Lunch today included lots of pretty colors.

Black Bean Burger Salad

I topped a big bowl of spring mix with celery, carrots, two MorningStar Farms spicy black bean burgers and pomegranate dressing. I absolutely love using black bean burgers as a salad topper. They add so much flavor and the punch of protein helps fill me up!

The dressing I used on my salad was Marzetti’s simply dressed pomegranate vinaigrette that I bought on sale at Publix on Sunday.

I love this stuff and always stock up whenever I see a deal!

Morningstar Farms black bean burger salad

If you scrunched your nose up at the thought of black bean burgers and pomegranate salad dressing, I don’t blame you. It sounds like a totally bizarre combination, but oddly enough, it worked. I was craving black bean burgers but wanted a little sweetness in my salad, so I decided to combine the two and was pleasantly surprised.

    We LOVE MorningStar Farms at our house! The chicken patties and buffalo chicken nuggets are our top two go to choices, but the little one loves the corn dogs as well.

    my family doesn’t eat pork so a typical Sunday brunch is challah French toast, cut up melon/berries, and Morningstar breakfast patties. so delicious dunked in the maple syrup from the French toast!

      *morningstar in my house and its a staple! The crumbles, burgers, chikin corndogs and corndogs nuggets are amazing! My husband is a huge fan of the “rib sandwich.”

    Morningstar Farms are actually the only veggie burgers I’ve ever liked!! Normally I’m a huge carnivore but they just might convert me. You’ve got to try their meatballs if you havent already.

    I’ve never tried their black bean burgers but I just recently sampled morningstar veggie sausage patties and was sold! Sooo good! My kids loved them too!

    I love Morningstar products !! My fridge is always stocked with several must have’s including the buffalo nuggets, grillers crumbles, and my favorite, the maple soy sausage patties 🙂

    I love Morningstars corn dogs. Not the nuggets, but the real deal on the stick and all. They are better than the “real” ones because they have less grease and great “corn” flavor 🙂

    Sadly I have never tried them because I’ve been afraid to buy them and not like them (penny pincher here!). BUT with a coupon I would LOVE to try them. I don’t eat beef or pork so this would be a great substitute. Yumm-o!

    It seems like I’m late to the party! There are so many comments already on here!
    I also eat the spicy black bean burgers, but haven’t tried them on a salad yet. I love having one on a piece of whole grain toast with fresh tomatoes from my garden, red onion, lettuce from my garden, and a spicy mustard. Yummo!
