Monday Night Lasagna

Last night’s pizza apparently sparked a craving for Italian in our household.

Lasagna is an ultimate comfort food and one Ryan and I both happen to love. We’ve made lasagna numerous times, but usually I gravitate toward vegetable or eggplant lasagna to sneak some extra vegetables into the dish.

Tonight I figured I would count the tomato sauce as my vegetable and set out to make a traditional meat and cheese lasagna.

I was going to flip through a cookbook or browse the internet for a recipe when I looked on the back of the Ronzoni whole grain lasagna noodle box and saw a perfectly delicious sounding recipe staring back at me.

Sometimes the recipes on the box are the best!

I followed the recipe and soon enough the most amazing smell filled our house.

I think Ryan and I looked at the clock no less than 10 times to see when it would be done.

It was definitely worth the wait!

After dinner, we took Sadie on a walk around the neighborhood before heading home to hang out on the couch for a bit.

Now I’m planning to hop into bed and continue reading my latest book.

I picked up Matched at the library on Saturday and am really liking it so far. It was recommended to me by friends who share my love of dystopian novels and I’m hooked!

    Your so right…. Sometimes the recipes on the back of the boxes are the best! I have a recipe for tuna noodle casserole (sounds gross, but it’s amazing) that my mom got off the back of a box about 20 years ago… Its a hit every time I make it!

    Oh yum, that lasagna looks fantastic! I agree – sometimes the recipes on the box/ bag really are the best, like the chocolate chip cookie recipe on the Tollhouse chocolate chip bag, and cheesecake from the Philadelphia cream cheese packages.

    I actually started reading Matched months ago but never finished and I have no idea why! I know I liked it. You just reminded me of that so now I have to finish the final few chapters. I hope I can remember what happened at the beginning!

    Oh I loveee lasagna. Whether its meat or veggie, it’s always delicious. My husband is a lasagna junkie haha. If any restaurant has lasagna on their menu, he’s going to order it. 😉

    I just finished reading the first two books in the Matched series. I liked them alot and can’t wait to see how everything turns out in the last book. If you like dystopian novels you should read Delirium (if you haven’t already.) The concept is based on finding out that love is actually a disease and how people are “cured.” This is also going to eventually be a trilogy. Seriously amazing. I lost sleep over wondering what is going to happen in the last book! I had to keep reminding myself that the characters are not actually real people haha.

    Matched was a fantastic book. I really enjoyed it and the second book Crossed. I can’t wait for the third book to come out.

    Delirium is on my list of books to read soon. I just have to finish with my Anatomy and Physiology class before I get sucked into another series.

    I love lasagna. When I make it it weighs about 12 lbs and isn’t very good for you so we don’t have it often.

    I love these types of books, now I need to pick this up too. A friend recently recommended the “Chaos Walking Trilogy” and said it was similar to the whole dystopia category!

    And now lasagna will be on my list to make this week!

    That lasagna looks delicious, and I’m not even a big lasagna fan usually. I’m actually on the Ronzoni website trying to find the recipe, but there are 19 lasagna recipes! Do you know what the one you made was called, by chance? 🙂

    I seem to regularly opt for pasta in lieu of lasagne but I really need to make the latter soon, especially after seeing your pics- I always think it will longer to make than the actuality!

    Ooh I really enjoyed Matched. I seem to have a liking for dystopian type novels now, probably because of Hunger Games. I read the sequel to Matched and I enjoyed that as well-definitely put it on reserve at the library!

    I read Matched during my YA only phase. I thought it was good, mildly entertaining and a light easy read. It wasn’t The Hunger Games though 🙂

    This isn’t really a book club recommendation, but might be a book you might enjoy – it’s called MWF Seeking BFF by Rachel Bertsche. It’s a memior of a twenty-something who moves from NYC to Chicago, and her mission to make new friends there. I just finished it – she has an really entertaining writing style – I couldn’t put it down! She also kept a blog on the topic prior to the book deal. Thought it might be something you could relate to given your recent move. Enjoy!

    I love dystopian novels too! I didn’t know they had a technical name, and I’m glad I now know it so I can stop calling them “the books where the government rules everything and no one is allowed to choose anything for themselves.” I will sound much smarter moving forward. Have you ever read The Giver? I read it in elementary school and it’s still one of my top 3 faves!

    I loved Matched so much when I checked it out from the library that I bought myself a copy and then eagerly awaited Crossed and bought it too. Now I’m patiently waiting the next one. You’ll love it!
