Pancake Biscuits

This morning began with my 25 minute elliptical interval workout and “Workout C” from Tina’s Best Body Boot Camp.

The one-arm dumbbell overhead press from Workout C had my shoulders screaming! I rarely isolate one arm at a time and it made a big difference. I felt the burn much sooner than I usually do when I do overhead presses. Stabilization, baby!

Breakfast

When I came home from the gym, I wanted to make myself a special breakfast for no real reason. I guess I can use Friday as a reason, right? Fridays are always special!

I figured I’d make a baked pancake using my Bob’s Red Mill high fiber pancake mix, but I didn’t measure the ingredients and my batter wasn’t quite right.

My baked pancake idea quickly morphed into pancake biscuits!

I was surprised that the end result turned out pretty darn tasty! I broke my three biscuits in half, smeared a bit of Earth Balance on top and dug in.

Plus a hot mug of coffee on the side!

Time to make this Friday productive!

    Fridays are definitely an excuse for something special!! :] My boyman always goes out for lunch with his coworkers for “Friday Fun Lunch” and if I ever want Starbucks, I always get it on Fridays. It makes an awesome day even more awesome!
