Breakfast Mistake

It’s Mondaaay!

Aren’t you psyched!?

Hopefully you’re coming off a great weekend filled with love and chocolate. Our Valentine’s Day was low key and fabulous. Ryan and I had a great weekend at home in Ocala together and filled our time with hiking, pizza, a date night and a movie at home.

On Saturday evening, our date night took us to the Blue Wagyu and Ryan and I ordered salads to start and shared a Devil’s Rope pizza that was fantastic. If you enjoy making homemade pizza (I will often make pizza on a pita or flatbread), here’s a combination you must try: Olive Oil + Shaved Parmesan + Arugula + Oven Roasted Plum Tomatoes + Balsamic Reduction. YUM. Making homemade balsamic reduction is now on my “must do” list!

Workout

This morning, I woke up unsure of what I wanted to do at the gym. Whenever I am not feeling particularly inspired, I will pop into a group exercise class and decided to take a 5:15 a.m. spin class this morning.

We had a great ride thanks to upbeat music (the instructor played a techno Whitney Houston song which is right up my alley) and when I finished, my blonde hair looked brunette because of all the sweat. That’s what I call success, my friends!

Breakfast

Breakfast this morning was a delicious mistake.

I made a smoothie by combining the following:

  • 1 cup frozen strawberries
  • 1 1/2 frozen bananas
  • 1 tablespoon almond butter
  • 1 scoop vanilla protein powder
  • Enough coconut milk to get everything moving

Strawberry Coconut Almond Butter Smoothie

It was delicious but a mistake of a breakfast because now I am quite chilly! Time to brew a cup of coffee to take with me to work!

  • What was the best thing you ate this weekend?

    I made a Berry Banana Mango smoothie & it was so yummy! It’s 85 in Arizona right now. It’s ridiculously hot for this time of year, breaking record highs. I even had to turn on the a/c this weekend. It’s crazy hot! Of course, I had to make something to cool off. I never made a smoothie before in my life. This was my first time. It was so good! Recipe post will be up this week.

    I actually found your recipe for curried chicken and lentils on Pinterest and made that for a potluck at church. I also added some frozen kale to the mixture. It was fabulous. And there is leftovers for lunch today 🙂

    That sounds delicious! I made a vanilla protein and strawberry smoothie for breakfast today. I added coffee to it, which sounds like it would be weird, but was actually really, really good. It tasted like a Starbucks Vanilla Frappuccino with just a hint of strawberry.

    I absolutely love pizza! It’s my favorite food ever, but it isn’t all that healthy, so I like to make my own on flat breads or gluten free tortillas too. This way I can make it healthier and control what’s going on it. Your version sounds great!

    That pizza sounds so good! The best thing I ate this weekend was the broccoli, red onion, and spinach omelette with hash browns I had at brunch on Saturday! It tasted extra good because I was there with my best friend who I haven’t seen since November!

    Lol you and me both on the breakfast mistake! I just finished off a huge green smoothie and now I’m so cold that I’m gulping back tea while trying not to burn my tongue lol! But it’s not the first time I’ve done this – I’m SO addicted to my smoothies post-workout so I often drink them under a blanket with the smoothie glass in one hand and a cup of tea in the other! 🙂

    Believe it or not, I’ve never tried a spin class before, but they always sound super fun! I’ll definitely have to try out a class one day. And your smoothie looks delicious! I haven’t made one all winter for obvious reasons, so I’m excited for it start warming up around here!
    The best thing I ate this weekend: almond French toast with Greek yogurt, peanut butter, maple syrup, and seared bananas! It was a fabulous valentines day breakfast.

    Definitely thought breakfast was going to be a disaster! 🙂 Wish we had spin that early here! I do the 7am on mid week and the others aren’t until 9.30, same with all classes. LOVE spin…guaranteed to leave super sweaty!

    The best thing I ate this weekend was a home cooked Valentines Day dinner by my husband, fettuccine alfredo with champagne/strawberries followed by Swedish fish and popcorn for dessert all my favs!!! I love love!

    My favorite thing that I ate this weekend was a vegan pot pie from this veg restaurant in Raleigh, followed by this amazing mozzarella and basil pasta I had in a Trattoria in Durham. I got so lucky in food this weekend!

    You mentioned in a previous post that you and Ryan were looking for a different protein powder to try, as you didn’t really care for the ingredient list in the one you were using. Did you ever find a new one? If so, do you like it? I’m thinking I should start drinking a small protein shake after my workouts, with dinner, to facilitate muscle repair after strength training and I’m curious to see which powders people recommend.

    I did that after my long run yesterday. It was only 25 degrees out during my run, so I was frozen when I got home (felt great while I was running, but when you stop moving…..) but I wanted a smoothie!! I took a steaming hot shower, layered up, and made it anyways. I’ve been loving coconut, pineapple and banana smoothies!

    I always end up cold after meals, and I have no doubt that smoothie would leave me freezing! But, it looks worth it! Glad you and Ryan had a great V-Day! Low key is the best.

    My boyfriend cooked steak fajitas and tortilla soup Friday night for Valentine’s Day, it was delicious. I also brought a Chantilly cake from Fresh Market to him and his co-workers yesterday, since they had to work the weekend in the ER. I was able to steal a slice before leaving and it was delicious…as always.

    I looove delicious breakfast mistakes! Yesterday I learned that I can slice teeny tiny sweet potato slices with my new food processor and had teeny tiny sweet potato slices along with my breakfast this morning. Delicious!

    The best thing I ate this weekend was a homemade rice and beans, with a delicious salad, and a smoothie made of oatmeal, chocolate, peanut butter, almond milk, chia seeds, flaxseed, and coconut flakes 😀

    That shake looks pretty darn good. Anything with strawberries is my favorite. The healthiest thing I ate this weekend was an egg ham and cheese sandwich. Not the healthiest thing but I was really craving one. I slipped this weekend. Bouncing back today with making that shake!

    I totally made a mistake this morning too and I was just thinking about it as I checked out your blog. My mistake, which unfortunately is a frequent one, is I didn’t eat enough. I’m never that hungry in the morning so I eat something light and then two hours later I’m starving. I also fail miserably at packing snacks with me. Luckily, lunch is just around the corner 🙂 Happy Monday!

    Spin class usually leads to sweaty success for me too! The best thing I ate this weekend wasn’t a food, but it was a great local beer I had on Saturday. Super fresh, right at the brewery 🙂

    I ate a delicious pasta salad with bow tie paste, tomatoes, spinach, feta cheese, and a simple olive oil and vinegar dressing. It’s a toss up between that and the coffee chocolate truffles I also had.

    I feel like when it comes to spin class, it’s all about the music! If the music is off, I’m totally not into it.

    I could maybe have a smoothie today because it’s actually going to be in the FIFTIES here in Nebraska 🙂

    As for the best thing I ate this weekend, on V-Day i had some delicious homemade fries at a restaurant. To me, there is nothing like fresh cut, warm, salty fries. The ketchup was homemade too!

    The best thing I ate were these dark chocolate sea salted caramel chocolates that I snagged from the Valentine’s candy heart I bought Keith. They were incredible! Keith promptly decided he was enacting a no sharing rule after we both tried one! HA! 🙂

    My brother actually invited me over to his place on Saturday and cooked me and his girlfriend some DELICIOUS FOOD! Grilled salmon, bell pepper salad, grilled onions and sausage, mashed potatoes, etc. It was a feast and my tummy was VERY VERY happy! 🙂

    A sweaty spin class sounds so fun! I love the group fitness atmosphere–esp on mondays. Which is why I love teaching it 😉
