Tuesday Lunch

Today’s mid-day meal included a big ol’ salad, composed of:

  • Butter lettuce
  • Celery
  • Tomatoes
  • Carrots
  • Leftover sausage
  • Balsamic vinaigrette dressing

A cup of plain Greek yogurt with a scoop of grape jelly rounded out my meal.

    I would love to use chia seeds in the oatmeal and with granola. PS had a bagel thin today- and LOVE it. had it as an egg sandwich but love the cheese and jelly combo that you always eat!

    Definitely would like to try them in overnight oats and perhaps to thicken up my morning green smoothies. It’s disappointing when I can’t eat my smoothies with a spoon because I added in a little too much water.

    I would love to try chia seeds in baked goods. I’ve created some of my own “healthified” versions of recipes for muffins and cookies, and I’ve read that “chia gel” can be substituted for butter/oil!

    I’d love to try them in overnight oats! I’ve tried overnight oats before, but they didn’t turn out so well, thanks to the lack of chia seeds. However, I use chia seeds in my hot oatmeal every morning, and love them to death!

    I gave up chocolate for lent so a chocolate chia seed pudding seems like a great way to break lent on Easter!

    I’m a little jealous of your salad…I can’t wait until I can get my hands on a decent tomato!

    I’d like to try some chia seeds–the big bags can be kind of expensive and I don’t want to pay for the whole thing until I’m sure I’m going to use them!!

    My dad first introduced me to chia seeds when he started adding them into our protein shakes, but I would like to try them in chia pudding and in oatmeal! I like that you take advantage of their texture in all of your meals!

    I think the Chia seeds would be great in my salads. I also might try them in my protien balls – PB, honey, oats, a few choc chips.

    I’ve actually never tried chia seeds, but I read about you loving them all the time, and definitely want to give them a shot! I think I might try some overnight oats 🙂

    In baking! I looove baking and love trying new recipes to give to my family and friends. Since summer is coming up so rapidly (yikes!) it’s time to get some healthy foods on the schedule to get ready for bathing suit season!!

    I used to make my overnight oats sans Chia seeds until I FINALLY found them at Whole Foods (which cost an arm and a leg for such a tiny amount). But it was TOTALLY worth it – I love the texture it gives, ESP to the overnight oats.

    I think I’d be like you and use them on just about everything! I’ve never tried them before but I guarantee that a bag that big won’t last long in my house.

    I’ve become obsessed with chocolate overnight oats and chia seeds have become an integral part of them. Once I tried them I’ve never looked back!

    On top of a big huge salad with BUTTER LETTUCE like yours. it’s my favorite and I love, love, love adding crunch to my salads 🙂
