10+ Pumpkin Breakfast Recipes

November 3, 2024 by Julie Leave a Comment

Find a list of more than ten of the best healthy pumpkin breakfast recipes for easy, nutritious options you’ll look forward to eating this fall and all year long!

Pumpkin season is in full swing and it’s a season I wholeheartedly embrace every single year. I adore pumpkin and I adore breakfast so why not combine the two and focus on deliciously healthy pumpkin breakfast recipes for today’s blog post!?

I’ve always enjoyed trying my best to find ways to give my morning meal a little more staying power by increasing the protein and fiber content in my breakfast recipes (oh hi banana bread protein pancakes + collagen baked oatmeal) and many of the pumpkin breakfast recipes I’m sharing with you today are recipes created to taste good but they have the added benefit of being good for you, too! A double whammy!

Healthy Pumpkin Breakfast Recipes

Pumpkin is not only delicious but we lucked out with this seasonal squash because it’s also a nutritional powerhouse and a wonderful way to incorporate the cozy, comforting flavors of fall into your day. Pumpkin isn’t only used for pumpkin pie anymore, as its popularity has increased like crazy over the years. It’s now used in everything from coffee drinks and pancakes to chili recipes and more!

10+ Breakfast Ideas With Pumpkin

Whole Wheat Pumpkin Muffins

Whole Wheat Pumpkin Muffins

Not only are these pumpkin muffins soft and sweet, but they come together in just 30 minutes and make 12 perfectly fluffy muffins. Plus, they’re lower in sugar than your standard recipe, dairy-free, and kid-approved. I love to prepare a big batch at the start of the week for grab-and-go breakfast on busy days! And for those who like to meal prep and make large batches of food at one time, they freeze really well, too!

Oatmeal Pumpkin Protein Pancakes

Who doesn’t love pancakes, especially when they’re infused with the flavors of fall? Warm and comforting, these come together with just seven simple ingredients for a high-protein option that’s gluten-free, nut-free, and perfect for serving with all your favorite toppings like pure maple syrup or a dollop of vanilla Greek yogurt.

Pumpkin Paleo Oatmeal

Pumpkin Paleo Oatmeal

A naturally sweetened fall breakfast, this Paleo, Whole30 oatmeal is the perfect way to start your day. The flax seeds act similarly to flax eggs, creating a voluminous dish made with egg whites, almond milk, flax seeds, and pumpkin to fill you up without weighing you down.

Pumpkin Pie Breakfast Egg Bake

This easy egg bake is soft, sweet, and made with warm spices just like classic pumpkin pie. However, featuring a handful of simple ingredients, it’s gluten-free, dairy-free, Paleo, and naturally sweetened for a dessert-like breakfast that will keep you full until lunch!

Pumpkin Steel Cut Oats

Ready in under 30 minutes, this easy recipe makes enough to feed my whole family. The use of steel-cut oats makes the texture chewier than other oatmeal recipes, and the warm spices make it taste like dessert.

Pumpkin Breakfast Cookies

These cookies are one easy, make-ahead breakfast I always know everyone in my family will agree on! With a total time of just over 20 minutes, they’re easy to make and perfect for meal prep. Plus, the combination of chewy oats, warm spices, sweet chocolate chips, and cranberries satisfies every tastebud and craving.

Pumpkin Oatmeal Muffins

I adore the chewiness oats add to baked goods and these pumpkin oatmeal muffins are a fantastic breakfast option, especially when topped with a smear of cinnamon honey butter. An added bonus: They make the whole house smell amazing when they’re baking in the oven.

Pumpkin Banana Oatmeal

There’s nothing more comforting than a warm bowl of oatmeal on a chilly morning and this easy pumpkin banana oatmeal always hits the spot. Made with just six ingredients, it’s a great source of complex carbs, fiber, and nutrients to keep you full. Plus, you can easily add your favorite protein or a variety of toppings to make it even more filling and satisfy all your flavor cravings.

Immune Boosting Pumpkin Spice Latte

Immune Boosting Pumpkin Spice Latte

Admittedly, this latte is not a complete meal, but it’s too delicious not to share, and it pairs wonderfully with any of the pumpkin breakfast recipes listed above! Sweetly spiced, rich, and creamy, it’s got everything you look for in a takeout beverage with a lot more health benefits. Thanks to the use of pumpkin puree, immune-boosting powder, and collagen, this homemade latte is full of vitamins, nutrients, and protein to help you feel energized and ready to kickstart your day.

Pumpkin Breakfast Quinoa

If you’ve never tried quinoa for breakfast, you’ve been missing out! This recipe has a consistency slightly similar to pumpkin baked oatmeal or a fine cereal, making it super cozy. Easy to make on the stovetop, it’s full of sweet, spiced, cozy flavors but is secretly full of protein, fiber, and nutrients to keep you satisfied until lunch. It’s my go-to pumpkin breakfast recipe on particularly chilly days!

Pumpkin Pie Overnight Oats

It doesn’t get any easier than overnight oats for breakfast and this pumpkin-packed recipe is a win! Simply prep the overnight oats the night before and then dig in! Overnight oats are a favorite of mine for busy weekday mornings because they make breakfast a breeze.

Is Pumpkin Healthy To Eat for Breakfast?

Pumpkin is extremely nutritious and can help improve eyesight, improve heart health, boost your immune system and keep you full between meals. It’s high in fiber, vitamin A and C and a good source of potassium and iron, too! Eat up, buttercup!
