The Gospel According to Scrooge

This evening was quite festive!

A few weeks ago, I saw a flier around town for The Gospel According to Scrooge, a musical that is performed every year at a nearby church that opens its doors to the community to enjoy the production for free.

Ryan and I headed out to see the musical after dinner and apparently we weren’t the only ones who waited until the last night of the production to enjoy the show.

It was a full house. Even the balcony seating was packed!

The show itself was entertaining and a great reminder of the meaning of Christmas, the reason for the season and the importance of giving.

Ryan and I also got a kick out of the fact that I selected a seat behind a woman with a serious beehive who somehow moved her head every way I moved mine, blocking my view time and time again. It was lovely.

Apparently the musical is a community tradition and this was its 25th year in production. There were people seated near us who had not missed a single one since it debuted!

Dinner

Before we headed out for the evening, we ate a yummy dinner at home.

I put in a little extra effort to incorporate vegetables into our dinner, but made sure to disguise them a bit since our relationship is a little rocky at the moment.

In a loaf pan, I combined the following:

  • 1/2 onion, chopped
  • 1 extra large sweet potato, chopped
  • 2 chicken breasts, chopped
  • 3/4 can mild enchilada sauce
  • 1/2 cup shredded cheese
  • 1/2 cup cream cheese

I stirred everything up and baked it at 400 degrees for approximately an hour, stirring every 20 minutes. I then topped it with more shredded cheese before serving.

Totally random, but 100 percent delicious! This was one of those “cross your fingers while you’re making it” dinners that fortunately turned out really well. 

The cheeses and enchilada sauce paired together perfectly and created a creamy sauce that I slurped up like it was cool.

And now I say good night and leave you with cookies for sweet dreams!

    I LOVE vanilla almond cookies! My boyfriend’s Oma who is straight from Austria makes them every year for Christmas and I swear I ate 20 last year. Whoops.

    What an awesome idea for a play! Have you heard the song on youtube called The Christmas Rush? Its a great song about people remembering the important things at Christmas. Its also super catchy! I’ve had it on repeat all day!

    I was at a Christmas concert tonight and I was stuck behind a man with no hair but an extremely long neck who was blocking my view. And I’m tall! Annooooooying.

    i HATE when the person in front of my shifts just as i get a sight-line (i’m 5’4″ and more legs than torso so it isn’t hard to block me). and then i feel bad b/c i imagine it setting off a domino effect when i move too!! def more noticeable these days when movies often are stadium-style but local things are not.

    I LOVE Christmas anything – especially plays and musicals! Mike and I just went to a harpist and vocal jazz ensemble Christmas concert and had a great time! Glad you guys enjoyed it!.

    I hate to be picky but I was really excited to see the first cookies were gluten free since my boyfriend and I try to eat gluten free majority of the time. But when I clicked on the link the recipe still calls for flour???? I don’t know if these got confused with another cookie but be careful with calling them gluten free since some people (with severe gluten/wheat allergies) could eat them and suffer major consequences! Thanks for the cookie recipe links though – keep em coming!!

    I look forward to the cookie roundup you do everyday and as someone who is allergic to gluten I was excited to see a gluten-free cookie featured today. I clicked on the recipe and wanted to let you know the cookies are not gluten free, because they contain flour. The flour could easily be substituted for a gluten-free flour mix to make them gluten free 🙂 Also, I made your peppermint bark and my coworkers and boyfriend loved it – thanks!!

    Every single time I go to a festival that is outdoors, there is always someone with a large afro that stands in front of me. It means even my friends dont want to stand near me haha just incase their view gets blocked as well
