Spring Break Salad

Hello friends!

It is spring break for most of the schools in Ocala this week and the gym has been a ghost town. This is wonderful when I work out alone in the cardio and strength rooms, but it’s not quite as fun for me when I have to teach group exercise classes. My first class of the day only had six people attend, but they were enthusiastic and did a great job working through all of the stations I had set up, so that made up for the small class size.

When my lunch break rolled around, I drove home to let Sadie out and make a salad.

Salad with Panera Asian Sesame Dressing

This salad was the jam! I bought a new salad dressing to try earlier this week and I am in love. When I saw Panera’s Asian Sesame dressing for sale at Publix, I was immediately intrigued and impulsively threw it into my cart. I’m so glad I did because it is fabulous and took my basic lunchtime salad to the next level.

Salad with spinach, turkey, orange and feta

Spinach + Turkey + Oranges + Feta + Asian Sesame Dressing

(I know the feta cheese doesn’t really go with this salad, but I had a serious craving and went with it!)

I had no problem polishing off every last bite of this dish.

I’m hoping the rest of the workday passes by  in a flash. I have plans to meet up with one of my girlfriends for a walk tonight and I’m really looking forward to some quality time with Amanda (and Sadie since she was also invited).

Question of the Afternoon

  • If you could go anywhere on spring break right now, where would you want to go?

I’d go to Australia! Scuba diving in the Great Barrier Reef is on my bucket list.

    Australia is a trip my husband and I are planning for 2015. We have started a savings for this trip…I just want to hold a koala!

    I had spring break last week and went to Gatlinburg, TN and Boone, NC! If money and time was not an issue I would go to Thailand!

    Beach vacation! I need to get out of the city (San Francisco) and spend some time with my toes in the sand. Maybe Cabo? Maybe Hawaii? Whatever!

    The Greek Isles. I’ve always wanted to go!
    I was in Australia last summer, and we had every intention of scuba diving the reef-woke up early, got on a boat, and halfway out the boat started having engine troubles and we had to turn back around. Unfortunately for us we were leaving the next day so we never got to go diving. Hopefully we’ll have another chance because it’s definitely on my bucket list!

    Anywhere warm! I’d love to feel some heat on my skin…top up those Vitamin D levels! I like when classes are smaller sometimes, especially for things like kettlebells as you get more one on one attention and if you’re all of similar fitness level you can do a tougher workout!

    I studied abroad in Queensland 3 years ago and went scuba diving in the GBR! I want to do it again though since when I went it was their winter and the water was so cold! But it was still amazing!

    OH MY GOSH~ yes house of cards is amazing! I missed the first season because my husband started watching without me and at the time I was so confused so I didn’t watch it. Over the long weekend in February a group of us went skiing in Vermont RIGHT as season two was released and we watched at least 5 episodes there and then polished off the rest within the week! We were in a show drought for a while but now are watching Suits (do you watch it) and finishing up the third season of Homeland . These types of shows though are sometimes TOO much intensity for me!

    if i could go anywhere for spring break, i’d go somewhere tropical!

    i’m actually on spring break right now, but spent the better half of break studying for my ACSM group exercise instructor certification. luckily i passed and still have a couple days of downtime before i have to head back to school! lots of sleep, netflix, and shopping on the horizon.

    Hi from your Aussie fan! Please come down under, you will love it. I am fortunate enough to live in Queensland and have been to the Great Barrier Reef, it is incredible. I’d love to go to the Maldives!

    My spring break just ended last week! Australia is on to-go list too (with just about every other country), but for spring break this year i actually wanted to go to Ireland. Didn’t happen, but i ended up taking a staycation at home which was LOVELY!

    Yum that salad looks great!! I’ve made a similar one, just minus the dressing and feta. It never gets old, always so so good. Hmmmm I would go to Hawaii, or any of the islands. Mainly because the last time I went, I was in the 3rd grade, which was 12 years ago haha. I can barely remember it, and now I would be able to do and explore what I want 🙂

    I’d go somewhere warm with palm trees, water, and white sand! I have never been on a tropical vacation, I bug my husband about it any time we’re planning a trip!

    We just went on our first *real*, (ie. not local) vacation a few months ago- a cruise to the Caribbean. It was a great way to survey a bunch of islands, but I regret not getting to spend more time in any one place. However, could we go ANYWHERE, I’d say France, Italy, Spain or Greece and I’d have to flip a coin to make that decision. 🙂
