Part One, Part Two

Hey, hey, hey! What’s cookin’?

I hope all is well wherever you may be today! This week is absolutely flying by for me and I’m definitely not complaining because a fun weekend awaits!

Today began with a berry smoothie that I made with a mix of frozen blackberries, blueberries and strawberries blended together with fresh spinach, almond butter, almond milk and Greek yogurt.

We’ll call this smoothie Breakfast: Part One since I didn’t make Part Two until after I arrived back home from teaching my Thursday morning Spinning class.

Breakfast: Part Two was much warmer than Part One and included a hot bowl of scrambled eggs (2 whole eggs + a splash of egg whites from the carton) made with Laughing Cow creamy Swiss cheese wedges.

I’m not sure what it is about them, but cheesy scrambled eggs are quickly becoming my latest obsession. I can’t get enough and have also been loving them as an afternoon snack (paired with an apple or banana) on days when I am home from the gym.

After my second breakfast, I showered and worked on the computer until it was time to teach today’s boot camp class. I took the class through the Legs + Arms + Abs Boot Camp Workout I shared on the blog this morning and it went over well!

When my boot camp class was over, I chatted with some folks at the gym for a while before I had to head out for my lunch break. I had plans to meet up with my Girls On The Run co-coaches for sushi at eeZ!

Our spring season kicks off on Tuesday and we wanted to meet up to discuss a bunch of things before everything begins. I left my camera in my purse during lunch because we were in planning mode (and, truthfully, I just felt weird busting it out), but managed to take it out to snap a pic of the fro yo I grabbed before hopping in my car and heading home.

Yes, there is some frozen yogurt under all those toppings, I promise. And TCBY, I love you for offering Lucky Charms as a topping option. Awesome.

I have the rest of the day off from the gym, so I’m planning to catch up on emails, hop on a conference call and begin writing your usual Things I’m Loving Friday post so I can get it up before 9 a.m. since I have two early classes to each in the morning. Then it’s off to a few local grocery stores to put in some food donation requests for a Girls On The Run event later this month.

    I sometimes have a hard time getting my laughing cow wedges to melt in my eggs? Do you have any suggestions?

      Yes!!! Okay, this is going to sound so weird, but I’ve tried a few different ways and now I always do this: I break up the wedges into smaller chunks and put them at the bottom of the bowl. I then top them with the HOT scrambled eggs and let them sit for a few seconds before stirring everything up repeatedly. When I used to mix the cheese right into the eggs as they were cooking, I felt like it didn’t hold the flavor nearly as well, but when I toss the eggs in the cheese after cooking, it melts and the eggs get so yummy and cheesy! (I feel kind of ridiculous for writing back such a long comment about cheese, but I am LOVING these cheesy eggs so much lately! Ha!)

    I wish it weren’t so cold and snowy up here in Portland, Maine – I’m too cold for froyo and smoothies despite my need and desire to celebrate national froyo day tomorrow! We have at least 6 feet of snow, no exaggeration. I can’t wait for it to warm up again here so I can comfortably enjoy my morning smoothies!!

    OMG….your frozen yogurt is making me SO hungry. I had a TERRIBLE lunch (might have involved fast food…I know, I know) and of course it didn’t fill me up at all so now I’m sitting at my computer at work, stomach grumbling, and wanting Sweet Frog so bad lol.

    Oh I am a huge eggs and cheese fan! Having it as an afternoon snack I haven’t done though, I can see it becoming part of my routine for sure!

    Your one busy girl! Do you usually do the bootcamp class with the class n then count it as your own workout? Scrambled eggs are amazing..though I’m on a deviled egg kick this week!

    The breakfast smoothie sounds delish! I actually have a bag of mixed berries, peanut butter, almond milk, and yogurt here at the office–all I need is some spinach and I think I know what my breakfast will be tomorrow! 😉 I feel you on the scrambled egg and cheese kick, we are on the same page! Now you have me craving some frozen yogurt, haha…looks good!

    What is frozen yogurt with out all the toppings? No thanks! For your smoothies, do you generally buy, wash, and freeze your own fresh fruit or just buy the already frozen bags? I usually go the pre-frozen route…it’s easier on my wallet. 🙂

    You are seriously the most organized, motivated, volunteer-oriented woman in the world. I do not know how you are so busy all the time. I would be stressed out. If I had half of your will power, maybe I could get my stuff done. But instead of working on my To-Do list, I am reading Harry Potter. Sigh…You go girl. Seriously.

    I have never been a huge fan of smoothies, but yours always look so good! Maybe I just suck at making them LOL

    I had scrambled eggs with feta, kale and salsa for dinner – delicious! The cheesy eggs kook extra yummy!!! I am also on a smoothie kick right now. I’d love to see more of your favorite recipes!
