Guacamole Tuna Salad

As expected, today’s BodyPump class was fabulous.

When my sister and I took BodyPump together last Saturday, I went light on the squat and lunge tracks because I knew I had to run in a 10K the next day. Well, today I didn’t hold back at all and *wowzaa* I felt the burn! I have a feeling my hamstrings will be talkin’ to me in the morning.

I absolutely love the way BodyPump motivates me to push myself and makes strength training energizing and fun. It’s the best.

On my way home from the gym, I snacked on several handfuls of Cashew Crunch. So addicting!

That snack helped tide me over until lunchtime.

Description

If you love tuna salad and guacamole, I urge you to make this sandwich at home.


Ingredients

Scale
  • 1 can tuna (drained)
  • 2 ounces guacamole (roughly 2 tbsp.)
  • 1/2 teaspoon mustard (more to taste)
  • 1 teaspoon sweet relish (more to taste)
  • 1 carrot, chopped
  • 1 celery stalk, chopped

 


Instructions

Combine all ingredients into a bowl.

Tuna Guacamole Salad

Not too shabby!

I used a packet of Wholly Guacamole as the guacamole base, but you can also use mashed avocado or homemade guacamole. It’s a winner!

With my sandwich I also ate and an apple that I dipped in a heaping spoonful of almond butter.

I love stirring salsa into my guacamole, so the combination is my absolute favorite, but if I had to pick, I’d say fresh homemade salsa with lots of cilantro!

    That’s an incredibly difficult decision! I eat Mexican food at least once a week and have all three of these. I call it my Mexican flag of yumminess! (because I get white cheese dip) Anyway, if I HAD to pick just one, I guess I would go with the cheese dip.

    Guacemole definitely! Love it! So where I used to live, my gym had body pump and it was also my most favorite class ever (okay so it was a tie between body pump and body combat). Now I live in a little town in Kansas where body pump is not available. So just recently I went to youtube and found a few body pump classes, wrote down the songs and routines and do it at the gym. Not as much fun as doing an actual class but still lots of fun! I hope your trip to Ireland and London is a blast! I hope you love both places as much as I do 🙂 I can’t wait to hear all about your trip! Oh, and when you’re in England you must get sticky toffee pudding with custard sauce. (The custard sauce is a must). It’s my fave!

    SALSA! Like homemade pico de gallo style salsa, WITH fresh chunks of sliced avocado in it and seasoned with lime. Not quite guac but still adds a pop of that creamy avo texture;) and I agree on EXTRA cilantro!

    I absolutely love avocados, so I’d have to say guacamole! But I’m with you on stirring salsa into mashed avocados. It’s such an easy snack! I make it in my dorm room all the time and dip veggies in it!

    Oooh, that’s a hard one! I’m torn between all of them but I guess if forced to choose and if calories didn’t count, I’d go with the queso! Yum!

    Salsa is good but guacamole can be added to pretty much anything in my opinion! I love mashed avocado toast.

    You seriously want me to make that decision… I guess it depends how many beverages I have had before and if I am making the healthy choice. Oh and true statement I don’t think either are healthy when I eat everything in site. Where is my self control?!?

    I just bought the Les Mills Pump from Beach Body (i LOVE my trainer/beachbody consultant) I am sooooooo in love with the workouts! I have 5 kids and i homeschool so going to the gym is really not an option for me. Loving these workouts! ( i have 10 dvd’s) Someday……

    Definitely guacamole!!! I absolutely love avocado, and anytime guacamole is in front of me I seem to eat it very quickly! But I also love salsa, and like you, I enjoy mixing my guacamole and salsa! However, my fiance is the biggest lover of cheese I know, so his favorite is without a doubt queso!

    I never really had guacamole until my friend in Texas made it for me when I went to visit him. It was AMAZING! Now I love to make it at home, I’ve never tried a store brand because I love homemade so much! I love queso too, but its definitely not as healthy.

    I LOVE guac- especially the HUGE bowls they give you at a Mexican restaurant up here called Guapos! Stir in some spicy salsa, lots of cilantro, and a dash of cumin- it really makes the guac! I also sometimes add a little plain greek yogurt in for more creaminess!

    I have been doing body pump for almost two months now! I have been using around 15 to 20 pounds on my barbell for work outs. I am not feeling as sore as I usually do should I up my weight? How much do you use?

    I am so making this!! Always looking for easy and new recipes to make especially for lunch at work!

    I have been dying to try bodypump. It’s offered frequently at my gym but Im afraid of being the ‘new girl’ who has no idea what is going on. =/

    I <3 GUACAMOLE!! I love salsa too, and when I get the chance I will mix the two on the same cracker of chip. Queso is great tasting, but I try to eat dips that have more nutritional benefits. I love to dip things, and tend to use more than I should; so at least if I make a good choice I am adding nutrients to my daily repertoire . Just writing this makes me want any all of these dips 🙂
