Guacamole Tuna Salad

As expected, today’s BodyPump class was fabulous.

When my sister and I took BodyPump together last Saturday, I went light on the squat and lunge tracks because I knew I had to run in a 10K the next day. Well, today I didn’t hold back at all and *wowzaa* I felt the burn! I have a feeling my hamstrings will be talkin’ to me in the morning.

I absolutely love the way BodyPump motivates me to push myself and makes strength training energizing and fun. It’s the best.

On my way home from the gym, I snacked on several handfuls of Cashew Crunch. So addicting!

Description

If you love tuna salad and guacamole, I urge you to make this sandwich at home.


Ingredients

Scale
  • 1 can tuna (drained)
  • 2 ounces guacamole (roughly 2 tbsp.)
  • 1/2 teaspoon mustard (more to taste)
  • 1 teaspoon sweet relish (more to taste)
  • 1 carrot, chopped
  • 1 celery stalk, chopped

 


Instructions

Combine all ingredients into a bowl.

Tuna Guacamole Salad

Not too shabby!

I used a packet of Wholly Guacamole as the guacamole base, but you can also use mashed avocado or homemade guacamole. It’s a winner!

With my sandwich I also ate and an apple that I dipped in a heaping spoonful of almond butter.

I love stirring salsa into my guacamole, so the combination is my absolute favorite, but if I had to pick, I’d say fresh homemade salsa with lots of cilantro!

    I am ALL about adding avocado or guacamole to my tuna OR egg salad. It’s so good and such a great replacement for the not-so-healthy (and not-so-tasty-to-me) mayo!

    How can you possibly expect us to pick between salsa, guac and queso?! The fat kid in me is screaming queso, but realistically I’d pick guac as #1. 😀 Awesome idea to add it to tuna salad!!

    Your timing is perfect. I have leftover guacamole from Whole Foods (I used half for a chicken enchilada recipe) that I didn’t quite know what to do with. Now I know what I’m having for lunch today.

    Salsa con queso? lol. Definitely salsa, though – big, chunky, onion-and-jalepeno heavy homemade salsa. It’s one of the things I always look forward to about summer – great tomatoes at the farmers market = droolworthy homemade salsa!

    I love bean and corn salsa. I eat it straight from the jar with a spoon. SO good. or I’ll dip a spoon in Plain Greek Yogurt then salsa for a snack!

    I love sweet relish in tuna salads. It makes a huge difference, in my opinion!

    I love guac! This sandwich sounds great. I typically make my tuna with greek yogurt and avocado so i’m sure I would love it with guacamole. I haven’t seen those 100 calorie packs.

    U absolutely love guacamole!!! I could eat it with a spoon, the best is when a restaurant has the guac they make table side! Since I am a mayo hater I sometimes mash an avocado into my tuna or shredded chicken, it is seriously amazing!

    All, or actually most, of the suggestions are mouth watering but are missing the one ingredient guaranteed to give any dish a zip, Tabasco. Just two or three drops in your Tuna + Guacamole = heaven.

    Or substitute the cayenne pepper in the guacamole with half a teaspoon of Tabasco. Are you up to it?

    I love bodypump almost as much as I love guacamole. In fact, I used guac as my “dip” of choice while eating turkey for lunch today. I also happen to have 2 avocados ripening on my desk at work right now. That’s not weird, right?

    Not a fair question! I absolutely adore guac, but I’ve been having the craziest cravings for salsa lately so I’m going to have to go with that one. I love it so much I have no qualms with eating it straight from the jar with a spoon :mrgreen:

    I love quac and salsa but I would end up choosing salsa if I had to. It is so light and amazing and just makes me happy! I once made salsa using jalepenos but didn’t wear gloves… When I went to put my contacts in in the morning my eyes were on FIRE!!! I had to wear glasses because I couldn’t get my contacts in. I tried EVERYTHING to get the spice off my hands, even sticking my hand in a jar of mayonnaise. Such a pain in the butt.
