Lunch today snuck up on me!
Before I knew it, my stomach was grumbling and I needed food!
Fact: This meal looks horrendous.
But lots of shredded cheese has a way of making me overlook an unattractive dish!
I began by sautéing a chopped chicken sausage in a skillet while I steamed some cauliflower in the microwave. I then added leftover roasted Brussels sprouts to the skillet, followed by the mashed steamed cauliflower and a boatload of shredded cheese.
Easy, satisfying, ugly and delicious!

More St. Patrick’s Day gear that caught my eye…
I saw a bunch of women wearing fun sparkly skirts over their leggings or compression shorts at the Women’s Half Marathon a few years ago and thought they looked awesome! (Bachelor fans, I think we know Tierra would be all about this one. Sparkle.)

I am running a Shamrock 10K on St. Patrick’s Day out in Oregon where I will be traveling this week!
St. Patrick’s Day marks me and my boyfriend’s anniversary from when we first became a couple! The memory of how sparks flew creates a lot of joy and this year marks 7 years!!
every St. Patrick’s day my family potlucks with as much green food as possible. one year someone made mac n’ cheese dyed green with food dye…..never again! we try to stick to natural greens these days. those who are not restricted by diets/lent/etc. then go out for our annual shamrock shake from McDonald’s – one of probably only two trips I take there in a year 😛
Growing up my mom always made corned beef and cabbage and chocolate shamrock cookies! 🙂
I’m an O’Malley and both my grandfathers immigrated from Ireland so growing up I always felt very special on St. Patrick’s day. I remember refusing to wear green in elementary school because “I was already Irish” :p
I will be working in a pediatric hospital on St Pattys Day.. which means lots of fun green scrubs/costumes!!

My favorite St. Patrick’s Day memory would have to be when my soon to be husband proposed nearly two years ago this year on the holiday! I was extra lucky that year 😉

I LOVE St. Patrick’s day, and though I’m embarrassed to admit it, I love green beer! There is something just so silly about every person in a bar either drinking a Guinness or a green cheap-o beer one day a year 🙂

My mom and dad’s birthdays are both on St. Patrick’s Day. I have a special memory of my family and my parents going out to dinner and celebrating there birthday and St. Patrick’s day. Green beer and corned beef of course were involved.
I love BIC Bands! I’ve been searching for a St. Patrick’s Day race in the area, but haven’t been able to find one, yet! And, of course, green beer will be consumed on that day!
I’m from Chicago so my memories from St. Patty’s day involve the green river! It’s a pretty amazing sight, and so festive.

I love St. Patrick’s day. Favorite one by far was last year… Headed to Savannah, GA for the St. Patty’s day parade/party. The most fun you can ever have!
A family tradition of ours is having cabbage, cornbeef and food coloring in the other sides or drinks!:)

When I was not a vegetarian, I LOVED corned beef and cabbage. Now, I just like to drink a lot of green river and I’ll eat cabbage sometimes. This year though, I bought St. Patrick’s Day themed raviolis from Sam’s Club! They are shaped like shamrocks and pots of gold. SO CUTE!

My husband proposed to me in the middle of the New Orleans St. Patrick’s Day parade. That was a decent memory!
Oh I’ve been meaning to get a bic band for a while! 🙂 I personally enjoy Deviled Eggs… which are not really st.patricks-y but we always end up having them!
My husband, baby girl, and I will be running a YMCA St. Patty’s Day 5k next weekend. We are part of Team Beef so will be running in our Team Beef shirts (our little 9 month old even has a Team Beef onesie!)
My family has Irish roots and we always have a St Paddys day feast and party. Last year my father came to the party straight from work. He showed up with flourescent green hair! His “usual” hair is white! He got his co-workers to help him apply it and then rode 1 hour on busy transit just to surprise everyone. My young nephews loved it-they thought their grandfather was so cool!
Fried pickles! Sounds crazy but the first time I tried them was St. Patrick’s day!

Last year on St. Pattys Day I ran a 5k with a friend of mine and PR’d. I was really excited and will always remember that race.

Favorite memory…A long time ago when I was probably in elementary school, St. Patrick’s Day fell on a Saturday…my sister and I were shopping all day with my mother…in and out of the car all day…well, she made us listen to some radio station that insisted on playing irish music…that whole day! At the time we weren’t pleased, but looking back on it now, it makes me smile.
So this is not a fond memory, but in 2nd grade on St. Patrick’s Day, I broke my arm at recess. I didn’t have green on except for a clover my mom pinned on my shirt. Everyone pinched me and said it didn’t count. Probably one of the worst days of my childhood!
My best friend’s birthday is the day before St. Patrick’s Day so we have tons of fun dressing up and celebrating. We’re in college so last year when we were living in the dorms her mom made a banana bread birthday cake (unfrosted) and mailed it to her. Upon it’s arrival, we covered it in green frosting, took it with us to the dining hall and had a blast singing and enjoying her birthday!
I love watching them dye the river green here in Chicago!

My favorite St. Patrick’s Day will actually be this year because our city has a huge parade and I will be in it with my sister! I am excited for that and obviously having some green beer and a corned beef sandwich!!!
My sister and I are running the Shamrock Shuffle 10K this year. I’ve done the 5K in the past, but we decided to up the antee! And with it being just 2 days before my birthday, I know it will be a fun-filled day!
I am running the Germantown half marathon this year on St. Patrick’s Day. I look forward to green beer afterwards!
My favorite St. Patrick’s Day memory is actually from high school. A friend of mine was having a St. Patrick’s Day party (completely legal, there was green koolaid) and we decided to randomly roam about our little hometown surprising our friends in the area with visits to spread “St. Patty’s Day cheer”. It was so silly but I miss simple fun like that, the kind that was free and didn’t involve a hangover ; )

I can’t wait for corned beef from the best sandwich place that are eee-normous and so good! I’m not aware of any St. Patty’s day races/runs in my area, but that sounds like it would be fun! (especially if it ended with a green beer) 🙂
