Tonight seemed like a great night to enjoy eggs in the evening, so I figured I’d try making my first-ever quiche!
I was inspired to make the quiche when I saw Tina’s post on Tuesday. She basically followed this recipe by Rachael Ray, which sounded really easy and looked amazingly delicious.
I changed the recipe quite a bit, but the results were still fabulous! It was a copy cat quiche… kind of. 😉
The recipe below includes my alterations.
Broccoli and Spinach Egg White Quiche
Ingredients:
- Three whole wheat tortillas
- 1 1/2 cup chopped broccoli florets
- 2 tablespoons extra-virgin olive oil
- 1/2 onion, chopped
- 2 cups chopped fresh spinach
- Salt and pepper
- 1/2 cup shredded cheese of your choice
- 1/4 cup crumbled goat cheese
- 6 egg whites
- 1/2 cup Greek yogurt
Directions:
- Preheat the oven to 375°. In a greased 9-inch pie plate, overlap the tortillas to make a crust; place on a rimmed baking sheet. Meanwhile, steam broccoli and until crisp-tender, about 2 1/2 minutes.
- Add the olive oil to a skillet and heat over medium-high heat. Add the onion and spinach, season with salt and pepper and cook until the onions are transparent, about 3 minutes. Stir in the broccoli; season with salt and pepper. Spread evenly in the tortilla crust, and add shredded cheese on top.
- In a medium bowl, whisk together the goat cheese, egg whites and yogurt and season with salt and pepper; pour into the tortilla crust. Bake on the baking sheet until just set in the center and lightly golden, about 30 minutes. Let rest for about 10 minutes before serving.
Easy, huh?
The addition of the Greek yogurt to the egg whites really made this quiche taste like at thick egg casserole.
In Ryan’s words, it tasted “quichey,” which he assured me was a good thing. 😀

I love breakfast for dinner or lunch. As evidenced in my last post. That quiche looks good. I’m surprised the tortillas held up to it, but I’m glad bec that’s a great idea.

I love breakfast for dinner. One summer I went through weird phase where I pretty much ate breakfast all day long… breakfast was yogurt and cereal, lunch was oatmeal and fruit, and dinner was eggs and toast… so weird, haha! 😉

LOVE breakfast for dinner! I made an egg white omelet last night with caramelized onions, turkey bacon, lotsa cheese, & salsa. It was so super yummmmmmy!! Can’t wait to try making a version of this quiche.

That looks really good. I hardly ever eat breakfast usually coffee and fruit. I hate eggs so that causes a big problem for me.

i LOVE breakfast for dinner… so much so that we had breakfast for dinner as the meal at our wedding reception. it just so happened that the place we picked for the reception employed a man named pappy, who was a cook at the first IHOP when it opened up out west in the 70s! i may be fuzzy on the date/location of that IHOP but he was a super cook and it was a great meal. we got bride & groom omelets, and everyone had egg casserole, some meats, fruit, potatoes, muffins, etc. yum!

I call my meal whatever based on the time, but I eat foods at random meals. I almost never eat “lunch” for “lunch” or “dinner” for “dinner.” I just eat whateer sounds good!

Oddly enough, I never have eggs for breakfast – just lunch and dinner! I am a huge fan of ‘brinner’ though. The quiche recipe looks awesome – I think my hubs would like it too, I am bookmarking it to try soon.

I saw this on Tina’s blog, but I really like your update! Does the crust really crisp up that well? I thought it would get soggy.
Breakfast foods are my favorite. I often have “brinner,” but never dinner for breakfast. So many better options!

the sides get really crispy, but the bottom isn’t very crispy. it isn’t soggy though – just doughy tasting. i loved it!

I loove breakfast for any meal, actually! A veggie/egg scramble with english muffins is my go-to but cereal is a close second!! Love waffles too but I need a new iron!!

Waffles, eggs, French toast, all amazing for dinner as well. Waffle House built a chain around the idea it’s OK to each breakfast all day.

I made this for dinner tonight and it was fantastic! I used lite Jarlsberg cheese, which I think went really well. Also, breakfast is my favorite meal and I am down for it 24/7!
