Avocado Goat Cheese Dip

Last night, when Ryan and I curled up on the couch together to watch The Voice, we wanted a snack. If I am hungry in the evening, I usually crave something sweet, but last night I wanted something salty. Chips and dip sounded perfect, so I made this avocado goat cheese dip.

Goat Cheese Avocado Dip

I opened up the fridge and pantry and grabbed some of of the food we had on hand, determined to make a savory dip that was still relatively healthy.

In the end, I created an avocado and goat cheese dip that was fresh, creamy and still healthy! If you love avocados and goat cheese, I think you’ll enjoy this one!

Description

Looking for something relatively healthy? How about an avocado and goat cheese dip? The combinations are fresh, creamy and still healthy! If you love avocados and goat cheese, I think you’ll enjoy this one!


Ingredients

Scale
  • 1 avocado
  • 4 ounces goat cheese
  • 1 tablespoon lime juice
  • 1/3 cup canned black beans (rinsed and drained)
  • 1/3 cup corn
  • 3/4 cup diced tomatoes
  • 1/4 teaspoon cumin
  • Pinch of salt

Instructions

  1. Stir avocado, goat cheese and lime juice together.
  2. Add remaining ingredients and stir together. Serve with chips and enjoy.

Before signing off today, I feel compelled to share something with all of you from my future brother-in-law.

On Friday, Ross’ 27-year-old cousin, James, passed away unexpectedly in his sleep. He leaves behind his beautiful wife of five months, Cristina, who is pregnant with their first child, due in June. While I have never met James, Ross describes him as a man of true character and faith. A man to look up to who loved and adored his wonderful wife.

    What a horrible tragedy that is just not good at all. My thoughts go out to his wife and child.

    My favourite brunch combo is poached eggs with avocado and goats cheese, it goes so well together. I think it is safe to say I’d love this dip.

    So sorry to hear about Ross’ cousin, that is so sad. I can’t even imagine, bless their whole family, and his sweet wife. I will definitely be praying for peace for their family during this hard time. My little brother was severely injured in Sept and has suffered from a traumatic brain injury, stories like this and donation sites have a whole different meaning to me now after going through what we are right now. The love, support, prayers and kind words from strangers all over the world will be a HUGE help in this rough time. It’s so amazing to see total strangers come together and support this family in this time, love it. God bless!

Life is so very fragile, it is bittersweet that moments like this remind us all to show and say more of the love we feel for those close to us.

    Wow. I read about this story on Saturday actually. One of my husband’s best friends was close with James and had shared the story on his own Facebook. His family has been on my mind ever since! My dad passed away two years ago suddenly of cardiac arrest and I know just how hard this sudden of a loss is. They are in my thoughts and prayers for sure!

    Julie, I am so sorry to hear about Ross’ cousin. I just had a friend from high school three years younger than me pass away after an accidental injury. He was only 26-years-old and his fiance was pregnant. Not taking a single day for granted and counting our blessings is what we should do each day.

    Saddest Story! I couldnt imagine marrying my bestfriend and losing him after 5 months, while being pregnant. Life is so unfare. We will be praying/thiking of you, Leslie and Ross`s family! ♥

    What an incredible tragedy this woman has to bear. I could not even imagine the pain and emotions she must be feeling right now. I pray for her child’s health and both of their happiness, for with that, they can overcome any obstacle.
    I hope you do not mind me sharing the page to my coworkers and my gym, to try and help her family as much as possible. Donating to her fund will be the best Christmas present I could possibly give this year.

    Julie! Crazy small world. I’ve been reading your blog for a couple years now and currently work for an organization called FOCUS (fellowship of catholic university students) and a lot of my friends in FOCUS graduated from Franciscan University and knew James (alum from Franciscan). Prayers for their family have been emerging all over my facebook homepage. Sounds like he was a wonderful man! I’ll be praying for Ross and their family.

    That is just….wow…..I just can’t fathom how much Cristina must be hurting right now. And as a mom to a baby girl myself, the heartbreak must be so immense and beyond words.     Oh my gosh I just got the chills. My best friend Christie and a whole bunch of other friends from my hometown went to college with Cristina at Franciscan and have been posting the link for Baby Buerkle all week. I was so saddened by this story and already donated and re-posted the link. It is such a small world that you are connected…honestly such a God moment I just had realizing how we are all connected amongst the fabric of life…in joy and in tragedy. Praying for Ross, Lesslie, James, Cristina, their baby and whole family.
