Raspberry Ricotta Waffle Sandwich

Ever since I made ricotta stuffed French toast a couple weeks ago, I’ve enjoyed incorporating it into my breakfasts in different ways. Today’s ricotta-based breakfast was a winner!

I started by toasting two whole grain waffles. While the waffles were toasting, I mixed frozen raspberries that I let thaw overnight with ricotta cheese to make a creamy, raspberry filling.

After spreading the raspberry ricotta mixture on one of the waffles, and topping it off with the second waffle, I topped the waffle sandwich with syrup and dug on in!

This breakfast was easier to make than a batch of oatmeal and yet seemed like the kind of breakfast I’d normally save for the weekend. I love special weekday breakfasts!

Workout

Today’s workout was a cardio hodgepodge!

  • 15 min. stair master
  • 15 min. run
  • 5 min. incline walking (7.5 incline, 4.2 pace)
  • 5 min. stair master
  • 10 min. elliptical

I was hoppin’ from machine to machine like it was my job!

Eye Spy

Last night when I was photographing our dinner, Ryan asked me if I always look through the camera lens with my left eye.

Though I’m right-handed, I’ve always looked through a camera with my left eye. Weird, huh?

We then realized that cameras are made for right-handed people. The button you press to take a picture is on the right side of the camera. What about the poor lefties out there???

    I’m a mix: I write and eat with my left hand, but do everything else with my right. It was difficult when I was a kid because, since I wrote with my left hand, my teachers made me use the special left-handed scissors, but I couldn’t do it!

    I am right handed, and my husband is left handed.. we have to make sure to sit on the correct side at the dinner table otherwise we are bumping elbows the whole time, haha 🙂 Ricotta makes such an interesting accompaniment to any breakfast. You wouldn’t think that something that goes into lasagna could make some killer waffles. Yum!

    I’m ambidextrous. I don’t have a preferred hand even though I tend to eat and write with my right hand more often. In sports, I can play both left or right handed. In softball, I like to play sometimes as a leftie and then switch to play right handedly. I do prefer left hand in hockey and softball though and right hand in tennis & golf.

    I am left handed but do a lot with my right because so many things don’t feel like the work well for lefties.

    I look through the camera with my left usually but I have used my right.

    Its actually funny in my family because I am one of 5 kids and all 5 of us are right handed, but both of our parents are left handed…kinda crazy!

    Magazines and books are more catered to the right handed. I never thought abuout it until a teacher I had, who was left handed, pointed it out to me. I’m right handed, but almost everyone in my office is left handed or ambidextrous.

    I’m left handed, but I can only use scissors right handed, and when I played softball in high school I had a right handed glove. Weird!

    I am right handed…I didn’t know you were a lefty! 🙂 My dad is left handed and he has a magnet that says “Left handed genuis!” I always loved that when I was a kid!

    Manual can openers are totally made for righties… It’s a right handed world and us lefties must die younger because we have to work harder to figure out how to use things not made for us!!:)
