Hummus Scrambled Eggs

July 3, 2012 by Julie 53 Comments

This morning I amped up the flavor of my scrambled eggs with a little somethin’ special.

hummus

Hummus!

I stirred a single serving Sabra hummus cup into three scrambled eggs while I let a chopped yellow squash and broccoli soften on the stovetop in a bit of olive oil.

I eventually combined everything for a yummy bowl of hummus scrambled eggs!

The hummus added a little punch of flavor to the eggs.

I am a fan!

Before signing off for the morning I have a couple of things to share that I figured I’d condense into a fun little roundup:

A few of you asked me to share when Tina offered another boot camp program on her website and the time is now! I am all signed up and can’t wait to participate in the 8-week program again. The boot camp will run from July 23 through September 16.
  • Happy Birthday Allie! Allie’s adorable fiancé Mark emailed me yesterday to tell me about Allie’s special birthday today, so big HAPPY BIRTHDAY wishes are coming your way!

I love mixing eggs and hummus…usually the jalapeno/cilantro flavor with some onions and bell pepper. It is such a perfect savory breakfast!

I’ve never had hummus and eggs. I’ve been eating eggs almost daily for lunch lately – and have some spinach and avocado hummus in the fridge. I bet that mix would be great.. may try it for lunch today!

I saw that first pic and thought it was peanut butter, then saw “scrambled eggs” and thought to myself Julie has FINALLY gone too far with the peanut butter. It was bound to happen. Hahaha. Hummus eggs is an awesome idea! I bet a Greek style scramble would be scrumptious!

tina has an FAQ page you might want to check out: http://www.tinareale.com/976/best-body-bootcamp-faq/ and she typically emails new workouts for you to complete every 2 weeks. 🙂 each workout takes about 60 min. to complete.

Hi Danielle! Tina here. The workouts are set for about an hour 5 times per week, but I give suggestions for those on a time crunch that can focus on only 3-4 days per week or 30-45 minutes per workout, etc. Thought I would jump in. 🙂

Thanks for the heads up on the bootcamp. I thought that was such a great idea and what a great motivator for the summer. I’m totally in a gym slump right now and that seems like it could be just the thing to get me back into the swing and excited.

Can you give me an estimate of time you took to do it every day? And how hard are the work outs? Looked on Tina’s site and didn’t see a whole lot.

Thanks for keeping me entertained every day!
