Simple Cheesy Salsa

I’m so glad you guys are excited about the new Circuit Workouts page! Hopefully it will make navigating this blog a little easier for those of you who are constantly looking for some super-sweaty workouts! I ate my afternoon snack rather late today, so I wasn’t super hungry when our typical dinner time rolled around and opted to catch up with Ryan over a yummy appetizer before we got to work in the kitchen to make our main meal. We made a delicious simple cheesy salsa dip using several wedges of the Queso Fresco & Chipotle cheese wedges that the kind people from The Laughing Cow sent me to sample.

The cheese wedges were sent along with a recipe card for The Laughing Cow Simple Cheesy Salsa that we followed to make the dip.

The Laughing Cow Simple Cheesy Salsa

  • Makes four servings

Ingredients

  • 4 wedges of The Laughing Cow Light Queso Fresco & Chipotle Cheese
  • 1 cup salsa

Directions

  1. Unwrap The Laughing Cow cheese wedges and place them in a small bowl. Microwave for approximately 30 seconds and stir. Cheese should be warm and melted.
  2. Add salsa to cheese and stir. Enjoy with your favorite tortilla chips.

Nutritional information (per serving): 49 calories, 2g fat, 408 sodium, 5g carbohydrates, 1g fiber, 1g sugar, 3g protein

That dip practically flew out of the bowl and neither of us were all that hungry. I think chips and dip are like ice cream to me… I always have room for more!

Dinner

Dinner tonight came together quickly as nearly all pasta dinners around here tend to do.

In my bowl:

  • Whole grain rotini pasta tossed in olive oil
  • Apple chicken sausage
  • Steamed broccoli
  • Mozzarella cheese

Such a good dinner!

I thought I would miss topping my pasta with marinara since I’m a red sauce girl through and through, but the olive oil and mozzarella cheese added plenty of flavor and omitted the need for a sauce.

Off to dive into a new book!

Anyone else read Wither? It was highly recommended to me by a friend and Lisa gave it a glowing review, so I have high hopes!

    I think most of us are that way with chips and dip … it’s so hard to stop. Ever have the chips and salsa at Chili’s? Their chips are so thin, that I end up eating about 10x more than I normally would! So yummy! 🙂

    I could eat like a half gallon of chile con queso and still have room! It’s the most addictive thing ever. That recipe looks pretty easy, I may have to give it a try for when I need a quick chile con queso fix!

    That laughing cow cheese is my favorite! Sooo yummy… I love it with pretzel chips. Heaven. I’ll have to try it with the salsa though. That.looked.delicious.

    I really enjoyed the book Wither and also the sequel Fever. They were recommended on Amazon after I got Divergent when you wrote about it. You might also like Matched by Ally Condie and Delirium by Lauren Oliver. Both have a similar feel to them.

    Mmmm, now I want cheese and salsa! Have you tried mixing salsa with plain greek yogurt for dip?? Soooo yummy too! 🙂

    That cheese and salsa combination looks and sounds amazing! Is that cheese currently out in stores? I must try this. I had my family’s homemade salsa TWICE yesterday so I am most definitely on the salsa kick… Must. Try. Now!

    Have you read The Lone Wolf by Jodi Piccoult? I recieed a signed copy yesterday in the mail from a former college roommate and we are going to start a “book club by distance” and read it together. Just wondering if you’ve heard anything about the book yet…

    Loved Wither! I just read the second book and it created more questions than answers so I’m excited for the 3rd book. Have you read Poison Study by Maria Snyder? It’s an easy read but completely absorbing and really well written. I read Poison Study and then immediately began to read everything she’s ever written.

    I love Laughing Cow! I will definitely try this! Last night I made a Quinoa Salsa bowl with Quinoa, Salasa (duh), Light Sour Cream, FF Cheese and chopped cilantro. It was Awesome!! Im wondering how that Laughing Cow Chipotle flavor would do melted into Quinoa. Definitely doing this!
