Tuesday Lunch

Today’s mid-day meal included a big ol’ salad, composed of:

  • Butter lettuce
  • Celery
  • Tomatoes
  • Carrots
  • Leftover sausage
  • Balsamic vinaigrette dressing

A cup of plain Greek yogurt with a scoop of grape jelly rounded out my meal.

    I’ve been meaning to try overnight oats lately, so I would definitely throw some chia seeds in there! Mmm! And with that many chia seeds, I think I would put them in just about everything else too! haha

    With the warm weather coming I would love to create a soft serve incorporating chia seeds and/or a creamier chia seed pudding. I’m usually an ice cream fanatic in the summer but this I’m trying to keep my ice cream intake to a minimum but still enjoy refreshing desserts such as as many fruity soft serve flavors that my taste buds can handle 😉

    Just brainstorming… mango, peach, spinach and cream, coffee and chia mmm….!

    I would use the chia seeds to add a little crunch to my summer salads! They look so good in your overnight oats and I’ve never heard of them before your blog…

    Well, I shouldn’t be the one to admit that I really enjoyed using them in a chia pet a few years back… scooby doo anyone?!

    But I love to use them in yogurt~

    I too gave up sweet for lent but come Sunday chia seeds are going to be my new favorite topping to frozen yogurt/ ice cream 🙂 boy oh boy!!

    I have been wanting to try chia seeds for a while now–here’s hoping I win! 🙂

    I’d definitely use them in lots of meals, but I am excited to add them to smoothies! Especially now that the weather is getting warmer!

    I’d like to try the chia seeds in overnight oats! I made overnight oats for the first time this week and really enjoyed them. I looked at our grocery store for the chia seeds, but couldn’t find them anywhere!

    I know this is the best way… I use them as sprinkles on my ice cream. Totally justifies that cold, creamy “source” of calcium. 😉

    i just recently learned you can use soaked chia seeds as an oil replacer in baked goods, and i would love to try it out!

    I eat a salad every day for lunch and would love to add them to my dressings. I would also love to sprinkle them on my turkey avocado sandwiches.

    since i have seen use using (and loving) chia seeds, i have been curious to try them out. i have searched all over my city to find them, but i cant! i would love this opportunity to try them out before ordering them online. ps: i heard they are grrrrreat for runners, you can make this drink with them that gives you great energy for long runs.

    I would love to try chia seed pudding! Looks like a tapioca/rice type of consistency which I LOVE. Add all those health benefits and it sounds like the perfect treat 🙂
