Recipe Roundups are a monthly feature that started on Peanut Butter Fingers as a way to highlight some of my favorite recipes that may have gotten lost in the shuffle of publishing a bazillion different blog posts over the past few years. It’s been a few months since my last Recipe Roundup, so we’re a little overdue!
Today’s Recipe Roundup includes lots of simple snack recipes. The recipes are easy to make, delicious and many are great grab and go snack options. If you decide to make any of the recipes, I hope you enjoy them!

I’m going to go try that popcorn recipe, sounds yummy! My favorite simple snack is “healthy cookies” from Skinnytaste. You mash 2 ripe bananas, add 1 cup of oats, 1/4 cup mini chocolate chips, and 1 tsp cinnamon. Bake in the oven at 350 for 14 minutes. SO good.

Awesome. I’m always in need of simple Snacks, especially as I’m getting busier in the Summer. I always feel like pre frozen smoothies, protein balls, or homemade bars are the best way to go on those days. Or just a simple fruit and nuts combo.

My latest snack is to make my own “trail mix”: literally a handful of salted almonds, a handful of gluten free crisps/crackers, and a few chocolate chips. Salty + sweet. Done!

My favorite quick, healthy snack right now, is A cookie dough made with one tablespoon of coconut flour and 1/2-1 tbsp of coco powder mixed with two tablespoons of almond milk mix it in A small dish and pop it in the freezer for 5-10 min its great for A sweet craving, sometimes I sub the coco for PB2 or cinnamon and stevia for A different flavor:)

I love peanut butter mocha smoothies! They are one of my morning staples! Best on the go breakfast treat. Sometimes I like to skip the cocoa powder and use a tbs of dark chocolate chips if its a treat kind of morning! I also love adding chia seeds to every smoothie! I’ll have to try that popcorn….looks delicious! Thanks!

Right now I love snacking on healthier versions of muffins that I make by using applesauce in place of butter or oil. And instead of baking the muffin batter in a muffin tin I use a cupcake tin to make them into the perfect size. It’s a perfect was to satisfy my hunger and my sweet tooth if I decide to add things like sweet coconut, fruit, or some chocolate chips!

Thanks to your peanut butter, cinnamon, honey popcorn I am now loving this combination of flavors. I have added it to my spinach smoothies in the morning. Just today I added that combination to plain almond yogurt and it’s so delicious. Almost felt more like a dessert. I just had to share.

I have made almost all of these recipes and they are DELICIOUS!! I added frozen cherries to the chocolate walnut truffles- chocolate/cherry is always a great combination, and these turned out great!
