Broccoli Beet-Tastic Chicken Salad

Oh leftovers, how I love you.

Today my lunch included pulled chicken leftover from last night’s dinner.

I was going to make a simple chicken salad sandwich, but I decided to add a little oomph with fresh veggies.

I bring you broccoli beet-tastic chicken salad!

Revitalized Chicken Salad

Beet-Tastic

My salad included:

  • 3 oz. shredded chicken breast
  • 100 grams broccoli
  • 2 tbsp. Miracle Whip Light
  • 1.5 tbsp. dijon mustard
  • 50 grams canned beets
  • 50 grams sweet corn

I shook it up to cover the chicken and veggies in the “dressing.”

Hump Day Lunch

For dessert I had banana yogurt pudding which I made by stirring a large spoonful of instant banana pudding mix into a cup of Greek yogurt.

If you haven’t tried yogurt pudding yet, you must. It’s so thick and creamy and reminds me of custard.

More Tips for Gettin’ Him to the Gym

You guys had some great ideas for getting your partner to the gym, so I wanted to share a few more straight from you!

  • Encourage your guy to workout with his friends. Many guys enjoy playing sports with their buddies and thrive on competition.
  • Continue with your own dedication to fitness. It may take some time to rub off on your partner.
  • Take your guy to a group exercise class that you’ve scoped out beforehand. This way you can see whether or not there are other guys in the class and make sure that the music isn’t too girly so he won’t feel like he’s in a girly class.
  • Don’t make the gym the only option. Exercise can occur outside, in the home or with a friend.
  • Offer to create a workout plan for him. Some people are intimidated by working out and don’t know where to begin or what exercises to do.

    I LOVE your idea of yogurt pudding! That sounds delicious! Do you usually use regular pudding mix, or sugar-free?

    I love leftovers! I always throw whatever meat and veggies we have from the night before on a salad to take to work. YUM!

    Great tips for getting guys to the gym. My Husband has to work out at least 3 times a week due to group exercise in The Navy, but he stays pretty active at home too. Now that we’re building our home gym we work out together 3 evenings a week when the kids go to bed. It’s fun!

    Yayy I love Tupperwards salads, it’s the only way to get the dressing on there evenly. I never would have thought to add beets to that salad, but they’re delicious- definitely an underrated vegetable!

    Great tips for getting guys to the gym!! I know my brother’s fiance could definitely use those ideas 🙂

    I think it’s important to not even refer to it as working out, my partner and I go for bike rides, rollerblades and park adventures all the time – we call it “playing outside”. “Do you want to go play outside?!” is best when heart on a sunny afternoon!

    Also, that salad looks wonderful. I must remember to use dijon mustard as a dressing and not just a spread!

    Yummy lunch. Julie i’m sure you are amazing at your job but have you ever thought of opening a restaurant, cafe, deli of some sort? or at least write a cookbook?
    You are amazing at coming up with delicious, different, fun, healthy meals 🙂

      i honestly don’t think of myself as a great cook or anything, as i don’t have any amazing culinary skills or training! i just really love combining foods i enjoy into various meals… very simplistic meals!! writing a cookbook would be a wonderful dream! 🙂

    What a delicious looking chicken salad!! I love making chicken, tuna, and egg salads, especially in the spring/summer. I’ll have to give this recipe a try!!

    You should try greek yogurt mixed with Chocolate PB2 (powdered peanut butter). It tastes like chocolate/peanut butter mousse. Soooo good, and healthy too. I don’t like the PB2 mixed with water (I like real Peanut Butter!), but I love it mixed in my greek yogurt.

    I love mixing Protein powder into greek yogurt too for some different flavors!

    Hey Jules!
    I was just wondering how you incorporate fat into your meals. Like you, I tend to eat a lot of low fat foods, but lately I’ve been trying to incorporate more healthy fats into my diet. Have you thought of adding nuts, seeds, etc. to your breakfasts and lunches? They are so good for you and I’ve discovered that they really help keep me satisfied! 🙂

      i get my fats by cooking w/ olive oil (i toss my veggies in a bit of olive oil before roasting), eating lots of peanut butter fingers (my fav!) and snacking on nuts throughout the day. i agree that fats are filling!
