Hot Then Cold

Lunch today began with something hot and savory and concluded with something cold and sweet.

First up: Soup!

I prepared the soup using Imagine organic creamy butternut squash soup as the base. I added a shredded chicken breast and some steamed broccoli to the soup to amp it up a bit and make it more substantial.

The soup itself was a little bland for my liking, so I’m glad my additions added a bit of flavor to the bowl.

The cold part of my lunch came after I was done with my soup in the form of chocolate cottage cheese topped with defrosted frozen raspberries.

This little treat has been my morning snack of choice for the past week or so and tastes even better when a scoop of peanut butter is added to the mix. Thank you to a bunch of you for that tasty suggestion!

Speaking of snacks, aside from the chocolate cottage cheese, I am finding myself craving salty and savory snacks more and more lately, which is a little strange for me, as I typically gravitate toward sweeter snacks.

    Well lately I’ve been in love with a sliced banana and peanut butter. 🙂 sweet and salty and so delicious! You could try it frozen as well! yum! 🙂

    Random…I know…but TOTALLY just made my first Rue La La purchase!! I got a La Mer Watch that I’m in love with! PLEASE tell me that their stuff usually arrives in the mail sooner than they say?!?! I can hardly wait a whole TWO WEEKS for it to get here! 😉

    Those cottage cheese bowls are looking delish and i’m trying to squeeze more protein/dairy into my diet. THat might be the way I do it!

    Lately, I’ve been snacking on guac and strawberry/blueberry/banana and peanut butter quesadillas. Yum!

    Sometimes my roommate cuts up apples, dips them into carmel and then dips them into chopped nuts. It’s a nice little appetizer she used to make when she would have friends over to watch the bachelorette!

    I am so picky when it comes to soups, I just find boxed and canned soups to be SO bland. I’d rather make it from scratch at home, which also helps control salt levels as well.

    mm love me some savory snacks! my favs include roasted chickpeas, Trader Joe’s Meatless Meatballs (recent discovery- sooo good!), mashed cauliflower w/ spices (tastes just like mashed potatos!)- just steam the cauliflower, blend it, and add spices and salt. A lot of the times I’ll just heat up some leftover stir fry or what not and call it a snack too. I much prefer savory over sweet snacks, actually!

    I am OBSESSED with Imagine butternut squash soup. I make a mean veggie cous cous dish with it. YUM!!

    I cut corn tortillas into triangles and bake them for about 15 mins. Mix cottage cheese and salsa together (for some protein) and use the baked tortilla chips as the scoop. SOOOO good!

    I love using cottage cheese as a savory dip as well…keep it simple with a bit of garlic powder and herbs and it pairs deliciously with carrot/cucumber sticks and crackers!

    I’m loving pop chips- not so healthy, dipped in an amazing beetroot dip from wholefoods, which satisfies a savoury/sweet craving from the beets. Another winner is good old carrots and humous!

    Laughing about the preggo comment. That was my first thought as well. And my favorite savory snack is probably popcorn or pretzels with laughing cow cheese! Have a good day!

    I love tortilla chips with fresh avocado–fills you up quick, I also enjoy almonds and cashews mixed together and garden tomatoes with crumbled bleu cheese. Thanks for all the great meal suggestions!

    Have you tried Kay’s naturals pretzel sticks? They are so tasty and each bag is only 120 cal with 12g of protein. I love them!
    I also recommend Simply protein chips (15g of protein in each bag!)

    So how many meals/snacks do you eat a day? On my new thing, I’m eating 3 “meals” and 2 “snacks”. Just wondering. I’m getting ideas galore!!

      i always eat a morning and afternoon snack. if i’m still hungry after dinner, i’ll eat something around 8 p.m. too!

    I hated cottage cheese when i was younger, but over the last 6 months or so I’ve been loving it and eating it most days of the week. So versatile and tasty! Not to mention high in protein, which is always a bonus.
