Angelos of Kappa Delta

I popped up in the winter issue of The Angelos, the national magazine of Kappa Delta Sorority.

Thank you to those of you who emailed me and commented on the blog to let me know!

Well, Hello There!

Several months ago, I answered a bunch of questions for the editor of the magazine, so I knew something was in the works, but I wasn’t sure exactly what the final product looked like until I received my issue in the mail this weekend.

The only other time I’ve been in The Angelos was back in college when my picture was featured for being on the academic honor roll throughout my four years in college. I was so embarrassed because the picture they used was one that was snapped during one of our “dress down” chapter meetings where I was in my pajamas, wearing no makeup with my hair in a “poof.” I didn’t exactly look “scholarly.”

Workout + Breakfast

This morning’s workout was typical of a Monday. I attended a BodyPump class and followed it up with 25 minutes of cardio on the elliptical.

While I was ellipticizing, I went through my gym wristlet and cleared out some of the slips of paper containing old workouts that I ripped out of magazines or jotted down on scrap paper that I never use. It felt good to clean out the little bag. Now I have a lot more room for new awesome workouts!

After coming home and taking Sadie on a walk around the lake near our apartment, it was time for breakfast!

I was really looking forward to my morning meal because of these little babies…

Check 'em Out!

I prepared the fibrous whole grain on the stove top according to the package directions. I was surprised at the chewy texture of the wheat berries!

Along with a sliced Granny Smith apple and some chia seeds, I threw the wheat berries on top of a cup of Greek yogurt to make a deliciously filling yogurt bowl.

All the different textures created a party in my mouth!

Fun!

This breakfast was honestly fun to eat.

And now to begin another work week! Happy Monday, friends. 🙂

    What a fun breakfast! I’ve never had wheatberries or chia seeds before. They look like they would definitely give a lot of texture to yogurt. I must try it! 🙂

    Ooh I’ve never tried wheatberries! Do they take long to cook? Yum!
    My gym bag also has about a hundred workouts on scraps of paper in there…I need a clean out, too!

      the bag said to cook them for an hr., but i only cooked them for like 30 min. and they tasted fine to me!

    congrats on being featured in the magazine! that’s awesome. also, that’s a great idea to carry to a wristlet around with workouts in them. I’ll have to try that. Otherwise, I either try to remember certain workouts and completely forget them or i’ll write them down and lose the workout! Also, I loveeee wheatberries. I just am so lazy and never make them! I’ve only ever added them to oatmeal…they look great with yogurt!

    Wheat berries are part of a very traditional meal for Ukrainians that is also really delicious for breakfast! After cooking, mix the berries with honey, poppyseeds and some water to thin it out a bit.

    Et Voila! A naturally sweet and filling little breakfast! Just make sure to floss before you head out for the day 🙂

    Congrats, that’s awesome! I’m bummed because my mom was a KD at Maryland, but I don’t think I’ve ever seen a copy of the magazine come to our house. I can relate to the crappy honor picture though- when I made National Merit, I had my eyes closed in the pic that my high school magazine included in their article. Cute.

    Very cool about being in the magazine! I can’t eat wheat berries because they aren’t gluten-free, but the rest of your bowl looks delicious!

    Wow what a cool idea with the wheat berries! They’ve been on my to-cook list, but I haven’t quite gotten around to it yet. Cool idea to just add them to something rather than waiting to make them in a recipe.

    tell me more… do they taste crunchy-ish like pine nuts? how long do they take to prep? are they served hot or cold? can you tell I’m totally intrigued?

    Well back in MY day, we didn’t have ANY informal chapter meetings; We had to wear dresses with panty hose, yes, panty hose! Do you young’uns even know what panty hose are anymore? They are like tights, but skin colored 😉
