Before I married Ryan, I thought everyone loved soup.

It’s comforting.

It’s like home in a bowl.

It makes the whole house smell fantastic.

Clearly I’m on Team Soup!

Ryan, on the other hand, finds soup to be less than thrilling. To him, soup is an appetizer and leaves much to be desired. He thinks it needs more stuff.

When autumn arrives, I inevitably go on a soup kick. Though I’d love to curl up with a hot bowl of soup by the fire, eating a bowl of soup in Florida in the 80-degree fall weather means sweating at the dinner table.

But I cannot help myself.

It’s October and it’s hot outside, but this year’s soup-makin’ kick is in full swing!

And guess who gave my most recent soup recipe a thumbs up? Ryan the Soup Hater.

Last night I set out to make a chicken soup that we both would love. I added lots of vegetables (for me), lots of chicken (for Ryan) and minimal broth so it was extra chunky and more substantial.

Rave reviews all around!

Description

Soup…It’s comforting. It’s like home in a bowl. It makes the whole house smell fantastic! This soup recipe will have you smiling from the inside out!


Ingredients

Scale
  • 4 cups chicken broth
  • 2 chicken breasts, cut in half
  • 2 large carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 1/4 – 1/2 teaspoon ground pepper (Use pepper to taste, but don’t omit this! The pepper adds so much!)
  • 1 cup frozen corn

Instructions

  1. Pour chicken broth into a large pot on the stove. Add chicken breasts and cook on medium-high heat for approximately 25 minutes until chicken is done.
  2. Remove chicken from pot and set aside to briefly cool.
  3. Add carrots, celery and onion to broth. Allow to cook on medium heat for approximately 12 minutes.
  4. Shred chicken and add chicken and pepper to broth. Simmer for 5 more minutes.
  5. Add frozen corn, cook for an additional 2 minutes and serve.

    I love soup! My husband is actually on board with soup for dinner most of the time as long as it has substantial ingredients in it. This soup looks delicious! Definitely going to have to make it one night for dinner 🙂

    Yum yum! I too love soup- just made a delicious soup last night in fact! And my bf also hates soup…what is it with guys and hating soup? Apparently “hot liquids” aren’t his thing. (He’s still drinking iced coffee and we live in the midwest!)

    Yum! My husband is the same way with soups, but he gets them regularly during the cold months whether he likes it or not. 😉 I’m sure he’d be a fan of this one though since he says that if he does have to eat soup, he likes it “chunky”.

    This sounds good! I really dislike broth for some reason, so I always make my “soups” extremely chunky and with very little broth.

    I love homemade Soup! Jacob also doesn’t eat much soup, but he WILL eat this healthy tortilla soup recipe that my friend gave me. Might be a good one to try with Ryan?

    – 4 boneless, skinless chicken breasts
    – 2 15oz cans of Great Northern beans (white beans) OR black beans
    – 2 16oz jars of salsa – I use the Herdez medium
    – 2 t. cumin
    – 4oz grated cheese – I use the 2% Mexican blend
    – 1 can of corn (or fresh or frozen)

    Cook chicken breasts in boiling water until cooked through. Remove from water, reserve stock. Once chicken has cooled, shred chicken with a fork. In a pot, combine beans, salsa, cumin and cheese. Add chicken, some of the chicken stock water, and simmer for 1 – 2 hours. This will be very thick. Use reserved stock(you can use chicken stock from the store) to thin to desired consistency. Serve with grated cheese, sour cream, chives, green onions, tortilla chips…

    My grocery store recently had bread bowls as the item of the week. I picked two up in hopes I could get an easy soup dinner out of it … I think I did a good job of tricking my bf into having soup for dinner as he enjoyed carving out the “bowl” part and picking apart the bowl as he ate. He was actually stuffed after. Soup success!

    I’m on a soup kick myself lately. It’s just so dang cold in Iowa! But I do believe there is a time and a place for soup. And while I’ve had cold soup before (Asparagus Soup on the Carnival Fascination!), it’s not my favorite. Soup is a fall/winter treat.
    That said, might have to give this a whirl sometime soon. It’s DEFINITELY soup weather (or Stoup, as Rachael Ray would say, because that could be soup OR stew!)

    Strangely enough, I’ve never made a simple chicken soup. But just last night, I told my husband that it’s something I’d like to do within the next few weeks! So, perfect timing! Especially, because I do like soup to be on the heartier side (which is why I usually do chili). Thanks!

    Since Hurricane Sandy is blowing everything around on the East Coast, I have opted to stay home and make a pot of Smoked Gouda Chicken Bisque. Hopefully I can perfect it and get a recipe posted soon.

      you can definitely add more spices if you’re craving more flavor, but i honestly found it flavorful enough from all of the veggies, broth and pepper. what spices would you add? i’d love to experiment with more spices in the future!

        I’d first start with SALT!

        The recipe is more like boiled chicken breasts with veggies, with no salt or seasonings!

          the chicken broth i use already has a lot of salt, so i really didn’t think it was necessary. adding more salt would’ve been too much for me, but definitely season to your own taste!

    I LOVE soup! My fiance and I started a tradition of “Sunday soups” last fall/winter where we take turns picking out a soup recipe, make it on Sunday, and enjoy it while watching football and cozying up! We love to get a crusty loaf of multigrain bread for dipping, too!

    Interesting, I’ll have to try it sometime. I’m not much of a cook (at all) but this looks simple and doable.
    So you can put the raw chicken breasts in the broth for 25 minutes and it cooks up? I didn’t know that, ha. I’ve always been a griller or stovetop.
    How many servings? I assume 2?

      yes! they’ll cook right in the broth and you can shred them with a fork before tossing them back into the soup. and yes, two servings!

    This may be a dumb question, but you cook the raw chicken in the broth? and then shred it and put everything else back in the broth to cook?? Just double checking, because I’m definitely making this!! And just don’t want to get us sick!! Thanks for the recipe!

    This looks great. I think I will attempt to make a vegetarian version of this using Better Than Bouillon “No Chicken” soup base and chickpeas instead of chicken…has my mouth watering just thinking about it!

    We have the same issue in Arizona! I want to get on the fall bandwagon; wear boots, drink warm beverages, hangout by a fire, even wear a jacket and of course, eat soup! But all of that means sweating my booty off when it’s in the mid-80s. At least the suns out 🙂

    I am also a hater of soup so I can sympathize with Ryan. They say it’s supposed to help fill you up, but it never does. Why don’t you do what you say you’re going to, Soup?

    My husband would be in BIG trouble if he didn’t like soup because I make ALOT of it in the Fall/Winter time. My favorites are potato soup and chicken and dumplings which are both really hearty and filling.

      i feel like it had plenty of flavor from the veggies, salty broth and pepper, but you can absolutely sautee the veggies first!

    I like soup but I always worry that it won’t be filling enough, so I love it when the soup has beans, wholegrain pasta or plenty of vegies! Oh or lentils, quinoa and couscous etc

    I completely understand w/ the hubby. I find my hubby will usually eat a select amount of “soups” if they are 1) hearty and 2) mostly thick like a stew.
    Here’s a really filling, really healthy “cozy” dish—>

    LENTIL CHILI….tastes just like chili, but SUPER healthy!. Just try it!

    I live with a soup hater. Well, he doesn’t hate. But he definitely doesn’t think soup is a meal the way I do. And I get in the same soup mood in the fall.

    I’m glad I wasn’t the only one skeptical about cooking the chicken IN the broth. I was just researching this the other day, and all these years, I’ve been cooking my chicken before adding it to soup. I make this same recipe, only I add egg noodles to mine so there is nothing left to long for. Very comforting food. LOVE soup weather!

    I sometimes find that soup doesn’t fill me up in the same way as a ‘proper’ meal – but this one looks yummy and filling! I’ll have to try this recipe for dinner one night next week, hopefully I can get my husband to try it too 🙂 He is very fussy with food, which makes trying new recipes..interesting!

    Oh i’m definately a soup LOVER 🙂 as soon as fall hits I’m in soup mode … they can be thick and creamy or broth-based and I do not care.
    However, when I tell my guy I making soup for supper he’ll ask if we have any leftovers ….

    I love soup, but I do sometimes feel like broth-based soups aren’t very nice. This one looks lovely though! Easy and full of hearty vegetables and fresh chicken. Think I might cook this for dinner today.
