Three Ingredient Breakfast

March 21, 2012 by Julie 79 Comments

Check out this morning’s breakfast!

quinoa breakfast recipe 012

Right now you’re only three ingredients away from a fantastic morning meal!

Last night I cooked up a batch of quinoa to have on had throughout the week. This morning I topped a cup of Chobani strawberry banana Greek yogurt with the cold quinoa and a sliced banana for a creamy quinoa breakfast bowl.

It was such an easy breakfast to throw together and I loved all the different textures and flavors. Though I probably prefer my barley breakfast bowls to this quinoa breakfast bowl, both are tasty and fun to eat.

Workout

Today’s workout was a strength workout courtesy of the Best Body Boot Camp program I’m following.

It was the easiest workout for me of all the boot camp workouts I’ve completed so far, which probably means I didn’t use weights that were challenging enough. I used the weights I’m used to using for certain exercises, but since the workout had me doing 10 reps instead of my typical 15, I definitely could’ve challenged myself more by selecting heavier weights.

Something to keep in mind for next week!

My favorite move today was the walking lunge with a medicine ball twist.

walking lunge medicine ball twist

Me? Liking lunges? What?

I think the medicine ball twist helped distract me from the awfulness of the lunges and made me feel more powerful than I usually do when I’m just lunging. Believe me, I was shocked that I liked this move, too.

Off to download a new podcast and take Sadie for her morning walk before parkin’ my butt at the computer ‘til lunch!

See ya then!

Good idea! My quinoa doesn’t look like that! I must be overcooking it… most of the little tails fall off of mine… ?

My favorite cardio lately is trampoline jumping. I do it in front of the tv and feel like a little kid, it’s a great work out and I’ve read it works wonders for the lymphatic system.

I know this response is a day late, but applesauce in the crock pot is absolutely amazing! All I did was peel and chop the apples, smoosh them up a bit and throw them in the crock pot with some water and cinnamon. A-mazing, but I like it warm as a dessert, so it’s more of a winter thing. Probably would be great cold too with some frozen yogurt, greek yogurt or or oatmeal!

Here’s my favorite slow-cooker recipe (makes delicious asian-style shredded chicken for lettuce wraps!)

    Honey Garlic Chicken
    Ingredients:
    4 boneless, skinless chicken breasts
    3 garlic cloves, chopped
    1/2 cup low-sodium soy sauce
    1/2 cup low-sugar ketchup
    1/3 cup honey
    1 small handful basil (optional)

    Directions:
    1. Combine all ingredients in slow cooker and cook on low for about 4 hours
    2. When chicken is done, shred the breasts with two forks
    3. Spoon the shredded chicken and the sauce into a large piece of lettuce and eat like a wrap (PF Chang’s style)

I usually enjoy this with some stri-fried brown rice loaded up with veggies!

Yum breakfast! Even though I can’t have dairy, I would probably sub a soy or almond milk yogurt and add a big ol’ blob of nut butter!

I’m struggling with knee injuries so it’s kills me not to be able to do lunges. They’re actually my favorite lower body move, especially walking ones with weights. Part of my PT homework is actually step-ups on the weight bench which are turning into my new favorite.

I’ve been curious to try quinoa and greek yogurt together but am not sure how I feel about the chewy factor! I usually pair my yogurt with granola and I love the crunch! But I need to give it a try soon!

Lately I have been loving the elliptical and spin bike but the weather has been absolutely beautiful so I really should get outside for a run!

P.S. I’ve been meaning to make a bowl of sweet quinoa for bfast- thinking of adding some Greek yogurt, PB, raisins, and cinnamon… Makes me think of a bread pudding!

Cooked quiona also looks really well if you heat it up in the morning with a bunch almond milk and a sliced banana, mix it all on the stove until quoina is absorbed. Yum.
