Tuesday Lunch

Today’s mid-day meal included a big ol’ salad, composed of:

  • Butter lettuce
  • Celery
  • Tomatoes
  • Carrots
  • Leftover sausage
  • Balsamic vinaigrette dressing

A cup of plain Greek yogurt with a scoop of grape jelly rounded out my meal.

    I’ve been wanting to try chia seeds ever since I saw them on your blog. I love flax seeds, but they tend to make everything kind of gummy once they absorb liquid, which can be…strange.

    I’ve yet to try a bagelwich; gluten-free bagels are REALLY high in calories, and big too (at least the ones that taste best do). I’m trying to find a healthier, tasty version, so my quest continues…

    As a fellow smoothie addict – I think that chia seeds would be a great addition to my morning ritual (plain Greek yogurt, spinach, lots of fruit, and a bit of orange juice). Also – I think I would really like to try it in my yogurts, as I also want crunch in everything! Thanks!

    I love chia seeds in my yogurt! If you let them sit, they thicken it up. Yum 🙂

    I use Chia seeds almost everyday and I actually just finished the last of them! I love it the best in my oatmeal – either hot or overnight oats. I’d like to try that chocolate chia pudding though, that’s next on my list.

    I’ve never eaten chia seeds before so I’m not sure how I would use them. I’d love to experiment with different recipes though!

    I would use them in oatmeal. I’m OBSESSED with oatmeal and have a hard time going without it for a day. I think they would add the perfect “umph”!

    I used them before in oatmeal—love the way they go all plump. I’ve never made granola before, and I’ve certainly never heard of granola with chia seeds! If I were to get them, I’d definitely do that!

    Hi Julie! I love love love chia seeds in smoothies as a natural thickener. I prepare my smoothie the night before with chia seeds, then in the morning blend with ice and it is a thick, scrumptous smoothie.
