Tuesday Lunch

Today’s mid-day meal included a big ol’ salad, composed of:

  • Butter lettuce
  • Celery
  • Tomatoes
  • Carrots
  • Leftover sausage
  • Balsamic vinaigrette dressing

A cup of plain Greek yogurt with a scoop of grape jelly rounded out my meal.

    Oddly enough I was showering today and thinking to myself… hmm I should go buy some of those Chia seeds that Julie uses and give ’em a whirl. Crazy coincidence…?? I think not! As I was thinking about it, I thought how interesting it would be to add them to applesauce (since I don’t really like the consistency.) Fingers crossed!

    I’ve been dying to try chia seeds forever, but I can’t find them near my house! I’d love to test them out in smoothies and on top of my morning peanut butter toast 🙂

    Lately I’ve been making my usual breakfast smoothie and adding chia seeds overnight to thicken it all up and topping it with granola right before I eat it. It’s like ice cream for breakfast (definitely inspired by your love for the vitamix!).

    I’ve seen you use xanthan gum in your smoothies. At my local store it’s crazy expensive for a tiny bag but I LOVE thick smoothies. Do you think it’s worth the price? And have you found it anywhere for a better deal?

    I first tried chia seeds in Holy Crap-a cereal produced in BC, Canada. Now I love them on their own in yogurt and smoothies. But I need to try them on PB toast!

    Thanks to your blog, I’m totally addicted to these guys! I put them in my oatmeal (like breakfast this morning!), smoothies, Chobani yogurt bowls and more. My bag is almost empty, so this giveaway comes just in time! 🙂

    I really really want to win this give-away!! 🙂 I love Chia seeds!! I would eat them in EVERYTHING- haha, just kidding..almost everything 😉 I don’t think fish + chia seeds go too well together…but you never know, I could invent a new recipe 🙂
    I would really like to enjoy them in my greek yogurt! I love crunchy things in that!

    I have been curious about chia seeds ever since I started reading your blog. I am not Celiac, but do have a severe intolerance to wheat and gluten. I do my best to cut both out of my diet, but have struggled to find grain/fiber alternatives that actually taste good.

    I would like to try Chia seeds because my family and I are trying to make even more healthier changes into our lives. I love the fact that chia seeds over some many nutrient rich benefits !! Plus they are full of protein !! I would love to try them in oats, cereal, yogurt etc etc….

    Previously, I would only use chia seeds to sprinkle on my yogurt. But recently I started making chia pudding- delicious! I’m hooked!
