Tuesday Lunch

Today’s mid-day meal included a big ol’ salad, composed of:

  • Butter lettuce
  • Celery
  • Tomatoes
  • Carrots
  • Leftover sausage
  • Balsamic vinaigrette dressing

A cup of plain Greek yogurt with a scoop of grape jelly rounded out my meal.

    this is a perfect giveaway because I have never tried chia seeds! I am probably the only foodie blogger that hasn’t 😛 They’ve just always seemed a bit pricy!

    I would love to try them in oatmeal and sprinkled on pb and banana 🙂

    I am actually a college student and eat hot oats most mornings, but am really interested/ excited to try cold overnight oats this summer when the weather gets nicer….the addition of chia seeds to my overnight oats would be amazing, also I liked your suggestion to put them in salads, add a little crunch and some extra health benefits to lunch or dinner could also be extremely beneficial to my diet!

    love your blog so much and want to thank you for helping me get though an eating disorder because of your balance and positivity in your relationship with exercise and food!

    I’ve been reading about the delicious benefits of chia seeds on blogs like yours for months now and am still yet to try them!! i know having a big bag like that would push me to finally get my butt in gear and start MAKING overnight oats and smoothies instead of reading about (and drooling over) them.

    I’ve never tried Chia Seeds! I heard they work great in home made “bubble Teas” I would love to try them for that!

    Speaking of, I tried your cinnamon raisin bagel thin topped with pb and bananas and it was to die for! I can’t wait to have another one tomorrow, haha.

    I would love to use some chia seeds on those over night oats! That looks delicious!! I also would like to try and bake them into a lemon cake. I think the texture would be fabulous!! P.s. I has a muenster cheese and jelly bagel-wich for lunch today…thanks for the tip! 🙂

    I never knew about chia seeds until i started reading your blog! You have some great marketing skills :)Needless to say, I saw them when I made a recent trip to whole foods and I decided to snag a bag. I’m in love! I actually just made a smoothie with chia seeds in it and it was delicious and filling. Next time I think i’ll try them in overnight oats… Yay chia!!

    I actually only tried chia seeds for the first time about a month ago, but like you, I’m now hooked! Although they’re great in overnight oats or as chia pudding, I’d say my favorite way to enjoy their ‘crunch’ is sprinkled on some chewy bread with nut butter, banana, and granola!

    I’ve never tried chia seeds before, but they look fantastic and they have omega3’s PLUS fiber PLUS protein?? Seriously, what more could you possibly ask for? And your overnight chocolate oats look so sinfully delicious that I NEED to have them. Bring on the chia seeds!

    I’d whip up a veggie stir fry with peppers, onion, mushrooms, and tofu, then stir in some chia seeds for an extra health boost before serving over brown rice! Yum!
