Back from the Beach

Good Monday morning! It is a good one, right?

Mondays have never bothered me as much as Tuesdays. I feel like Mondays pass by in a blur and Tuesdays draaag. So tomorrow is gonna be horrible, but today should be great. Good news!!

I hope all of you had wonderful weekend. In case you are like me and tend to not read blogs much on the weekends, I headed to Jacksonville for a weekend at the beach with Ryan, my sister and her boyfriend.

It was a laid back weekend, but one of the best weekends of the summer so far thanks to a perfectly sunny day at the beach on Saturday and good times with some of my favorite peoples in the world. I want to go back!

Workout

Today’s workout was rather sluggish. I slept like a rock last night after two nights of less-than-stellar sleep this weekend. Had it not been for Ryan getting up and getting dressed for the gym at 5 a.m., I definitely would’ve kept sleeping.

Even a sluggish workout has a way of making me feel more energized and I left the gym wide awake and ready to tackle the day.

My workout began with 20 minutes on the elliptical before I completed a leg workout that included the following exercises:

  • Squats
  • Deadlifts
  • Step ups
  • Lunges
  • Hamstring ball curls

Breakfast

Breakfast this morning included scrambled eggs with broccoli, onion and shredded mozzarella cheese, served with a toasted whole wheat English muffin.

Rather basic, but rather tasty, too!

Just for fun…

  • What was the best thing you ate all weekend?

I’d have to go with the cannoli dessert I shared on Saturday night. Something sweet will almost always win top prize for this girl.

    That sounds like such a fun weekend – even despite the lack of sleep! You guys are so lucky to have a proper beach nearby. The best thing I ate all weekend was definitely my strawberry rhubarb frozen yogurt, and I reposted the recipe today with new photos! bit.ly/OIBr28 (It uses that whole stewed rhubarb technique I was telling you about last week). Super easy and delicious!

    The best thing i ate was a handful (or a whole bag) of mini oreos. So bad, but oh so good. BTW, birthday cake oreos are FABULOUS. But i cannot find them anywhere anymore!

    We went to Graffiato for my brother’s 30th birthday on Saturday night (it’s a DC restaurant, owned by Mike Isabella from Top Chef!) We had some amazing food, but the pizza my dad ordered took the prize: pork, broccoli rabe, and cheese. SO GOOD.

    TOTALLY feel you about Mondays v Tuesdays…Mondays always fly by at work because I’m playing catch up and the day also tends to be so busy. Tuesdays, on the other hand, kill me slowly every week haha (dramatic much ;)!

    Totally with you on the Tuesday thing, have always hated them, not quite half way through the week, always drag! I made a banana and chocolate vegan crepe; a new vegan chocolate sauce which I can’t wait to share, it was incredible! What about you?

    I had a great beach weekend too! The best thing I ate was brioche french toast at this little breakfast place at the Cape on Sunday – yum!

    GLUTEN FREE PANCAKES!!! It was my first time getting GF pancakes in a restaurant it was so much fun to not have to make them myself!

    I ran the SC Peach Festival 5k on Saturday. I addition to bagels and bananas at the finish, there were PEACHES! It is just the beginning of the season for them in the Carolinas and the timing couldn’t have been sweeter! Yum!

    the best thing inatenthis weekend was Rellenitos de Platano. A very typical meal from Guatemala. they are so good. Boiled platanos. cooked down and then mashed up into a consistrncy similarbto mashed potatoes. Then.with refried black beans. kind of like a tamal. platanos. then a dollop of black beans. roll them up and quick fried. Then the good part. Fresh cream over them. some fresh squeezed lime. So very good and reminds me of home! Enjoy this day!

    I love beach weekends!
    I just got back from spending two weeks in Peru and it was a non-stop eating fest – such amazing food! The last meal my friend and I had there was a potato salad (layers of potatoes, avocado and chicken), ceviche (fish “cooked” in lime), aji de gallina (chicken dish), and picarones (like a doughnut made with sweet potato and pumpkin).
    We were in food comas. Best. Trip. Ever. Macchu Pichu was pretty nice as well. *S*

    Best meal this weekend?! Dinner at VaBene, a local Italian restaurant. I had a pesto frutti di mare, which is sautéed shrimp and scallops with a creamy house-made sundried tomato pesto sauce with penne pasta. End the night with mango gelato!

    Hands down the swordfish salad with pineapple mango salsa I got for lunch at a great restaurant in Provincetown, MA by the beach. So delish!

    It’s a cross between the Asiago Breakfast Sandwich from Panera/St. Louis Bread Co on Saturday morning or the Prime Chophouse burger from Red Robin. So gooey and cheesy and onion-y. Actually, the Chophouse Burger probably wins by a landslide. 😉

    Hands down, the best thing I had this weekend was falafel! I had never had it before and we went to a place that had amazing food. Homemade falafel, hummus, tabbouleh, pita-yum!

    best thing i ate all weekend was homemade tacos! i love taco night – so many fun toppings means so much variety. plus i love making homemade salsa, so these were easily the best part of my weekend. and i am still eating all the leftover salsa – in salads, with eggs…the gift that keeps on giving!

    I totally agree with you on the Tuesday thing! Mondays are really NOT that bad! I actually have a full post about this on my blog hahah.

    The best thing I ate this weekend was an “artisan” pizza I had on Friday night.. well, actually bits of two. One was a super crunchy ‘folded’ pizza with Parmesan, arugula & prosciutto; the other was a white pizza with potato & rosemary. MM MMM good. Have a great start to the week :)!

    Nathan and I went to Seasons 52.. if you have one near you, find it and go! Their menu is updated weekly based on the ingredients that are fresh at that time.

    I had an amazing delicious salad with grilled salmon and a watermelon refresher cocktail. Nathan had a super fresh roma tomato and cheese flatbread.

    But the kicker were the mini desserts. Chocolate peanut butter mousse for me and mocha macchiato for him. (I totally won on the deliciousness scale for dessert!)

    I went to trader joes and got goat cheddar cheese it is so good! I ate it on top of Mary’s gone crackers and alson on top of dates for a snack. I also had a dinner which was inspired by you..I had goat cheese and fig filled ravioli topped with chicken sausage spinach and red sauce. I bought a snack from trader joes that was so delish – lightly salted bagged green beans…they are like having chips they are dehydrated and crunchy so good! I also tried almond butter on top of Mary’s gone crackers with drizzle of honey so good… I tried a lot of diff snack options this weekend yum!

    My husband stayed at a B&b this weekend and we had fresh farm stand fruit, homemade cranberry scones and zucchini quiche made by the innkeeper – local ingredients used for all the dishes. Amazing!

    The best thing I ate was a massive grilled chicken and veggie sandwich, literally the size of my head, from Bath in England. (studying abroad). It was loaded with veggies so I just took the bread off and had a nice little yummy salad. It is hard to track down plain veggies without any yucky oily sauce stuff. It was beautiful!

    The best thing this weekend? Chocolate lavender cupcakes at my friend’s birthday party. Thick, fudgy cupcakes with lavender infused frosting. Good thing I lack baking skills, or I would end up making them and eating nothing else.

    Ok, now I’m motivated to work out. I wasn’t going to, but your leg workout sounds like a good idea now …

    What a great weekend!
    The best thing was definitely fro yo at a self serve bar. It was the first time my little nephew, almost one now, tasted it, and we couldn’t feed it to him fast enough! 🙂

    It looks like you had such a blast with your sis and her bf- how fun that you guys all get along so well! I’m sure it was hard to come back to reality! The best thing that I ate this weekend was part of an almond croissant from La Boulange… it was tasty!
