Spin + Smoothie Time

Hello, hello and happy Tuesday to you! I hope your day is off to a great start!

My day began nice and early when I headed off to the gym before 6 a.m. to teach my morning spin class. I took the group through a workout that I used on a Thursday morning class two weeks ago when my dad was in town but never ran through with my 6 a.m. Tuesday group!

After the final song, as we were all wiping down our bikes and chatting, my mind started to wander and think about breakfast, as it always seems to do! A smoothie sounded perfect to me after a hot spin class, so I threw one together the minute I walked through the door of our house.

In my smoothie:

  • 1 frozen banana
  • Frozen berries (strawberries, blueberries, blackberries)
  • 1 scoop Amazing Grass
  • Hershey’s dark chocolate cocoa powder
  • Chocolate protein powder
  • Almond milk

The smoothie tasted delicious and totally hit the spot, but I found myself craving something hot and cheesy after I was done. I cooked up a bowl of scrambled eggs (2 whole eggs + egg whites) with The Laughing Cow creamy pepper jack cheese and it tasted wonderful.

Perfect!

Plans for the rest of the day include work, my 20 week prenatal appointment (!!!), work again and Girls On The Run. And now it’s time to head back out!

Question of the Morning

  • Current favorite breakfast?

My egg white and oatmeal protein pancake has been popping up around here a lot lately, but I have also been loving omelets on the weekends! Unfortunately I’m too lazy to make them myself most weekday mornings and think prepping some chopped veggies the night before would motivate me to incorporate them into more of my morning meals. I should really get on that…

        Anytime Heather! I’ve found that Trader Joe’s has some of the best frozen mango if you’re looking for a longer lasting option 🙂

    I love having omelets with chopped veggies but tend to leave it for the weekend as well, I should also really cut down some veggies to have during the week for breakfast.

    I’ve been on an overnight oatmeal kick for a long time. I end up putting them in the freezer for about 30 minutes before I eat them even though they’ve benn in fridge overnight. I workout in the morning so I’m usually starved by 8 am!

    What protein powders are your favorite for smoothies and protein pancakes? I recently bought the perfect fit vanilla powder and am not a fan of the taste at all.

      Hey Val- I’m with you on the protein powders. Everything I have tried I haven’t loved but I recently bought the Juice Plus Complete and it’s amazing. I’ve been making smoothies pretty much every morning and sometimes for lunch. I’d love to give you some more info! Juice Plus is also great for pregnant women and even kids! 🙂

    You got me into putting laughing cow in my scrambled eggs now. It’s SO yummy!

    Random question – are your kitchen counters butcher block?? We just bought a house and are in the process of prioritizing all the renovations and countertops are high priority (Right now I’m dealing with hunter green and pink ceramic tiles. I know, I wish I was kidding.) so I’m interested in what other people have and how they like it!

    I’m the same way with vegetables. I don’t want to prep them just for something like an omelette but if I do it ahead of time I’ll definitely eat them. Prep is so key.

    Oatmeal bakes! My current favorite is a combination of apples, cinnamon, raisins, brown sugar, and milk. Great as leftovers; I make it once and then have breakfasts for days. Good cold from the fridge or heated up.

    Have you had your egg jellywich lately? You got me hooked on english muffin+egg+muenster+strawberry jelly for a loooooooong time.

    But I’ve been all about oats lately and am slowly transitioning to overnight oats since it’s finally getting warmer out!

    Happy 20-week appointment!!! That is so exciting. My 16-weeker is on Friday. Is it Friday yet?

    Question about Girls on the Run – As a coach, are you currently doing a lot of running? Or do you watch and cheer more than participate? How much running are you currently doing and how do you like running while pregnant?

    Lately I have started making a batch of steel cut oats in the rice cooker which gives me 4 servings. Then I just pop it in the microwave in the morning and add some maple syrup and homemade almond butter. It’s delicious!

    Your smoothie sounds awesome! I tried Amazing Grass protein for the first time last year, and I was really impressed with the nutrititional content and how good it tasted. You’re reminding me that I should buy some more!

    Hope your prenatal appointment goes well! I think prenatal appointments are one of the few doctor’s appointments I actually love and look forward to. 😉

    Lately I’ve been reeaaaaly into peanut butter and banana toast, but my usual work-week go to is oatmeal with cinnamon, honey, blueberries, bananas, almonds, and flaxseed. It keeps me full all morning long which is good when I’m running around doing back to back therapy. Pancakes on the Weekend! Always 🙂

    I have been OBSESSED with what I’ve dubbed sweet potato hash. I chop up a sweet potato and cook it in a saute pan, then throw in some diced bell pepper. After that cooks I put it in a bowl and cook some egg whites, then toss it all together with a laughing cow wedge (usually the pepper jack). Soooo good! And now I need to go buy more sweet potatoes. 🙂

    I can’t eat eggs WITHOUT cheese! I actually had 3 eggs with some cheese this morning (plus half an avocado thrown in). My go to is usually greek yogurt with nuts or turkey bacon.

    Random question: what kind of stuff do you do at the gym when you aren’t teaching? I’ve noticed you got back alot in the later morning/afternoon, so just curious if it’s personal training, front desk, etc.? Seems like odd shifts.

    Make egg muffins! So easy to prep on the weekends and then you have mini omelettes slash frittatas all week! I put eggs, egg whites, spinach and peppers in muffin tins and cook at 400 degrees for 10 minutes. So easy and delicious all week!

    I had been on a smoothie for the last few weeks, but this morning I broke my breakfast up into two parts: cottage cheese and pineapple, and banana with sunflower butter. It was so delicious to have two different little breakfasts – gotta love variety!

    After a winter full of smoothies I have been turning to oatmeal lately! But I do have to say I am always up for some protein packed pancakes, this weekend I tried out some maple syrup and crunched up turkey bacon on top, it really hit that sweet and savory spot! So yummy!

    I’ve been alternating between overnight oats and smoothies lately. Amazing grass is the best! I always add it to my smoothies along with extra spirulina and some turmeric golden paste 🙂
