Wedding Golf Cart

Yesterday’s adventures in recipe development in the kitchen sure did make lunch today a breeze!

One of my freelance pieces had me working to create a recipe that screamed “Florida” and I ended up making a salad packed with fresh produce (Florida citrus + strawberries!) and a homemade honey citrus goat cheese dressing.

My goodness, it took a lot of self control not to lap up all of the remaining goat cheese dressing yesterday, but I’m glad I held off because it was fantastic to be able to enjoy it again this afternoon.

I didn’t take the time to make my salad look all fancy dancy like I did with the one I made and photographed yesterday, but it still tasted fantastic!

Today’s salad included arugula, spinach, shredded chicken, goat cheese, praline pecans, strawberries, a peeled clementine and fresh blueberries, all topped with my honey citrus goat cheese dressing. When the recipe for this dressing is published (unfortunately it’ll be a while, as it’s for a summer publication), I will definitely share it with you!

Wedding Golf Cart

This weekend Ryan and I are off to Amelia Island to celebrate our friend’s wedding on Sunday.

We’ve also been assigned an important task!

We’re decorating the wedding golf cart that is going to be driven by the bride and groom!

After lunch today I met up with Ryan to pick out a bunch of stuff at a local party store to outfit the golf cart.

We had a hard time resisting purchasing the following items to affix to their cart:

  • Bubble machine
  • Police lights
  • Thunder and lighting machine
  • Strobe light
  • Fog machine

I’m pretty sure their golf cart would’ve looked like a snazzy strip club on wheels if we could’ve outfitted it the way we wanted to in our minds.

Instead we selected traditional white décor, streamers and balloons. I suppose it will look a little more classy than the brothel cart we wanted to create, right?

    I LOVE clems and strawberries right now!!! Any salad with fruit in it is the best. Definitely screams Florida! That dressing sounds great too.

    I had a little Florida citrus in my salad too! Oh, and I’m sure the cart will be lovely… though I think the bubble machine would have been a nice touch 😉

    Oh man, I’m dying to know the dressing recipe because I love all things goat’s cheese. As for the golf cart, sounds like it’s going to be a tough one to beat with all of the fancy gadgets they’ve got! Have a ton of fun at the wedding and while decorating the cart 🙂

    Yay! I’m going to be just south of where you live (in Lecanto) visiting my in-laws this weekend- I can’t wait to get my hands on some fresh Florida citrus!
    Have you ever been to a Hydroponic Farm? My MIL goes to one all the time down there- I’m not exactly sure where it is.

    Hot damn, that salad sounds tasty. I love the addition of berries to salads. Makes them so much more fun and definitely ups the nutrition factos. How cool to be in charge of the wedding golf cart. That’s definitely not something very common out here in Oregon. More like the wedding umbrella and poncho 🙂

    Julie, you have to have to have to try Dannon Oikos Key Lime Pie Greek Yogurt! The flavor is to die for!

    My boyfriend and I are huge chobani fans and when we started seeing the commercials on TV with Uncle Jesse (ahem I mean John Stamos) I figured we should try it. The strawberry and blueberry are great, but the key lime pie literally tastes like the filling of a key lime pie! It is a MUST try!

    LOL – your list of decorations is too funny! “…a snazzy strip club on wheels,” I love it. Plus I’ve never even hears of a Thunder and lighting machine!
    The fog machine reminds me of one of my friends, in college he used to have “fog parties’ at his house which basically meant they’d set off 3 fog machines at once I’m his living room. It was hilarious and would get to the point where nobody could see a thing, and everyone would spill their beer and / or fall on the floor from laughing. The best was when someone brought ‘strawberry fog’ liquid for the machine. Classy! 😀

    Too funny! Unfortunately our brother-in-law would not allow anyone to TOUCH or put ANYTHING on his camero for he and my sister’s wedding. To ensure that we couldn’t decorate it they parked it at their wedding director’s house across the road where nobody knew it would be!! Otherwise it would have been quite like what you and Ryan had wanted 😉 hahaha
