbling and I needed food!
Fact: This meal looks horrendous.
But lots of shredded cheese has a way of making me overlook an unattractive dish!
I began by sautéing a chopped chicken sausage in a skillet while I steamed some cauliflower in the microwave. I then added leftover roasted Brussels sprouts to the skillet, followed by the mashed steamed cauliflower and a boatload of shredded cheese.
Easy, satisfying, ugly and delicious!

The Fault In Our Stars by John Green. We’ll be discussing this book on the blog on Friday, April 5. I can’t wait to start reading!
Now let’s talk about St. Patrick’s Day running gear…
St. Patrick’s Day Running Gear
Are any of you out there planning to run in a St. Patrick’s Day race?
Ryan, my sister, my sister’s boyfriend and I will be running in a 10K on St. Patrick’s Day and ever since we signed up to participate, we’ve been sending each other costume ideas. You know we like to dress up for races together!
Here are some winners:

These girls look so cute in their green tutus!
More St. Patrick’s Day gear that caught my eye…
I saw a bunch of women wearing fun sparkly skirts over their leggings or compression shorts at the Women’s Half Marathon a few years ago and thought they looked awesome! (Bachelor fans, I think we know Tierra would be all about this one. Sparkle.)
You guys know how obsessed I am with these headbands by now. When I saw the shamrock headband on their website, I just had to have it. A headband that doesn’t slip that’s also peppered with lots of little shamrocks!? Oh yes! (Get psyched because YOU have a chance to win a $40 BICBands gift card that you can use toward one at the end of this post!)
- Target $1 Bin Finds
Surely I’m not the only one out there who gets suckered into the Target $1 bins? I found a bunch of goodies in the $1 bins last weekend that I picked up for our upcoming race, including blinking bracelets, wigs, light-up rings and more. I was especially pumped about the neck ties!
Just in case your running shorts are a little too big.
I’m not gonna lie, these PRO Compression shamrock socks shamROCK my socks off. (Sorry, I just can’t help myself.) I saw Monica and SkinnyRunner blog about them last week and was so excited when they sent me a pair to try! (You can use the promo code MARCH for 40% off any of their marathon socks or calf sleeves right now!) I can’t wait to wear them during next Sunday’s 10K!
- More Fun Knee-High St. Patrick’s Day Socks
Target comes through in the clutch again with a bunch of knee-high St. Patrick’s Day socks for only $5!
I found this little gem in the Race Junkie’s Etsy shop and thought it was adorable!

I love bic bands as much as I love corned beef and cabbage on St. Patrick’s Day!
My favourite tradition with my friends on “Patty’s Day” is lots and lots of green beer 😀
I cried one day in elementary school because I forgot to wear green on St. Patty’s day. 😉
my mom used to make corned beef and cabbage for st. patrick’s dinner when we were little! it was always something that i looked forward to all month! 🙂
My favorite St. Patty’s day memory is last year. My dad and I ran the same half marathon-it was his first one and now he’s done four total! My husband also ran it and PRed! It was a great experience!
my brother always makes the BEST irish soda bread! so delicious and can’t wait for it this year!
I’m doing the Shamrock Shuffle over here in Wisconsin! Can’t wait!
Favorite St. Patty’s Day tradition is for sure green beer with all my good friends 😀 Cannot go wrong with a few cold ones!! Green cupcakes or cookies wouldn’t be bad either!!!
I love corned beef on St. Patty’s day!
Hi Julie! New to (and love!) your blog!! 🙂 I am a Special Education Preschool teacher so my favorite St. Patty’s Day traditions are in my classroom! My kiddos LOVE making leprechaun traps the week leading up to the big day, and then on our magical day, the sneaky leprechaun destroys our classroom, pees in our toilet and sends the kids on a scavenger hunt where he leaves a good ole’ pot o’ gold! We also make shamrock shakes, rainbow crafts, and play a few games! 🙂
My absolute favorite thing to do on St. Patrick’s Day is to dye as much food as possible green! I think it makes for a fun day of eating. I remember as a kid my mom used to do the same thing and dyed our milk green once (which looks kind of gross…not going to lie) and it was so fun!
My fave food for St. Patricks Day is Irish Soda bread!!
Nothing better than green, shamrock-shaped pancakes on St.Patty’s Day!! … Well, maybe a matching BIC Band?! 😉
St. Patty’s Day is one of my favorites! I am part Irish so it’s a fun holiday to celebrate. My favorite St. Patrick’s Day food is definitely corned beef. I am not a fan of cabbage, but a corned beef sandwich with some hot mustard and horse raddish is delicious! I don’t really have a tradition except to have a green beer, but I would love to do a pub crawl for St. Patrick’s Day. The town I live in in California has one, so I just might have to sign up! I don’t have a bic band yet, but they sure do look awesome and would be great for my fly-away bangs!
I have a mint brownie recipe that really rocks. 🙂
Dark irish beer please!
I have always loved dressing up in a ton of green for St. Patrick’s Day! I would get so excited and go all out when I was younger!
Green beer is definietly my favorite memory of St. Patty’s day, I miss college!!!
Favorite St.Patty’s food: mcdonald’s shamrock milkshake!
My mom used to dye everything green on St Patricks Day when we were growing up. I mean everything. Milk, ice cubes, toilet water!
My favorite St. Patrick’s Day memory was last year as I ran my first half marathon with a college friend down in Virginia Beach. I was terrified at the start but running with a good friend and having all of my training pay off as I crossed the finish line certainly made it the best St. Patrick’s Day ever!
When my sister and I were little, our neighbors family and our family would do an outdoor scavenger hunt that a tricky little leprechaun had set up for us! Also, a yearly shamrock shake is a must.
After reading your blog for several months now, you have inspired me to sign up for my first 7K race for St. Patrick’s Day! It will be the Get Lucky! race in Minneapolis, MN. I’ve run three 5K races before but this will be my longest race to date. I’ve been diligently training since January. I hope to participate in my first half marathon next year… or maybe sooner!
I love to eat lucky charms and then later green beer on St. Patrick’s day and would love to finally get to try some Bic Bands!
st patricks day is a great excuse to make clover cookies and green cupcakes… any excuse to bake 🙂
My family has a huge St. Patrick’s day party every year. We have kegs of Harp, corned beef, and Irish Car Bombs… it’s a super fun party!!
Oh man. Corned beef sandwiches and cabbage for sure! Mmmm…I also find that I have to pinch at least twelve people because they don’t follow the dress code. 😛
My favorite things on St. Patty’s day are green mimosas and Irish soda bread!!!!!!!!!
I’m running in the LA Marathon on St. Patrick’s Day! Not specifically a St. Patty’s Day race, but that’s where I’ll be on that holiday! I REALLY hope I win this! I’ve been wanting to try a BICBand but haven’t gotten around to ordering!!
I’m all about corned beef on St. Patrick’s Day! So darn good!
One of my favorite memories would be one of my best friends getting married on St. Patrick’s day. She didn’t make it overly cliche, but she had some some touches that made the theme really cute 🙂 I’ll always think of her wedding day on St. Patty’s day!
Last year for St. Patricks Day, my husband was on deployment so I got together with a couple of the other Navy wives so we could do our own celebration. Any time our Husbands are away for fun Holidays, we make the most of it and celebrate in their honor 🙂 We started our day off with a local 5K race and went to the local downtown area for margaritas at a favorite Mexican restaurant..green margaritas of course! We ended the night with a fun dinner and enjoyed each other’s company. We wore green beads and our favorite green shirts to get in the spirit! This year my Husband will be home, so I’m looking forward to this St. Patty’s day as well!
i’m going to be crazy and do all 4 because St. Patty’s is my FAVORTIE holiday EVER because i’m irish and all and i got engaged in ireland….

my favorite st.patricks day inspired food is creme de menthe brownies…they are to die for!
I’m running a St. Patty’s day 5k with my sister-in-law – it’s my favorite St. Patrick’s Day tradition!
My favorite food on St. Patrick’s Day is boiled ham and cabbage!!! It’s actually my favorite meal that my mom makes, so I request it throughout the year, too 🙂
By far, one of my most favorite things to do on St. Patrick’s Day is to go to parades in the city! I live in New Orleans, and we’re always looking for a reason to celebrate. I love sipping on a beer dyed green, eating burgers, and catching cabbages with my friends and family. Tradition at it’s finest!
I absolutely love Shamrock shakes, green beer and pots of gold 🙂 The funniest St. Patty’s day memory was just last year – long story, but it involved my crazy kids, shamrock shakes and my best friend’s new house (http://sparksfamilylife.blogspot.com/2012/04/lot-of-fun-and-little-chaos.html). Hoping to win a gift certificate for a bic band – I haven’t found one single band that will stay on my head, other than the old school head bands with the teeth 🙂
This is the first time in 2 years I havent done a St Pattys day race! Last year my best friend and I did the DC RNR all gussied up in green – so much fun!
Every St. Patricks Day my friends and I throw on lots of green, grab some drinks and head down to the parade downtown. Afterwards nothing beats corned beef and cabbage dinner at my parents!
I may not like beer, but I still LOVE St. Patrick’s Day because it’s an excuse to eat my favorite meal- corned beef and cabbage.
Fav St. Patrick’s Day memory: going out with all my friends last year. Craziest night/weekend ahhaha
I like Irish soda bread! I made it myself last year and it was gooood.
My friends and I always go to the big St Patty’s Day parade in Dallas! It’s my favorite day of the year. It’s also my niece’s brithday, so it’s a special one for our whole fam!
I’m running a half marathon! I plan on wearing my new Shamrock Bic Band. Just arrived in the mail earlier this week 😉 Love those things!
Would it be boring if I said corned beef and cabbage with maybe some green beet on the side? I grew up in the Irish Channel in New Orleans and every year there is a big parade. Quelle fun!
Favourite thing to eat on St. Patty’s Day is a tough one because I definitely fall into the “overkill” camp. Think green smoothie, salads and tons of avocado! My favourite thing has to be green cupcakes that my college roommates and I made a couple years ago. They looked horrifying, but were possibly the best cupcakes of my life.
Corn beef & cabbage is my fav. Irish meal — my family used to make a treasure hunt and would use the clovers and clues!! The end would be a surprise (either chocolate or something small) — so cute though!
While I don’t have any traditions, I have a girlfriend who I went to a bar with last year on St. Patty’s Day. The bar was super fun and we had GREEN BEER! That was my personal favorite part. I’m looking forward to that again this year! 🙂
